Nutty Granola

I love granola! It is a special sweet, crunchy treat for breakfast. But, most granola cereals have at least 30 grams of carbs per 1/2 cup serving. I developed this nutty granola recipe to satisfy my craving while keeping away from a morning carb load.

1 cup almonds, sliced
1 cup pecans, halved
1 cup unsweetened coconut
1/2 cup Splenda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
5 ounces (1 small can) unsweetened condensed milk
1 teaspoon pure vanilla extract
1 egg white
Vanilla yogurt, for accompaniment
Dried cherries (optional)

Preheat oven to 350 degrees F. Grease baking sheet.

In a large bowl, combine almonds, pecans, coconut, Splenda, cinnamon, nutmeg and condensed milk. In a separate bowl, beat egg white until it forms stiff peaks. Gently fold egg white into nut mixture.

Spread mixture onto greased baking sheet. Bake at 350 for 20 to 25 minutes, or until golden brown. Let cool overnight.

Allow guests to help themselves to the granola and dried cherries. Serve with vanilla yogurt.
