Quick Brown Betty

1 Can Pitted Cherries in their own juice
Granola Cereal
Corn Starch
Sugar
Vanilla Extract or Vanilla Sugar
Two 2 Cup Microwave dishes with 2 inch sides
Sour Cream



Reserve juice and divide cherries between the two microwave dishes.

Stir about one tablespoon of starch into the juice, up to three tablespoons of sugar, and either a capful of vanilla extract, or a packet of vanilla sugar. Pour half of this over each bowl of cherries and then cover the cherries with granola cereal, up to the brim.

Microwave this on high till the juice can be seen bubbling up through the cereal for about one minute. (If you don't have a rotating table, you'll have to stop the oven a couple of times and rotate the bowls yourself.)

Remove and let sit five minutes. Spoon onto plates with a large spoon and add a side serving of cold sour cream. (Sometimes, I prefer fresh whipping cream poured over this.)

I don't suppose brandy would make it taste bad.
