Cutting Celery
apium graveolens

Cutting celery is a great choice for Oklahoma gardeners who love celery.  It's an actual celery, just without the enlarged stalk.  It is quite tolerant of our hot dry summers where regular celery would fail.  We grew it this year under the east eaves of the house where it would catch lots of rain runoff.  It's a biennial, so should winter over and go to seed next year.  It seems even more aromatic than regular celery and has fine celery flavor.  It dehydrates beautifully.
