Sunday Brunch
(A lot easier than breakfast...)

Why?

When my husband and I first went on the South Beach Diet, we thought that we could at least have friends over for eggs and bacon on Sunday mornings. After a few tries, we realized that this just wasn’t going to work.

First of all, eggs and bacon implies before 10 AM. That meant me getting up by 7 AM to shop, cook and set the table. On a weekend? I don’t think so.

It also meant a limited menu. Breakfast, for those of us who are carb counting, can be a limited entertaining option. Eggs and bacon for us; sliced fruit and muffins for the guests. We could only eat half of the food we were serving!

Brunch is a much more civilized entertaining option. Guests don’t have to arrive until noon, so I don’t have to get up until 9 AM (10 AM if I’m organized). I can make many of the dishes the night before. And, we can eat almost everything we serve. That’s for me.
