Applesauce Cream Pie, p. 139
(the pie my son has been requesting)
(from Vicki in Ohio: A few things I did differently with this:
The first time I made it, I used the full 1 c. apple juice, and
the pie didn't set up, it was very runny. I now use 1/2 c. juice,
and I mix the apple butter (just the 2 T) into the Cool Whip free,
and spread it over the pie instead of just garnishing individual
pieces. Then I sprinkle just a little bit of apple pie spice over
the top.)

Chocolate Almond Raspberry Pie, p. 148
(I was in the mood for a good chocolate pie today and came across [this].
I didn't have raspberry spreadable fruit, so I used black cherry. This
was a delicious pie. It tasted like eating a chocolate covered cherry,
yummy. This pie will be among my top ten favorites for sure. )

Fudgy Peanut Butter Brownies, p. 153
(Here is a great brownie recipe for all peanut butter lovers. It is [also in]

(I made these brownies today. They are great with a small cup of milk.
You are right about the batter not pouring. I had to spoon it in the pan
and pat it down. The brownies turned out moist and delicious.)

Decadent Peanut Butter Cheesecake, p. 152
(Cheesecake is probably my biggest weakness! . . . I have also made [this],
and [it] got the 5 rating on the spreadsheet/tracker. . . . I just really
haven't met a cheesecake that I didn't like!!!! Just wish I had more time
to make them.)
Creamy Eggnog Pudding, p. 130
(If you want to try an easy recipe to satisfy that holiday craving for Eggnog,
give [this] a try.)
(It was wonderful and soooo easy. I will cut back on the nutmeg next time,
because it was a little much for the kids.)

(For my afternoon snack, I had a serving of [this]. . . yesterday's leftovers . . .
but . . . so very good!)

(My daughter just rejoined TOPS and started eating healthy, part of which is
Healthy Exchanges recipes - I made sure she had enough HE cookbooks. Below
is an entry from the journal she's keeping on her web site to track her
progress. In case you're wondering, Kevin is her husband....
"OH MY GOODNESS! JoAnna’s Acapulco Golden Burgers were awesome!!
Kevin and I didn’t have hamburger buns, so I suggested that we
just top the meat patty with onions, etc. Kevin winged it, added
some of his own twist to it, and it was spectacular!! That meat
recipe is out of this world!!!!!!! Kevin’s Kitchen is my favorite
place to eat. ;o)" )
(Should go well on either the grill or George Foreman grill, wouldn't you think?)
(I was thinking if you lose the bun, then this would make a great meatloaf for
4 servings. mmmmmmm)
Buried Peanut Butter Treasure Pie, p. 150
(For the first time last night, we tried [this]. A treasure it is! My daughter
isn't real fond of a lot of chocolate, so we left the chocolate drizzle and the dry
roasted peanuts off of the top, but it was so good even without that, that you didn't
miss it. If you love peanut butter and chocolate, you will want to give this one a
try. Check it out . . . . YUM!!! )
Bungalow Potatoes, p. 90
(I just made these . . . yum yum. Reminds me of the Potatoes, Ham and Green Bean Soup
my mom made. I had moved out when I was 19 yrs old (to spread my wings), then on my
first visit home she had this on the stove . . . OMG A homecooked meal that I usually
took for grated was so much appreciated then . . . . Try these -- if anyone hasn't
they are very good. . . . A definite Keeper.)

(I have this same set (Grandma's Comfort Food Made Healthy, Penny Pinching Main Dishes, Yahoo Access
When Every Minute Counts), and loved them so much. When my DH was getting to goal in '97,
I almost always cooked from these three books, since at the time the only ones I had. You
will enjoy them. We even used the fake champagne at our daughter's wedding, and everyone
loved it.)
Easy Pastafazool, p. 60
(another favorite recipe of mine)
([This has] gotten rave reviews from my family. My son said he thinks he will be able to eat
like this all of the time.)
(I usually use small shell whole wheat macaroni because I like the flavor. I usually use basil
& a little oregano instead of the Italian seasoning. I hope you will try this; it is fast and
is especially good heated over the next day or two.)
(***** Here is another one that we tried from the CD-ROM -- taste was super. What we did though
was add some more water; we found it too thick for us. Once we added more water, oh it was sooo
good!!)
(We had this before but quite some time ago. This was great. We were cool here after Hurricane
Isabel passed over Ontario.)

(The only one we've tried that used cooked pork was [this]. My note was that it had great flavor

Ham and Cabbage-Bean Soup, p. 61
(We had a early fall day 2nd week of September and this soup really hit the spot. Dennis & I loved
this. We will probably have it again this winter.)
Baked Parmesan Fish Fillets, p. 101
(This is a great way to serve fish. Dennis and I have been trying to get more fish in our diets, and
this is a great way to do so! Well done JoAnna.)
