Cucumber Sandwiches

This recipe is so easy that I can get my husband to do it. I just have to watch him closely because he tends to eat as much as he assembles.

2 English cucumbers
4 ounces (1/2 package) cream cheese, at room temperature
Salt and pepper, to taste
Toothpicks, to assemble

Peel cucumbers and slice into thin circles.

To assemble: Each sandwich will require four cucumber slices. Spread a thin layer of cream cheese on three of the slices and pile atop one another. Place the fourth cucumber slice atop the pile. Place a toothpick in the center of the cucumbers to hold together.

When finished assembling, sprinkle sandwiches with salt and pepper.
