The Strong Bones Healthy Exchanges Cookbook (Best of 1994)

Real Man Quiche, p. 222 Banana Split Cheesecake, p. 280 (We're getting together with a bunch of friends tonight and we're all supposed to bring munchie or finger food type foods. Oh the possibilities. Here's what I decided to bring. . . . I mixed up a double batch of Jo's Trail Mix from Man in Mind, p. 301, to have something to munch on all night instead of chips. . . . Then I got the recipe for [this] but instead of making one cake I made 28 little cheesecakes. I used the vanilla wafers for the bottom and put those in small muffin wrappers, then put spoonfuls of the cheesecake, whipped topping and then 1/4 tsp. of the topping on each and topped each one with 1/2 a cherry. They look FANTASTIC. I can't wait to see everyone's face when these little beauties come in the door. . . . Well everyone loved both of the things that I brought and I really had a lot of trouble convincing them that the cheesecakes were low fat and no sugar. They kept saying OH NO you're pulling my leg. Me??? haha I would, but I didn't. I said Look this recipe was for one pie with 8 pieces and I got 28 little cheesecakes. They still looked rather leary but I watched their faces as they ate it and they did love it.) (I tried a new dessert recipe this weekend which was definitely one of my new favorites. The cooked chocolate pudding made the dessert taste a lot richer! I wondered how baking it would effect the results, but I was really pleased on the texture--different than the instant pudding recipes. I topped each serving with Cool Whip Lite and this made a perfect dessert even better. My family gave it a 5 out of 5 rating.) (This is always a hit at my house too. The cooked pudding takes a few minutes longer but so much better. When my MIL said she had been wanting a chocolate pie, this was the one I took.) (Why bake it? . . . I don't really know why Joanna says to "bake" the pie, but it does seem to improve the texture. It ends up looking like a cross between a very moist brownie and pudding. I can't wait to make it again!) (I made it last night and my DH and I liked it very much.) (This pie is more time consuming but it is a cut above the norm. Try it!) (Have to take a dessert to a party this week. What pie is your very favorite that you make alot and everyone in your family/friends love? Since there are so many I am having a hard time zeroing into one. Thanks a million for your time to answer this question. . . . [this one]) (I thought it was a very good pie. I think if I made it again I would like to try it with less graham cracker crumbs and NOT baked. I would definitely suggest topping the pie off with a spoonful of Cool Whip.) Next time I make it, though, I'm going to use plain tomato sauce, because my 9 year old had to pick out all the tomato chunks before he would eat it.) (I went to a Healthy Eating class yesterday (doc did some tests and I have high cholesterol and high triglycerides) so time to make some changes. The teacher suggested going vegetarian at least a few times a week, so I took the first step and went meatless...lol I made [this], and it was pretty good. . . . I will be making it again!!) (absolutely delicious. Very "cheesy" and yummy. Everyone in my family LOVED it. I've made it at least 4 times and it's now recopied on recipe card as a "Favorite!" ) (Great minds think alike. I fixed this very recipe last night and my husband and I both enjoyed it. I prepared a squash casserole to go with it. Not the first thing I would have thought of but we are having squash with most things while my garden is over flowing. Having veggie days will help you also work in more whole grains.) (really liked) Old-Fashioned Meat Loaf, p. 189 (Friday night I fixed [this] - Oh my, I thought it was Thanksgiving Day, it was so wonderful. Hubby asked for it again the next day, so I whipped up another batch.) Banana Maple Rice Pudding, p. 239 (I made [this]. It was really yummy. I didn't have Cary's Sugar Free Maple Syrup, so I used the light one I always use. It could even use less than it calls for, as it is very sweet.) Holiday Banana Nog Pie, p. 271 (It is SO good!!!!!! ) Stove-Top Hot Dish, p. 187 (I hope you enjoy it as much as I do . . . . I did a couple of things different: 1. I used 2-16 ounce cans of broth and 1 box of stove top cornbread stuffing and 1 box of chicken or turkey flavored stove top stuffing. I doubled the bread in other words. I loved it this way, I got the idea from a comment . . . . 2. . . . I used store bought fat free sour cream -- 1 cup. 3. Sometimes I used frozen Japanese veggies or Mandarin veggies rather than the broccoli, carrots and cauliflower...in other words whatever bag of frozen veggies I have goes in. Oh, before I forget I threw in a can of drained green beans too. This dish was hearty and very filling, stayed with me through my afternoon munchies! I figured the extra box only made for an extra bread in the recipe. Either way you want to make it please give it a try, if you like chicken/turkey and dressing you are gonna love this one!) (I have made this every which way imaginable . . . sometimes I leave the chicken out of the casserole and after I put mix in and put it in the pan, I'll place the chicken breasts or lean pork chops on top and bake it that way. Open a can of cranberry sauce, throw some fat free gravy over it, and you'll think it is Thanksgiving day!) (Oh by the way, [this] is great too with a little warmed up fat free chicken or turkey gravy over it. Doesn't add much to calorie count but sure makes turkey and dressing complete!) (What's YOUR favorite chicken recipe????? . . . [this] Recipe calls for turkey but I make it all the time with chicken, even those little cans of 98% fat free white chicken meat! It is comfort food to the max. Yummy and filling!) Corn Ham Chowder, p. 94 ([This] is good.) Creamy Italian Baked Chicken Breasts, p. 178 ([one] of my family's favorites) (We had [this] last night for dinner, and they were absolutely delicious. Someone had posted this recipe a long, long time ago, and I printed it out, but had never tried it. I was at a loss for what to fix and started through my "saved" recipes. This sounded good, and I had what I needed, so it became dinner. If you haven't tried it, you may want to give it a second look. . . . I steamed Califoria blend veggies and had with the chicken. I used some of the sauce from the chicken and put over the veggies, and that was good too. I had Herb Seasoned Rice with this. My husband and kids gave it all a 5.) (Mmmm . . . we had a wonderful lunch today. I made [this], and it instantly became my new favorite recipe. Not only is it delicious, it is so simple to make. It took me 5 minutes to get it in the baking pan. I served it with baked potatoes and a salad. It would be very good with rice also. For dessert I made Coconut Cherry Crisp from the Feb. 02 Newsletter, p. 8. It is also very simple to make, and I highly recommend trying it. All in all, lunch rated a 10.) California Vegetable Biscuit Casserole, p. 158 (yummy) Salisbury Meat Loaf, p. 191 (a FANTASTIC meatloaf -- [This] is great with garlic smashed potatoes, and is one of our favorites.) Tom's Cheeseburger Meat Loaf, p. 190 (a FANTASTIC meatloaf -- This one tastes just like a McDonald's cheeseburger!) Salmon Pasta Salad, p. 130 Yahoo Access (I made [this] with green onions instead of regular onion & yum!! The baby was chowing down on it!! :-) Mocha Almond Mousse, p. 237 (102 cal. Choc. Snack-YUM) (I have been thinking this might be a solution for those needing take-along snacks, and those who really love chocolate-cherry flavor treats, or those who love mocha flavoring. Or just as a quickie dessert when unexpected company drops in. Some of the more seasoned HE-ers already know about this recipe I'm sure, but I wondered if the new folks know of it. . . . In my opinion it is one of JoAnna's BEST recipes. It is really quick/simple/cheap to make, and oh-so-rich and creamy, and great when you GOTTA have chocolate! The homemade sour cream in the recipe gives it an extra creaminess that just doesn't happen with regular instant puddings. And it will hold over for 4-5 days in the fridge without "weeping" like the ordinary instant, because the dry milk powder stabilizes it (Jo explains this in the recipe for home-made sour cream at the beginning of most of her books.) That is, if you have any left that long! I've read of some needing snacks to take along to work, sports, etc--I have toted this stuff with me in a T'ware cup, right in my purse--it travels great, and tastes SO decadent! Really helps tide you over--and if you happen to have a couple sqs. gram crax to dip into it, (like that commercial kid's snack awhile back, it crunches too!) Ok, so if you are too grown up to dip, crunch up the crax and stir in . . . lol But you oughta try it. . . . Notes: I've used this so many ways: like a sauce--2-3 Tablsp. over angel food cake, a dip for fresh strawberries or bananas, or over "legal" ice cream. Or as topping over vanilla pudding with a little dollop of Lucky Leaf Cherry Pie filling spooned on top like a jewel. And the sliced almonds sprinkled overall. Pretty in any dish! And so luscious! Not to mention so FEW cal/carbs and as Jo would say, a good wallop of calcium.) (Just last night I tried [this]. It's definitely a winner. I used only 1/2 tsp of almond extract (the recipe calls for 1 tsp). That was just the right amount for DH and me. It looks like it would be a fairly versatile recipe . . . could be used alone or as a accompaniment to something else. I spooned some over fresh strawberries and the flavor combination was wonderful.) (We loved [this], too, but had the same opinion of the flavoring. Almond is one of my favorite flavors, but it can be easily overdone in this recipe.) Salmon Cakes with Creamed Pea Sauce, p. 176 ([This] is really good!!!!) Broccoli Farmstead Chowder, p. 92 ({This that] I made for dinner was excellent!) (***** The original recipe's for 6. Dennis and I divided it into 3, then only served 2, and gave 1 serving to my oldest daughter, who is too busy to cook. She loved it as well.) (This has extra calcium, and we love the taste.) Z-Heart's Banana Salad, p. 134 (Is Wonderful; 2/3 cup is 3 pts. . . . I like this recipe in the morning for breakfast with an english muffin - It is Supurb!!!!!!!!!!!) Creamy Macaroni Taco Casserole, p. 198 Baked Potatoes with Bacon Topping, p. 110 (Have you ever tried [this]? It is good and filling.) Crunchy Corn-Cucumber Salad, p. 114 Yahoo Access (really liked) I've used [these] recipes . . . quite a bit: Chicken Club Salad, p. 127 nutrient info (We have had [this] twice and have enjoyed it both time altho DH questioned what those bread cubes were doing in it!!) (***** (plus) Now I can't wait to get this book. The original recipe was for 4, but we cut in half and made for 2. Both Dennis and I loved it, and now I can't wait until I get to my next goal, to order this book.) After all presentation is an important factor in bringing out the joy of not only preparing but presenting a delicious dessert/meal it to your family and friends. I made [this]. Let me tell you, this is delicious and my family & friends that we had over for dinner raved about it! I wasn't sure about having the orange juice in it, but it has a creamcicle taste to it. I will definately make this again! . . . looked wonderful in the glasses, but I know that they would have been wonderful in any container. I just felt that presenting it in all it's glory shows my family that they are worth it.) Compliments were flying everywhere, and I must say I was rather impressed myself. JoAnna!!! Thank you so much for "being" there this weekend with me. Between this fantastic breakfast and the Greek Feta Salad, p. 122 (OK this is my new fav salad. From now on though I'm leaving out those disgusting olives cause I really can NOT stand them at all. Hubby loves them, so I'll just put a few on his plate and he can have fun. . . . Note: I would definitely take two portions of this and add 1/2 cup of diced chicken to it and make myself a 6 point delicious and filling lunch.) (Excellent) ([That] is one of my very favorites. I took it to a pot luck dinner once, and now everytime there's a get-together, they ask me to bring this. Alright by me!
