September 2001 newsletter
- Hot Beef Sandwich Filling, p. 3 -- Cooking Tips
(I tried the September cooking tip from the Healthy Exchanges Newsletter,
and am still in the "glow" of eating it!!! It is absolutely wonderful!!!
Definitely a keeper!!! I figured out the points according to the
ingredients I purchased in SC, and they amounted to 8 points == well worth
it!!! I got 1/2# of deli lean roast beef from Publix which was Boar's Head
(2.5 WW points for 2 oz.). Then I got the Franco-American 98% Fat Free Beef
Gravy (1 WW point for 1/4 cup gravy -- 5 points for the whole can) and
Earth Grains Kaiser rolls (3 WW points each). Spray a crockpot with
butter-flavored spray, and layer the roast beef with the butter-flavored
spray until all the meat is in. Then pour the can of beef gravy over the
top. Cook in crockpot on low for 1 to 6 hours. I cooked about 3 hours while
I went to a Weight Watchers meeting. Since I only had 1/2# of the deli
meat, I put in 2 small Yukon gold potatoes, cut in half, raw side into the
gravy.
When I got home from WW, I toasted a kaiser roll on my griddle using the
butter flavored spray. Then I put about 1.5 to 2 oz. of meat on each side
of the Kaiser bun with some of the gravy (the gravy is 1 point for 1/4 cup
of the gravy - about 5 servings in the can). Then I had 1/2 of a yukon gold
potato that was done in the 3 hrs with some gravy on it, and then some
french cut green beans on the side. This was one of the best things I have
eaten in months!! I even have enough left overs for another meal. I think
the leftovers can be frozen too.
Franco-American also has a chicken gravy that I think could be used with
lean deli turkey meat in the same way.
Different brands of deli meat, and different brands of kaiser rolls might
amount to a difference in the number of points, but this was so good I
didn't mind expending 8 points on it at all!!!)

- Creamy Pizza Casserole, p. 4
(I made the [this]. I didn't realize that one of my sons had made Tuna
Casserole and had used my supply of Cream of Mushroom soup up. So I
substituted Tomato and as I didn't have a small can of tomatoes I used
the rotel tomatoes. My younger son said you can make that anytime. It
was rather spicy. [Editor's note: For many of us, this is a real plus!])

(We both thought this was very good and a keeper.)

- Broccoli Noodle Cheese Soup, p. 4
(I loved this one.)
(Made this today and it was great. I made it three hours before a dinner card party
so put it in the crockpot on low. It curdled. So next time I would only put in the
crock for about 1 hour. I think that it could possibly freeze. The liquid and cheese
was kind of thin, and Velveeta melts completely. I used chopped garlic in a jar and
I used Amish egg noodles that I had on hand that are very thin and delicate.)

(My husband has been diabetic for 11 years and he would love to give JoAnna a big
hug for all the good recipes. Try making him [this] . . . . He will love it.)

(This is wonderful -- has water chestnuts, rice, and a creamy sauce with a cornflake
topping.)

- Friendship Turtle Ice Cream Pie, p. 8
(Wow! The times in the freezer did take longer than the recipe said, but that
probably has to do with the way I have my freezer set. This was wonderful!!!)
(Oh my! We both really liked this. This is company-worthy pie! If we decide
we can share! I have to confess--we both even licked our bowls!)
(Last night I made [this]. Both my husband and myself liked this. I will make
this again.)
- German Baked Beans, p. 11
(These were really good -- they have apples and applesauce in them. I also
added a dash of liquid smoke.)
- Zucchini Quiche, p. 1
(It is wonderful, only I do suggest that you spray the pie plate before putting
the refrigerated crust into the pie plate. However, I will make this one again.
Try it to enjoy this wonderful recipe.)
- Apple Cream Dessert, p. 1
(I made this recipe a couple of times. The first time I found that the amount of
lemon gelatin called for was way too overpowering for the apples. The second time,
I used only 1 teaspoon of lemon gelatin and it was much better. If I make it again,
I will probably use approx 1 t. lemon juice instead of the gelatin.
If you do not have cinnamon graham crackers, many have suggested using a cinnamon/splenda
mixture to sprinkle on top of the graham cracker layer. Great idea.
Someone asked the question about the apples in this dessert being too crunchy. To solve
this problem, I always microwave mine for a few minutes before adding them to the custard
mixture and they come out perfect every time.}
(I have mine prepared in the frig and I'm looking foward to dessert tonight. I cut the
lemon Jello in half and sprinkled Splenda/cinnamon over ordinary graham crackers. I
cut my apples more to a coarse dice rather than slices. I have made other desserts
with the apples cooked in this fashion (Apple Valley Cream Pie from Heart Smart comes
to mind) and the slight crispness will be fine with us. I love apples, love apple pies,
crisps, etc.)
(Last night we had a piece of this dessert while watching the World Series. Yummy!
I really enjoyed it and will fix again. I liked using only 1/2 the lemon Jello and
will use the other half box next time.)

(These were great! I agree, JoAnna, my favorite muffin right now.)
(This is currently my favorite way to enjoy a muffin!)
(I just baked these this morning, a double batch to stock the freezer in preparation
for my next moment of weakness. These really are good. . . . in case you have forgotten
to bake a batch they are worth the effort. I think they are the best HE muffin recipe
I've tried.)
- Bean with Ham Soup, p. 9
(This was fantastic! I really love Healthy Choice Bean with Ham Soup and this was
right up there with it! I compared the label and the nutrition and it's pretty
close, only this had even less sodium. Yes, the can is easier, but this is pretty
easy and I can say *I* made it.)
(I'm going to add some L. B. Jamison's Ham Flavored Soup Base and some liquid smoke
to this, but then I add these two ingredients every chance I get.)

(This was very good! We served it with the bread machine bread that we tried
[Simple White Bread (I Got the Machine...)]. What a great meal for a cool day!)

(These were great! Charlie said they taste good & that the nuts must be really fine.
He liked them even with nuts! They *do* taste like mini apple pies for breakfast.
I would make double the amount because they won't last long! And they freeze well too.)

(I fixed a loaf of this bread in my bread machine yesterday. I had a couple of tiny
zucchini in the frig I wanted to make use of and I'm glad I gave it a whirl . I will
definately bake again. . . . Did anyone try it? It was very flavorful and smelled
fantastic. I had two warm slices for my afternoon snack and they tided me over to my
very late dinner.)
(I found this an interesting recipe, like an herb bread. Note: JoAnna uses Splenda in
place of sugar with no detrimental results. I always thought that the sugar was needed
in order for the yeast to work but not so. . . . I added a bit more water (be careful
as it moistens as the vegetables are worked in) and uped the yeast to 2 tsp which I do
often with my machine. Check, as bread machines differ. This bread toasts well, sort
of crunchy and was great warm as I 'topped' it and had that for my afternoon snack.)

(My husband, who isn't given to flowery compliments ("yeah" is usually about as
complimentary as he gets:) Called this "deliciously different" and he was right.
I served it over noodles--it would also be good with slices of polenta. A definite
"keeper".)

(I made it and we loved it, and I am going to make it for company this week. So easy and

- Pumpkin Patch Muffins, p. 9
(I made [these] for breakfast this morning. These are very good and I will make
them again.)

(I enjoyed them. I happen to have fresh ginger and added that to the mix.)
(Boy, Joanna's muffins sure don't taste low-fat!! We aren't even big pumpkin fans,
I made these for my teenager to take on a camping trip because she likes pumpkin,
but we tried some & they were really tasty!!!)

(. . . Libbys pumpkin .69 instead of $1.19 Will buy a case and a half if it has over
a year and half date. That is $14.40 in my wallet. Just for pumpkin alone. We love
[these muffins].)

Jo Anna's Pumpkin Patch Muffins are just the thing with a cup of decaf coffee. Once
all you have in the larder are the good things, it's pretty hard to fix bad ones. That
is the beauty of the newsletter -- it is up to date with the products you can buy off
the shelf. Happy eating and treat yourself.)

when it is 0 degrees outside. I found http://www.trailjournals.com/ to be quite
interesting to read. You can pick and choose. It goes quite well with Pumpkin Patch
Muffins and a nice warm cup of coffee. . . . Worldwalk by Steven Newman is also good. . . .)

(Today I made [this]. My husband and I both liked this. I will be making this again.)
(This was a very good, traditional flavor pie. I still miss my flaky crust. Charlie
left the crust on his plate and was asking about how mine compared nutritionally.
I'll have to figure it up and see if it's worth having the better crust.)
([This pumpkin pie] is wonderful. Tastes just like the regular pie, my family couldn't
tell the difference.)

Chillighetti Casserole, p. 7 Yahoo Access
(I liked it well enough to fix again and Leo really liked it. Strong in the recipe's
favor is it is a meatless meal, good fiber content, and it prepares with 'on hand'
ingredients. I was in a hurry to get something going so I could watch the game and
it was ready for the oven in minutes. . . . I don't have Jo's Chili seasoning so I
used McCormick's and added a tsp of chili powder to the skillet also as I've always
liked a bit more spice that JoAnna calls for. I should say it was perked up. We
enjoyed it and it is a dish you can fix with ingredients in your pantry. That was my
object, to fix a quick meal and watch the ball game.)
(I loved this! The spicy flavor was really turned up. It was too hot for Charlie
to even eat a 2nd bite. Since it freezes well, I think I'll be making it for me
in the future.)
- Pumpkin Holiday Custard Pie, p. 1 Yahoo Access
(I made [this]. I normally don't like pumpkin pie, but I liked it. One of my critics
said it needed brown sugar, the other said it needed cinnamon. I enjoyed it because
it wasn't as spicy as most pumpkin pies.)
(Served [this] for bridge luncheon and the ladies thoroughly enjoyed it.)

(I really liked this. Since it's only 1 carb [diabetic exchange], a rarity in desserts,
it was fantastic!)

(I really like [this]. I have made it twice & plan on making it on a regular basis.
There is a very small amount of Bisquick in this recipe. I think it acts more as a
gluten, to hold it together. There is not a crust so to speak. It is really a
custard, but I find it delicious!)

(I made the [this] and the Cranberry Fruit Fluff Salad . . . . I liked both of these
but my husband didn't like the stuffing because it had nuts.)
(I liked the Pecan Stuffing, because it HAD nuts. To each his/her own.)
(I made this and it was good. A little too much pepper for my family, but I really
liked it.)

(Really enjoyed that side dish.)
(We liked this. Too much pepper for Charlie. He likes green beans plain, so I wasn't
sure of this. The rice and beans were both pretty much "as is", so he liked it. I
thought it was a nice change from just green beans.)
- Turkey Leftover Bake, p. 7
(I couldn't find unseasoned bread cubes (too early in Nov.), so used turkey stuffing
that was seasoned and left out the poultry seasoning. I really liked this a lot.
Charlie still wants *real* turkey breast instead of the Louis Rich. Otherwise I
think he really liked it. I'll have to cook turkey breast for our turkey.)
(Dinner was [this] which was absolutely yum! I will definitely be making that again.
I added some HE slaw, some pickled beets, and for dessert Chocolate Cherry Pudding (Arthritis).)
- Peanut Butter Mocha Dessert, p. 12
(I made [this]. Very satisfying and RICH tasting. Think it would work in Keebler
Chocolate crumb crust as well. Fruits are good, but every now and then you need
something sweet to sink your teeth in.)
- Mustard Green Bean Salad, p. 12
(This was good, with good mustard flavor, but not too much. Mostly green beans makes
it easy to get veggies in. It disappeared at the church Thanksgiving potluck, so
you *know* it looked good when there's so much other to choose from!)

Applesauce Mince Pie, p. 4
(I made this for Thanksgiving dinner, and everyone raved over it, even my hard-to-please
SIL. My husband and I eat mostly sugar-free for weight control, and my MIL is diabetic,
so we all had something good for dessert that we could eat. My MIL told her sister
about the pie and she wants the recipe, too. It's GOOD! . . . Everyone thought it
tasted like the mincemeat pies we had as children.)
(I thought I would tell you all to give [this] a try. I made it tonight and just cut it
to give out. It is so good...I could have eaten the whole pie.)
(I would nominate the pie for the favorites list but I know it has been done.)

([This] is just about as sweet and rich as it comes. I did eat two pieces but it
certainly satisfied the sweet tooth.)

December 2001 newsletter
- Fireside Beans, p. 6 Yahoo Access
(I made [this] this week and let me tell ya they are very good! I have had them alone,
over brown rice and over some light cornbread I made. If you are looking for an
economical dish, give them a try!)
(Also - regarding cooking in the crockpot -- I made the chili bean recipe from the
December newsletter in the crockpot. It turned out great - so simple - few ingredients
and yet delicious. I made a couple of changes I added celery and only had one can of
pinto beans on hand -- so used a can of kidney beans to replace the second can of beans.)
(I have made [this and it] was very good.)
(I know that some of you posted that you liked [this], and I just wanted to say that we
had them this evening for dinner, and they are really good. I made JoAnna's Cornbread
Muffins, Fresh from the Hearth, p. 99, with them, and it was a hit. I think I will
try them over rice too. That suggestion sounded good as well.)

(I made this yesterday for a gathering that we had last night. It was very good, and
all that I came home with was the pan and a few crumbs! . . . . Give it a try. The
hard part will be stopping with one serving!!)
- Quick Chili Con Carne Skillet, p. 12
(I did prepare [this] and it was very good. Jeffrey barely left Leo any for his dinner.)
- Comfort Rice Pudding, p. 12
(Made this for dessert last night. It is a keeper! Just delicious.)

(I made [this] and they are TO DIE FOR! I totally fell in love with them and will be
making them a LOT. If you like pumpkin and raisins give it a try, you won't be
disappointed I promise. . . . I just can't quit raving over [these]! I am keeping
these on hand to take to work for snacking. I have found out about 3:30 or 4 in the
afternoon I start to get a slump and feel totally exhausted. So these bars are gonna
be my treat for that time of day.)
(I made the pumpkin bars last night and they are WONDERFUL! I have always loved pumpkin
and these bars definitely are one of my favorites. If you like pumpkin, you have just
got to try these.)

- Orange Waldorf Salad, p. 12
(We liked [this]. My son said [it] needed to be sweeter and have marshmallows.)
- Pot Roast Meatloaf, p. 4
(Wonderful! I'm getting my brother-in-law a 1 year newsletter subscription for
his Christmas present this year. It will be for the year 2002. But I had them
add the Dec. 2001 issue to my order for him, just so he would have this recipe.)
(Tried [this]. Very, very good.)
(I made [this]) and it was very good. I cut the vegetables into chunks instead of
slicing them, and I left the skin on the potatoes, more fiber, don't you know.)
(good -- I fix a lot.)
(We really liked [this]. I used baby carrots & cut my potatoes in chunks. I also
had a bit of rutabaga I needed to use so added that, & it truly seemed like pot
roast. I will be making it again!)
- Maple Milk Mug, p. 7 microwave
(This tastes like a Gloria Jean's Steamer. I'm sure you could also use the sugar-
free flavorings that the coffee shops sell in place of the sugar-free maple syrup
if you wanted to play around with the flavors.)
(I cut this down to one serving and had it for breakfast one morning, though I was
a little bit afraid the maple flavor would be overpowering. Well, it wasn't--in
fact it was just right. This is a lovely alternative to hot chocolate, and I think
I'll be making this often.)
(I'm having a cup of [this] now. It's very good, and might just become my favorite
before bed drink.)
- Eggnog Cherry Macadamia Nut Loaf, p. 5 Yahoo Access
(Great bread recipe! This week I tried [this]. This was great! I loved the flavor.
It had a moist, and still not heavy, texture. This was so much like a cake or pound
cake taste and feel. The cherries gave it good Christmas color--great for a Christmas
breakfast I took it to! I can see doing this at other times of the year, but especially
at Christmas. Charlie liked it also, even though he doesn't go for nuts or maraschino
cherries. It was so good, I had to share now! . . . You really should try it . . . !)
(A co-worker that tried it thought it would be good with cranberries instead of cherries.)
- Chocolate Peanut Butter Balls, p. 1
(I made [these] and they were good. I only got one and my son ate the rest.)
(Yesterday I fixed [these]. They are really simple, fast, and yummy. DH took them on
to his office this morning so I only had one for the 'taste test'. If you like chocolate
covered peanuts you will love this recipe.)
(My little chocolate lover really liked these. I thought they were a bit grainy, but good
and so easy. I will be making them again. They would be great for a school party. I too
made the balls smaller and got 2 dozen of them.)

- Maraschino Party Cake, p. 8
(Made [this] and it turned out very good. It was a little dry as I think that I should
have taken it out of the oven sooner but it tasted very good. Give it a try but don't
bake for the full time.)
- Mustard Chicken Pasta Toss, p. 4
(Boy, this was GOOD!! I was kinda avoiding Joanna's recipes that use that 'slurry' technique
for a sauce (put in a jar a shake) because I've had bad luck with it before (gritty, never
thickened) but this was GREAT & the sauce turned out perfect!! I served this to my mom
yesterday for lunch & she couldn't believe how little fat was in it!)

Kathy's Scrumptious Chocolate Fudge, p. 4
(According to JoAnna, she's had rave reviews about it.)
(Last night I made . . . [this]. If anyone is looking for a good candy recipe this is it.
I added some chopped walnuts. Now I am going to make it with white baking choc. and sub
the mini choc chips with the peanut butter chips. Since I can't find mini peanut butter
chips, I will chop them a little in the blender. Also found if you cut you bakers choc
into smaller pieces they melt faster. The fudge cooks only 3 mins in the micro. Also
was amazed at Jos Sweetened Condensed Milk. Really tastes like the real thing without
the sugar and calories.)

it's called that because the meat and eggs are on a crust.)
