Pineapple Blueberry Coffee Cake with Lemon Sauce, p. 9
(Hi--tried [this]--it was quite good! Something a little weird happened,
though, and I am going to try it again. I made it with my grand-daughter
on Sun. morning,as I had wanted to. When it had cooled enough to eat a
still warm-from-the-oven slice, we tried it (isn't that when you are
supposed to eat coffeecake?) The consistency was kind of gooey-doughy--but
the flavor was really good. I thought we had just cut it too soon, so
we waited and later when it was fully cooled, tried it again. Still,
the consistency was kind of doughy--almost like it needed just a little
more baking time (and I had already left it over about 8 min longer,
because it appeared so white on top.) In any case, I covered the top
and it set on the counter until Mon nite when I was in the kitchen,
feeling alittle snack-y. I had a little bite of it, thinking it was
too bad that it hadn't baked longer--Voila! the texture was ENTIRELY
different! Somehow the doughiness was gone, and it was "cakier".
And last night, when my DH finished it, he was commenting why didn't
he get any of this if I had it in the house since Sun.? He loved it!
And that Lemon Sauce!!! That is REALLY good--I can see that it has
LOTS of other possibilities--would be great just to put it over sliced
angel cake for a quick dessert, or slightly thinned, drizzled over
some assorted fresh fruit, even. . . . I am going to bake it again.
In an earlier post about success with her cakes, Jo had said to bake
cakes on the MIDDLE rack in the MIDDLE of the oven. I'm wondering
if that might be the answer, since I think we baked this on the top
rack. As to why a change in consistency, some 24+ hrs. later--????? )

(I loved these. The chicken soup with it was a great taste. Gave it
enough flavor to contrast with carrots which sometimes need something
extra.)

(We had them back in 1998. Charlie asked for baked beans and I said

on them. He said they are still great to him (but not as good as mine!).
Creamy Caesar Potato Salad, p. 5
(We really enjoy this one. . . . What I did differently: I don't use parm
chz in a can at all. I always buy a good grade and grate it myself, just so
much more flavor. I also made a green salad, using romaine and other
dark greens, and just served the potato salad alongside it. It was excellent.)

we still have dessert to do yet, but I'm sure it will be as great as the rest of the
meal. The best part was I didn't even have to think, it was all planned out in the
newsletter for me!

for my diabetic husband's snack, which he really liked. . . . I forgot to
sprinkle Splenda on the tops and was fine without it. Also if use paper
liners, spray with butter flavored cooking oil and it will help to peel
off better also. Especially after cooled. I'm going to make couple more
batches to put in the freeze so hubby can help himself. He loves to
look over my should and ask, "What are you cooking now?" Enjoy.)

Grecian Spinach Pasta Salad, p. 7
(This is one of my all-time favorite HE recipes for hot weather; I had found
it in the kansan archives some time ago. I REALLY like it, and have made it
many times with a few "tweaks" of my own. Besides topping with some cold
chicken breast, I have also cut a few very thin strips of cold leftover
very-lean steak from the grill. We like it that way too. . . . Sometimes,
I add a pinch of dried oregano leaves to the salad dressing. (I love the
stuff.) I usually add some coarsely chopped onion (red is pretty--Vidalia
is yummy), some coarsely chopped unpeeled cucumber, and fresh mushroom
slices to this. It makes a very striking plate to serve it on a bed of
whole spinach leaves, and top off with some chopped chilled chicken breast.
Can garnish with a little fat-free sour cream, sprinkled with a few slices
black olive, and coarse-ground black pepper. Looks like a feast and it is!
Have served this several times for deck party guests, and they loved it!
Thank you JoAnna--and I got all the credit!! And EASY--it can be made the
night before (I waited to add the shredded spinach, the cukes and fresh
mushrooms shortly before serving). No one could believe that it was good
for them, too--especially the guys!)

(I had a family reunion over the Labor Day weekend and took [this] and the
Lemon Fluff Fruit Cocktail Salad from Fast, Cheap, and Easy, p. 95. They
loved it!! I did not tell them until later, the second day, that it was a
healthy recipe. My FIL took the leftovers home!! It was a good way to

It has zucchini, tomatoes, other veggies, beef broth, and chili seasoning
in it. The 1/2 Brd exchange is for corn. One serving is 1 1/2 cups, and
counts as: 2 1/2 Veg, 1/2 Brd, 8 Opt. Cal. and 1 (1.0) WW Points.

chocolate chip cookie dough, which they eat before making cookies. The

way more than he is supposed to...he had 2 1/2 pieces! I stashed away the rest to
have for lunches for me! . . . BTW . . . I loved it and apparently DH must have

(I have used this recipe so long I don't remember which newsletter or book it came from. [Now we know.])
(Adjustments: I did a couple of things to this...I add fresh mushrooms (8 oz container sliced),
instead of the water I add a can of diced tomatoes and I use more seasonings...lots of
chopped garlic and be sure when you put your Italian Seasoning in to always rub it between
your fingers...releases the essence of dried herbs and spices. Hope you enjoy, this is the
only sauce I make anymore and I always have containers of it in the freezer!)

Pumpkin Pie Squares, p. 8
(I decided to give it a trial run tonight, to see if I wanted to have it for Thanksgiving. It is VERY
good, and has only 1 g. fat per serving!! Has a wonderful, very ingenious pumpkin filling, and not an
egg in sight! I even served it warm, which would never work with regular pumpkin pie! Hubby loved both
servings . . . lol! I was thinking that others might also like to try it--for holidays or otherwise.
Only things I'll change when I make it again: I'll substitute Splenda in the crust, as I really don't
like the taste of Brown Sugar Twin. I was hoping that it wouldn't be noticable, but it was to me
(although hubby didn't notice it). And for the topping, I will just sprinkle the chopped nuts over
the top, instead of trying to mix Splenda and margarine with them--it just dissolved and stuck the nuts
all together, making it difficult to sprinkle them evenly over the top. AND it seemed extra sweet that
way. It has a wonderful flavor, and doesn't need that extra sweetener, in my opinion.)
(We really liked the end product. I made it exactly like the recipe. The pecan pieces I used were not
the itty bitty pieces, but the next size up for chopped pecans. And yes, it was a struggle to place
those pecan peaces on the top, but I would do it again. Instead of pumpkin pie spice, I used 1 1/2 tsp.
cinnamon. We thought the flavor was delightful. My husband is taking a piece in a sandwich baggie to
work today -- I heard him muttering, I hope this doesn't get squashed.)

They are awfully good, and you're allowed a generous serving -- 3 bars! A comment on the baking time:
I won't bake mine quite so long next time -- gonna take them out at about 22 min. (my oven runs a little
high). I really thought they seemed done, but left them for a few minutes more to be sure, and I think
as a result, they weren't as moist as they're meant to be. If they feel solid to your touch, I'd bet
they should come out--kind of like brownies.)
(I did make one change: I added about 1/3 c. raisins to this recipe. My "old" recipe for pumpkin bars
had them (and alot of oil and sugar!), so I'd been looking for something similar, but healthier. If I
can catch them a little sooner in the oven next time, I think these will make a good substitute for the
other recipe.)
