Sparkling Berry Cocktail

You’ve got to start High Tea with a fizzy drink. A glass or two before the main event helps bring people together and loosen them up for a long afternoon of chatting.

1/2 cup fresh blackberries
1/2 cup fresh raspberries
1/2 cup fresh blueberries
Champagne, chilled
Diet gingerale, cold
Sparkling apple juice, chilled
Champagne flutes, approximately 8-10, to serve

Line champagne glasses up. Alternate blackberries, raspberries and blueberries in each glass until you reach the top. Chill berry-filled champagne glasses for at least an hour. Remove glasses from refrigerator just before guests arrive.

Allow guests to pour champagne, (diet) gingerale or sparkling apple juice into their glasses.
