A Sallet of Olives and Capers

[Sallats for Fish Daies] An Other:
Thomas Dawson, The Second Part of the Good Hus-wives Jewell,

Olives and Capers in one dish, with vineger and oyle.
Redaction
Ingredients:
2 cups mixed Greek olives
1 4-oz jar capers
2 tablespoons white wine vinegar
3 tablespoons olive oil
Preparation Steps
Toss ingredients together and allow to marinate overnight.
Number of Servings
Makes approximately ten servings.
Serving Size
1/4 cup.
Redaction Notes
Wine vinegar was chosen because it would have been readily
available. Olive oil was used for similar reasons, and because it
would complement the flavor of the olives.
