Basil Oil.

Extra Virgin 1st pressing OLive oil.
Do not use anything but the Extra Virgin or your oil will go Rancid. The USA does not have strict standards in place yet. Some of the oils from California do meet the same standards as the European Market. I use the Greek Imported Oil. It is more expensive but the shelf life is about 18 months. Pack a glass canning jar tight with fresh basil leaves. Fill with Extra Virgin Olive Oil to the top. Leave no air space. Screw on lid. Place in sunny window for 2 weeks. Shake the jar every couple of days. After two weeks strain out leaves. Taste it. If you want a stronger flavor, pack the jar again , add the oil back and leave for 1 more week. Strain the basil leaves out and store the Basil Oil in dark bottle or can out of the light at room temprature The oil can last 18 months but in my house it we use it up really quickly.

Herbal and Floral Butters

Rose Petal Butter


1 Cup fresh fregrent Un-sprayed Organic Rose Petals (Remove white part, this is very bitter) Chopped

3/4 Cup softened unsalted Butter
1. Mix, let stand at room temperature for at least 2 hours.
2.Cover and refrigerate for 24 hours to let the rose flavor blend into the butter.
3. Keep refrigerated up to 2 weeks or frozen for several months.
3. You can put the butter into candy molds for a pretty presentation. To pop the butter out of the mold insert a knife into the edge of the mold and gently push up. The butter will pop out.
Great on scones, toast, pancakes, waffles, biscuits or rose petal sandwiches.

You can make any Herbal Oil this way. When Using any plant with a woody stem, strip the leaves off. In the spring when the stems are tender, you can use them. Otherwise strip off the leaves and pack your jar.
