Chicken-Apple Salad Stuffed Pitas, p. 120

note: I substitute red grapes for the apples - and I eat it without the
pitas....Of course there are more, but these . . . I remembered off the
top of my head (I'm at work).)

(I make it with red grapes in place of the apples. I make it for lunches,
and the apples wouldn't survive the week. The grapes are fantastic.)

(This was good. It was a great for the "bring a snack to share". It was a hot
day and I wanted a finger food that didn't have to heat up the oven. I would
do this again to take for something like this. It looked festive.)
Chinese Chicken Soup, p. 63
(I just love Chinese food! We made this last night and it is Great. Easy and
quick to make too. This will be one time that I don't mind having leftovers!)
(I made the soup yesterday, of course with a few variations! I used a total of
8 cups of liquid and I added 3 cups of leftover cooked regular rice, and I used
12 oz. of my favorate frozen stir fry vegetables, more soy sauce, pepper. When
my husband got home he said, delicious! He really likes the water chestnuts.
(I had a can of the water chestnuts that had been in my cubbard for months and

(I didn't have any snow peas, so I used a package of frozen stir-fry vegetables.
Was delicious, and the orange and green colors made it pretty.)
(I tried [this]. It is very good. I used fresh pea pods but they didn't stay
nice and green, because I put the lid on the pot. I will make this again, but
next time I will only use 1/2 the amount of rice. 4 oz. is a lot of rice. If
you like a really thick soup use the 4 oz. I would prefer a little more broth
and 1/2 the rice would cut the calories a little.)
