Winemaking Notes

The grapes for this wine came exclusively from Field's Katarina Vineyards in the beautiful Alexander Valley. The vineyard is situated on the banks of the Russian River and contains a mix of old vines and new plantings. As a result of the gravely to rocky loam these vines produce a low yield, high quality fruit. The grapes were destemmed, crushed and fermented warm. During fermentation, the juice was pumped from the bottom of the tank over the cap of floating grape skins to extract a rich, ruby red color and forthright fruit flavors. At the end of fermentation, the wine was pressed and allowed to settle and complete malolactic fermentation in a stainless steel tank before being racked to French and American oak barrels. The barrel aging process was limited to showcase the true fruit character of this outstanding vineyard.
