Bacon Beer Bread, p. 7
(from JoAnna: ". . . it ranks up there with Hawaiian Strawberry Pie
as the two recipes I'm most proud of creating!!!" I agree.)
(My husband and son loved [this] I made in my bread machine to serve with supper.)
(Q: I am going to try and make the beer bacon bread without a machine. Can
any of you veteran bread bakers tell me when I should put in the bacon and onion?
Knead first and then put in and knead again? Or what? . . .
A: I had forgotten -- but my Mom always made Bacon bread. She would spread
out the dough and spread the bacon, onion and egg mixture over the dough and then
roll it up - jelly roll fashion and then let it rise and then bake. If the bread
is to rise twice - I think she did this b/4 the second rise. Yumm - I wish I had
some now. The Lithuanians also make what is called a bacon bun - they put a bacon
and onion mixture in the middle of a roll - let it rise and then bake. I would love
to try some bacon bread - but don't want the bacon fat - I think I could make the
bread in my bread machine - take it out b/4 it rises and bakes and then put in the
bacon, egg and onion. I would use those bacon bits to cut down on the fat. I would
then let it rise and bake in the oven.)
- Baked Pasta with Mushrooms, p. 7
(We both liked this. With so much green pepper, I wasn't sure what Charlie would
say, but he really liked it and only somewhat picked around that green stuff.)
- Linda's Nice and Easy Chicken and Rice, p. 4
(This recipe was just for me! Not only was it not for Charlie with broccoli in it, but
I've been looking for this recipe. The Garden Cafe here catered a meal once that
had a chicken/rice/broccoli/cheese casserole. I've wanted to create one ever since.
Excellent! Thanks! )

Lemon Coconut Pie, p. 4
(This lemon coconut pie is very good.)
- Island Strawberry Shortcake, p. 1
(This was very good and I will be making it again.)
- Chocolate Applesauce Pecan Cake, p. 12
(Last week I made the crockpot applesauce. It was good, but to me it would have
been better with less apple pie spice. Well, I had some leftover, so I decided
to try [this cake]. This is the best HE cake I have ever had. It was very moist
and because the homemade applesauce was sweetened (with Splenda of course) and
the recipe called for unsweetened, WOW is all I can say. Had to have dessert first
because this is one of the benefits of being an adult.)
- Chicken Potato Pot Pie, p. 6
(It is definately a keeper. My entire family enjoyed it last night.)
- June 2001 newsletter
- Apple-Pecan Delight, p. 9
- Peach Crisp, p. 9
- Chicken Macaroni Bake, p. 11
- Peach-Strawberry Pudding, p. 12
(The whole family loved it. It was a nice cool treat for such a hot day [it was 105 here
yesterday!] and it was so easy to make! The only thing I did differently was to use
fat-free peach yogurt instead of the plain yogurt.)
(Not really a pudding; more a creamy gelatin. Still this was excellent!
Very fresh tasting and so fast and easy. I've already made it again.)
- Peas and Cheese Salad, p. 11
(delicious and will certainly make again!)
- Cheesy Chicken and Macaroni, p. 11
(and it was terrific. Definitely a favorite.)
(Yum! Great ingredients to put together.)

Taco Rice Casserole, p. 7
(was wonderful for us Mexican lovers)
(One I have enjoyed recently is [this]. It freezes well and makes a nice luncheon dish.
Like the ease in preparation of the recipes. Also fit well with W.W. point system.)
(Tonight I made [this]. I will make this again.)
- Layered Meat Loaf, p. 7 -- microwave
(delicious and will certainly make again! )
(was also excellent)
(We really love [this]. Excellent!)
- French Onions and Rice, p. 6
(It was excellent. This is definitely a keeper for my family.
My 14 year old even liked it and she doesn't care for onions.)

Crazy Cherry Pie, p. 4
(I would highly recommend [this] -- VERY easy to make, very nice looking, and quite tasty
(specially with some cool whip!). Only 140 calories, too.)
(I found this recipe yummy too. When it comes out of the oven it is also an
attractive dish. Enjoy.)
(We had [this] for dessert. This recipe is yet another I've finally gotten to
and it is good, more like short cake. Leo mentioned the 'cake' was unusally tasty.)
(We had [this] for dessert last night also. It was a big hit with the whole family.
It is sure easy to make and it is now on my favorites list. The next time I make it,
I will use JoAnna's homemade pie filling recipe. Then I can make it with Splenda and
add a hint of cinnamon. Oh, I forgot to say that I didn't mix up the crust with my
electric mixer like the recipe said. I just mixed it with a spoon. Turned out just
fine.)
(Tonight I tried [this] . . . WOW! A real hit, my husband said it was just like
getting dessert from a restaurant.)
(Here is a recipe I would highly recommend for you to use up your pie filling. This is
delicious and one of our favorites.)
(This is a great recipe and use for your Lucky Leaf. . . . . Lucky Leaf also has an apple
filling sweetened with Splenda, both are great products.)
(You can make any pie filling you want by following the the basic recipe:
JO's Pie Filling
2 cups fruit - canned in water, drained; frozen-thawed; fresh
1 (4-serving) pkg. sugar free vanilla cook & serve pudding mix
1 (4-serving) pkg. sugar free complementary gelatin (note: Jello) to the fruit
1 1/4 to 1 1/2 cups water
Cook over medium heat, stirring often and being sure not to crush fruit, until mixture
thickens and starts to boil. Place saucepan on a wire rack and allow to cool completely,
stirring occasionally. This should get you real close to what's in a 20 ounce can of
pie filling.)
(I capped [lunch] off with [this]. That is definitely a winner. I've made it several
times.)
(I made [this] today. Used the Lucky Leaf SF Cherry Pie filling. My husband and I both
liked it a lot. In fact, he went to WalMart after lunch in search of more Lucky Leaf!)
(This was great! So fast and easy. I had heard that others liked it a lot and finally
got around to trying it. I think that I couldn't find the pie filling when this newsletter
came out. Definitely easier than stirring up the pie filling recipe. I told a co-worker
that I would bring him a piece of the next awesome pie I made, and I think this is it!)
- Italian Chicken Pasta Salad, p. 1 Yahoo Access
(This was a very good salad. The best part is that one serving works as a
snack for me because I can only have one carb. Quite a difference from
crackers-and-cheese-type snacks. Charlie said he could eat this every day!
When I had some leftover diced chicken, he asked, "How much chicken does
that pasta salad take???" I made it again!)
- Scrumptious Chocolate Surprise Cheesecake, p. 8
(Yum!! This was only for me--instant pudding, almonds, and raspberries
(oops, spoiled the surprise) aren't for Charlie. Oh well! I'll just
have some in the freezer for me! Great flavors together--chocolate,
cheesecake, and raspberries. I would put it with favorites, but there
are too many other desserts to try and raspberries can be expensive.
[Sorry, Debbie, I just couldn't resist.])
- Sheryl's Pasta Salad, p. 5 Yahoo Access
(It was the best!!!! It had a sugar taste so next time I will use a
little less Splenda.)
(***** This was a super salad. We made this on our vacation, and then
made it again when we came back. We really liked this salad and this
is one we could have during the winter months as well.)
- Scroll down after clicking on this link to see:
Miracle Chocolate Brownies, p. 4
(I tried [these] last night--very good. They are more like cake. They
even have a nice light texture like a cake rather than the dense
texture you usually get with a lowfat baked good.)
- Easy Broccoli Chicken Skillet, p. 12
([one] of my family's favorites)
- July 2001 newsletter
- Scroll down after clicking on this link to see:
Gringo Chili Pie, p. 6
(I liked this one a lot! :)
(It is wonderful! I will probably have it next week too.)
(I think I will put green chilis in it.)
- Scroll down after clicking on this link to see:
Blueberry Banana Muffins, p. 4 (delicious, excellent)
(. . . baked a batch of [these] but of course, I used blackberries.
They are very good, favorite quality. I had one with lunch and really
wanted another but I resisted as I'm going out to eat tonight and
there is still that cobbler for tonight's dessert.)
- Just for Daddy Cheesecake, p. 1
([This] is absolutely the best! Even my son who never eats
dessert couldn't resist.)
(I made this July newsletter recipe yesterday. It is delicious and so easy to make.)
(Charlie said "that's pretty good!"--he didn't even mention the nuts! I really
liked it, but it's quite a few exchanges and difficult to have much of. That's
why I probably wouldn't make it again--not because of the taste! Actually, it
will be a good, special occasion, fancy dessert! (Now I know how to make chocolate
Cool Whip too!) I took a piece to a coworker and her husband asked how did she
rate?! She loved it.)
(I have made many cheesecakes and letting them [sit] in the fridge overnight to blend,
works wonderful for my family. Our favorite is [this one]. It is chocolate with
cherries.)
- Strawberry-Rhubarb Crumb Pie, p. 4
(It was really good!)
(I had a piece of [this] last night which was the perfect ending to my day.)
(This was really good and refreshing.)
- Garden Sandwiches, p. 9 Yahoo Access
(I tried [these] and they were great. Sort of an egg salad
with bacon bits and carrots and radishes.)
(I loved these. They just said summer to me! The doctored up egg-salad; lettuce
leaf for crunch. Made a great sandwich.)
- Scroll down after clicking on this link to see:
Hawaiian Lemon Cheesecake, p. 1
(Well let me tell ya! For the fourth I made [this] and it is the
total best pie I have ever eaten!!! I loved it. I had extra points
saved for yesterday and believe me I ate them by having TWO pieces
of that pie! If you love pineapple and you love coconut please give
it a try. . . . WHOOPEEE!! I've got happy taste buds!)
(I have found that for my taste I make the cheesecakes one day and then eat them
the next. For some reason the ingredients meld when they sit overnight in the
fridge. Now that is just my opinion. I have made a lot of Joanna's cheesecakes
and loved everyone of them. There is one, I can't think of the name of it . . .
Hawaiian something or other, oh my goodness, it is lipsmacking good. One of the
best in my opinion. I just looked it up, [it's this one] . . . very, very good!
The only advice I know to offer is to let them sit overnight in the fridge before
you eat them. . . . It is probably my all time favorite cheesecake by JoAnna.)
- Magnificent Peaches and Chocolate Chip Shortcakes, p. 8
(At first, I wasn't too sure about peaches and chocolate, but the
shortcakes were delicious. That recipe's definitely a keeper.)
- Scroll down after clicking on this link to see:
Porcupine Meat Loaf, p. 7 -- Microwave
(Well it worked. I used a microwavable pie plate and put a custard cup
in the middle. The rice cooked in 10 minutes and the porcupine
meatloaf cooked in 14 minutes. We had instant mashed potatoes, green
peas and asparagus. Got home from work at 4:30 and had dinner over
and done with by 6. Everyone liked the meatloaf (except my Katie (8)
who doesn't much like meat). I will certainly do this meal again.)
(This was good. It didn't hold together well; wherever there was rice,
it would fall apart. Charlie just mixed it up good and had a skillet
type dish. It's a great recipe for the summer because it's in the
microwave. For that reason, we'll want to make it again.)
(It is wonderful and quick and easy!!! )
- Green Bean and Hot Dog Hash, p. 9
(I thought this was great! I love the crisp-cooked taste and the hot
dog flavor with the potatoes is great.)
- Peach Strawberry Pudding Snacks, p. 9
(Much like the ones last month with only peaches this time. Still
very good!)
- "Sausage" and Egg Sandwiches, p. 9
(These were good. Charlie especially liked that the eggs were cooked
in the "sausage grease". He said it reminded him of eggs from his
childhood, cooked in bacon grease. It was easy to have the "sausage"
patties done up ahead and assemble them for a quick meal. 3 meat
exchanges are more than I'm allowed for breakfast, so we had a good
supper of them.)
- Hazelnut Mocha Cheesecake, p. 1
(I make more of the fruit and cream pies than I do the cheesecakes but
I'd say our favorite of the cheesecakes I have prepared is [this].
Gina (HE) posted it for us. The recipe was the Channel 8 recipe.
I found that it was much better the next day, even my husband noticed
-- so prepare in advance for optimum flavor. Oh, I also used chopped
almonds instead of hazelnuts as I had the almonds.)
- Cracker Salad, p. 4
(Okay it doesn't really qualify as cooking because the only thing on the
stove was a pan for boiling the two eggs it calls for. This would look
very pretty for the holidays, it is colorful and it tastes very good.
I am having it over chopped lettuce for lunch! Who would have thought
crackers would make a salad? Sure surprised me! I whipped it up
because...yep you guessed it...no cooking!!!)
- Peach Sherbet, p. 5 blender
(I just love ice cream and sherbet, so I decided to try [this]. It was very
good. The only thing I changed was I added a little allspice to mine.)
- Imperial Cherry Ice Cream
- August 2001 newsletter
- Lazy Boy Pierogi, p. 7
(I tried this recipe tonight & it is wonderful! Quite a large serving
and very filling!)
- Scroll down after clicking on this link to see:
Banana-Buster Cream Dessert, p. 1
(This is remarkably rich, and filling. I love this one!)
(I made [this] for dinner this evening and it was wonderful. I'll
definitely make it again.)
(This was great! Creamy vanilla, chocolate, and banana. The peanuts
were just the extra that made it even better! A very large piece made
it feel decadent! The peanuts were what Charlie *didn't* care for!)
- Coconut Peach Crunch Pie, p. 5
(Last night I made [this]. This pie was very good and I would make it again.)
- Chocolate Chip Cheesecake with Blueberry Topping, p. 11
(I wouldn't think to put chocolate and blueberry together. It was good,
but I bet even better with strawberry or raspberry! I'll have to try
that. I loved the creaminess of the cheesecake.)
- Iowa Farmer Kolaches, p. 6
(These were so good! The fresh bread was excellent. We both loved them.)
- Italian Soup with Ham, p. 4 Yahoo Access
