Smoked Lavender Chicken

Ingredients:

1 chicken cut in half.

1 tbs lavender flowers

1 lemon sliced

1/4 cup olive oil

1/2 cup water

Salt and pepper



Procedure:

Heat water, olive oil, lavender. Let simmer for 5 minutes.

Remove from heat and cool.

Rub chicken with salt and pepper

Place in Ziploc bag adds lemon slices and warm marinade.

Refrigerate overnight. Can be made the same day but is much better marinated overnight.



Place chicken in smoker or covered barbeque. Add pan of water to smoker. Smoke with alder wood for 1 hour basting with marinade. During last 30 minutes add lavender flowers to smoker.








When using tulips pick tulips that are still closed but not real tight.
Rinse and keep chilled until ready to use.

Stuffed Tulips:

Ingredients:

6 to 8 tulips

3 cans tuna drained

1/4 cup Best Foods Mayonnaise

2 Oregon grape flower buds rinsed and drained

removed from stem

3 chive flowers chopped

2 green onion chopped

1/2 apple chopped fine

almonds or cashews chopped about 1/8th cup

Mix together and stuff into tulip blossoms.

Makes about 8 servings.





Calendula officinalis Named Herb of the Year 2008 by the International Herb Association

Herbed Egg Salad with Calendula Petals.
12 hardboiled eggs chopped
½ cup Best Foods mayonnaise
2 teaspoons Dijon-style mustard
¼ cup thinly sliced green onions or minced onion
2 tablespoons freshly snipped chives
2 tablespoons freshly snipped dill leaves
½ teaspoon Hungarian paprika
Salt and freshly ground pepper to taste
1 handful fresh calendula petals, coarsely chopped
Calendula Petals, Chives, Dill and Paprika for garnish

Combine the ingredients in a large bowl. Mix well. For a beautiful presentation serve on a plate lined with mesclun salad greens. Scatter the Calendula Petals, Dill and Chives over the top. Sprinkle with a little Hungarian paprika.
This is good served with good artisan bread, pita bread, bagels or crackers.
You can make a sandwich by slicing hardboiled eggs and put on bread with mayonnaise, chives, dill, calendula petals salt and pepper to taste.
This also makes a really nice deviled egg.
Celery and pickles are a nice addition as well.

Smoked Chicken Salad
Ingredients:
6-8 tulips rinsed
2 cooked smoked lavender chicken breasts skin removed cut into small pieces
1/2 apple chopped
1/2 piece celery chopped
1/4 onion chopped
1/4 cup mayonnaise
salt to taste

mix all ingredients and stuff tulips,nasturtiums or gladiolus

Serves 6-8
