Dead Apples

Baking Apples
Cinnamon
Sugar
Jiffy Muffin Mix
Microwave dish with 1-1/2 inch sides, about 10" diameter

Core the apples and cut them into wedges; I leave the skin on. Lay the wedges on their backs in the plate, in concentric circles, as closely packed as possible. Sprinkle with sugar to taste.

Sprinkle with cinnamon until they are quite brown and then bury them in muffin mix, up to the brim... hence "Dead Apples."

Microwave on high until you see juice bubbling up through the mix (stop microwave and rotate by hand several times if you do not have a turntable). Remove and let sit five minutes.

Tastes good with vanilla icecream alongside, cold sour cream, or with fresh whipping cream poured over it.
