Man in Mind
Taco Chicken Bake, p. 214 Old Fashioned Meatloaf, p. 189 Triple Layer Party Pie, p. 311 (Have to take a dessert to a party this week. What pie is your very favorite that you make alot and everyone in your family/friends love? Since there are so many I am having a hard time zeroing into one. Thanks a million for your time to answer this question. . . . My favorite JoAnna pie is [this]. The only thing I do different is put a very thin layer of peanut butter on the graham cracker crumb crust before I layer the pudding mixes in it. Oh . . . and the recipe calls for chocolate cookie crumb crust, but I don't like the chocolate crumb crust, so I use reduced-fat graham cracker crumb crust instead. . . . Oh my, Carolyn, that is my favorite too. It seems to have something in it to appease everyone's favorite taste.) (JoAnna asked that we list what our favorite pie is. . . . Hawaiian Strawberry Pie (Best of Healthy Exchanges Cookbook, p. 144) has to be my favorite. . . . It is absolutely fabulous! JoAnna says this is her favorite all-time recipe and I can see why! [This] "ain't half bad" either!) (Tonight I made [this]. Yum Yum Yum.) Salisbury Noodle Skillet, p. 188 Last night, I was thinking to myself, how in the world is it that I can eat such fantastic food and STILL lose weight! I made a few new recipes this week . . . Pizza Muffins, p. 192 (***** We were not too sure if we would enjoy these, but I have to tell you we gave it 5 stars, but they should be more. We served each muffin with 1/2 slice of fat free mozzarella cheese, . . . Pennsylvania Dutch Green Beans (Cooking Healthy Across America, p. 74), baby carrots, and we got nothing but great compliments. Way to go JoAnna, another winner in the Deacey family!! ) (These were good. I wasn't sure they were keepers [but Debbie did give them the Favorites *], but they are an easy snack to grab. Would be good to have in the freezer just to pop in the microwave at snack time!) Decadent "Candy Bar" Salad, p. 139 (I found [it] recommended on the message boards.) (I made this salad for the first time for our Thanksgiving, and it got a thumbs up! Several people asked me what kind of candy bar was cut up into it, and they couldn't believe it when I said NONE! I made a double batch for a crowd, and the only thing I'd do different is to NOT double the coconut extract next time -- it was a little overpowering to me. I know that doubling recipes doesn't always work, so maybe this is one of them. I'll probably just make a single recipe the next time, so it'll be interesting to see how that turns out.) and I'm just beside myself on how good they are. Don't get me wrong. I've owned 10 of Joanna's books for over 4 years, and I've lost 47+ pounds using the Healthy Exchange method, but I'm still in awe. I watch my sister and brother-in-law nibble on almonds as "treats" on their Atkin's diet. There is just no way I could deprive myself to that degree. I'm also so amazed that after 4 years I'm STILL trying NEW recipes! I have my favorites, but with Joanna's books I'm never in a rut. If you haven't tried these three recipes, try them soon, they are FANTASTIC! Heartland Macaroni And Cheese, p. 213 (My favorite (truth be known, the only one I've tried so far) is [this]. Usually JoAnna's portions are hearty enough that I'm satified with them, but this was so delicious, I had trouble stopping with one-sixth of the pan. I did manage, but I had to promise myself a slice of one of JoAnna's pies in exchange for not eating the entire pan of mac and cheese.) (I also had [this] last night, but I made it with Healthy Choice Polish Sausage-- wow--it was great. I did not care for it much with the ham, but the sausage made it out of this world.) (Man in Mind is the one I use the most. In fact, the very first recipe I tried was [this], and to this day is my hubbys fav dinner. He took it to work for a potluck a month or so ago, and 3 different people asked him to get them the recipe!) (I had some turkey ham that I needed to use up so I went looking through JoAnna's cookbooks and came up with two very good recipes that I fixed this afternoon. [this and Grande Macaroni and Ham Bake, from the same book, p. 212] (Here [is a new recipe] Dennis & I tried yesterday. [this one] Great, we used mild salsa.) I substituted the turkey ham for the regular fat free ham and it worked fine. I am wondering why JoAnna feels it necessary after mixing in a skillet to bake for 20 to 30 minutes in the oven. I feel it tastes just great right out of the skillet. . . . I put left overs in small containers and froze for work next week.) (See also: Kielbasa-Rice Casserole, Diabetics Healthy Exchanges Cookbook, p. 203) (Our favorite at my house is [this]. This is the first recipe I tried of Joannas, and 4 years later it is still our favorite!) ((What is your all-time favorite JoAnna main dish recipe? My [favorite has] to be [this] . . . . My kids and hubby are pretty picky, and when I do make Joanna's recipes, sometimes not everyone likes what I make! [This is] excellent, and my WHOLE family loves [it]!) (This is one I have made the most often out of all the Joanna recipes I have!) Orange Push-Up Cheesecake, p.253 (Our favorite [cheesecake] is [this] . . . . This was my first HE cookbook, and its still my favorite!) (. . . a REQUEST from one of my hubby's friends - he was saying how much he liked push-ups when he was a kid - I said Joanna had a cheesecake that was supposed to be like those & he insisted I make it this week! :-) Wow, I'm converting my hubby's friends to healthy eating!! :-) (a hit last night . . . The cheesecake also disappeared rapidly - I put it in the freezer for a couple hours & brought it out 10 minutes before serving & they said it was JUST like a push-up! :-) (My sister and her hubby were coming for dinner tonight, so I wanted something that I was pretty sure would be a hit. I . . . made [this]. The cheesecake was light and rather moussy-like. I thought it was the kind of cake that would taste even better the next day, so was happy when my kids said they didn't want any. Sure enough they came back after and ate not one but TWO pieces each of the stuff, and now I can't even try it again tomorrow to see if I was right! LOL) (The best orange cheesecake my family and I *EVER* ate is JoAnna's recipe for [this]. :) Let me say that although I have a take-it-or-leave-it attitude about Creamsicles, I *CANNOT LEAVE* my slice of Orange Push-Up Cheesecake behind! *hehehe* It's AWESOME and mixes up in about 2 minutes! :) (I tried [this] and it is absolutely fantastic! It tastes just like those orange pushups we used to get from the good humor man as kids. I highly recommend it!!) Banana Buster Bread, p.289 (I made muffins, this morning, using [this] recipe. They got thumbs up from all that tried them and I'll be making them again, very soon. The recipe made 12 large muffins and I baked them for 23 minutes. . . . I make muffins from many of JoAnna's sweet bread recipes and they always turn out good. I have found that most of them take 23 to 26 minutes to bake, but 1 or 2 minutes too long makes them very dry. I start testing them at 23 minutes and go from there.) (I agree that overbaking muffins makes them dry. I bake my . . . muffins for exactly 24 min. If they are underbaked, I think when I warm them in the microwave, they finish the last little bit of cooking and do come out very moist. I always warm them on 1/2 power. (50%)) Macho Burritos, p. 181 (I made one batch w/ corn and another w/ flour tortillas) (I made [this]. They were AWESOME! I could only eat one, and it was only 5 points. I made homegrown green beans (steamed and a friend grew them) and a salad. It was very satisfying. I love the Man book, as my husband has liked everything I made out of it.) (I, too love the "Macho Burritos." I, also, put the sauce over the top without spraying.) (I also took the Macho Burritos and added no fat refried beans to the filling. This really adds to the burritos. Very good!) (My husband and I both loved them.) (Right now, off the top of my head, I'd recommend [this] which we had again last night.) (One of our favorites [is this]. My DH's comment after I first made these was "These are good for you?") Banana Split Pie, p. 310 (a whole hearted 5 star dessert) (My husband wanted a cheesecake for father's day. I don't do cream chesse, yogurt, or sourcream. I bought him one of those jello cheese cake and had my daughter make his while I made JoAnna's Banana Split Pie from Man in mind. Daughter was totally grossed out by the 6 Tbsp of butter that was put into the crust of the cheesecake. (YES!) My pie was so much better than the one. What can I say...there is only one piece missing out of the cheesecake and several out of the Split pie. Only bad thing is that you can't freeze it. :( Make this at least once while we have good fresh strawberries.) (I made [this], and it was a real hit! My husband just loved it and so did I.) ([This] is my husband's all time favorite, number one pie.) (* DH's fav pie. He's been working really hard lately, so a little treat for him with the remaining strawberries.) California Beef Bake, p. 186 Italian Biscuit Ring, p. 291 (I also recommend [this]. It's a good "extra" for a meal.) Grasshopper Dessert Bars, p. 244 Scroll down after clicking on this link to see: Pistachio Creme Fruit Salad, p. 134 (. . . . We then went to the Dairy Queen (ice cream, fried food, awesome french fries) BUT I WAS STRONG!!!! I ordered a grilled chicken with just veggies and water. Best of all is that I didn't clean the kids plates. But I got home and could "feel" the sacrifice. I had peanut M&Ms in the cupboard. BUT NO! I DID NOT EAT THEM! Instead I made "Pistachio creme fruit salad" from cooking w/the Man. And Munchy Fruit Snack got that one from a newsletter (H.E.) [SEE July 2000] Got the creamy and crunchy and yummy all from just one serving. Filled the urge. My point is! Keep Healthy snack and salads like these pudding recipes made and ready to make so you can kill the munchy before they kill you. then you won't feel like you cheated. Cause you haven't! WE CAN DO THIS!!!! ) (I tried [this] . . . it was FANTASTIC, course I like the flavor of pistachio. Oh,it was so good!!) Georgia Peach Cobbler, p. 248 (We had [this] . . . wonderful!) (Good morning! Just had to tell you, JoAnna's recipes are getting more raves at my house! . . . Night before last we had Skillet Cabbage from The Cancer Recovery Cookbook, p. 138 and [this]. I added cooked sausage to the Cabbage for our meat, which changed the nutritional content, I know, but made it a balanced meal. Next time I think I'll get a low fat turkey kielbasa to put in it. Served it with homemade Italian Herb bread, made from a mix by Krusteaz.) (I like . . . . [It was] last night's dessert.) Blazing Glory Chili, p. 84 (Rated a 5) (This is absolutely wonderful. I made it last night. Quick and Easy. I did change the seasoning. Instead of chili seasoning (I didn't have any), I added chili powder, cumin and a Pampered Chef cajun mix that I found in the pantry. Yum. Yum. Will certainly make this one again.) (My personal favorite) ([one] of my family's favorites) (I made [this] and it was a hit.) (I've been craving some [of this] myself.) (I also made [this] for the first time after reading all the wonderful reviews about it in past postings, and it was very good.) (I have made [this] several times. I made it with ground turkey, added jalapenos and 1 extra tsp of chili powder as we like chili "hot" and spicy!) (one of my all time favorites) (My all time favorite is [this]. . . . gosh I just love Joanna's recipes, they make me look like a good cook!!!! hehe) (So much has been said about this recipe online that I knew I had to try it. I can't believe it took so long! Charlie loves my crockpot chili, so not very many other chilis can be tried. We both liked this a lot. He kept saying it as he ate the leftovers! Like any good chili, it got even better the next day. This is so fast and easy that, while it won't replace my 4 hour crockpot chili, it will definitely have a place in our meals.) (The temperatures are starting to drop, another cold weekend ahead, so guess what is going to be bubbling on my stove??!!! Yep, you got it, [this]! It is the only good thing about cold weather, oh heck . . . who am I kidding?! It is good in hot weather, too!) (I am with you, Sarah, that is my husband's all time favorite recipe. As a matter of fact, when he was finally able to eat after a serious illness, he asked me to make him some and bring it to the hospital for him!!) (***** We had this last year; we love it.) (This is an easy awesome recipe. . . . I think this is the only recipe for an entree that I made of JoAnna's that I don't add green beans to it! I do throw some celery in it though (just because I love it and because I usually have some that I'm going to have to throw away if I don't use it). Sometimes I eat this with Mexican Cornbread from Man in Mind, p. 290.) (We had not had this for some time. It really warmed us up, with the bitter cold winter we are having here in Southern Ontario.) (one of my favorites) (Tried [this] -- a keeper for sure.) ([This] was supper last night. I make it often.) Scroll down after clicking on this link to see: Mexican Cornbread, p. 290 ([This] is awesome too! . . . I usually cook one or another of Joanna's cornbread recipes and cut it into servings and freeze them individually. Easy to nuke a piece when you are ready for them.) Butterscotch Ambrosia Dessert, p. 233 (This is SOOOOO good! I haven't made it in awhile and needed something sweet tonight. It's only 1 starch, 1 fruit and 1/2 fat in the diabetic exchanges. WOW! You've GOT to try this! ;-) Heavenly Strawberry Pie, p. 259 (With fresh strawberries available now; I searched JoAnna's recipes & tried a new one for us. Like many others, it is excellent. If you haven't tried [this] - you are missing a good one!) Blueberry Thrill Pie, p. 258 (I really like this one, and it is only 3 points per serving.) (It is that time of year when blueberries are in season. I'm jumping up and down because I have [this] in my fridge. This is one of my all-time favorites. It is easy to make, low in points, and so refreshing on a hot summer day. Check this one out my friends. You will not be dissappointed.) (I just made [this] last night. It's wonderful! I've already had 2 pieces today - and may go back for more!) (I made this yeasterday for a small family gathering. It is excellent!) (I made this pie last night after seeing it posted here, and I must say it is one of the best pies from JoAnna that I have made. I wil be making it every year when the blueberries are fresh.) (This is my absolute favorite JoAnna pie and it is only 3 WW points.) (As you can see, we like out sweets. Joanna's pies are the best.) Luau Pork, p. 204 Chocolate Rum Pecan Pie, p.261 Grande Chicken-Rice Ole!, p. 219 (I am making [this] tonight. It was the very first HE recipe we tried back in 97, and remains a favorite to this day.) (I had [this] and it was real good!! ) (This is from the Cooking Healthy with a Man in Mind book. I bought this book and also bought a copy for my daughter, who is on the Weight Watchers Diet with her husband. She said that this recipe was a real hit with them. I tried it tonight, and we liked it too. I used leftover turkey. This would be a great recipe to have on hand around Thanksgiving time when you have a lot of leftover turkey and are tired of the traditional casseroles.) Dixieland Green Beans, p. 149 (I had [this] using green beans from the garden. This is a great green bean recipe* I much prefer fresh green beans to canned and this recipe works for me.) (Tried [this] -- another keeper.) Scroll down after clicking on this link to see: Grande Macaroni and Ham Bake, p. 212 (I had some turkey ham that I needed to use up so I went looking through JoAnna's cookbooks and came up with two very good recipes that I fixed this afternoon. [this and Heartland Macaroni And Cheese, p. 213 ]. I substituted the turkey ham for the regular fat free ham and it worked fine. . . . On this one I did some changes as I didn't have enough salsa so I added a fresh tomato, diced and less celery then called for. I also used 2% cheese slices rather then the reduced fat. Turned out great. Again I think this one could be eaten right out of the skillet; just let the cheese slices melt a few minutes before eating. I put left overs in small containers and froze for work next week.) (Our favorite all time recipe from this book is [this] . . . it is the Best! It is one of the first ones I had tried (first book), and my husband took a dish to a work potluck, and all the ladies he works with wanted the recipe!) Turkey Biscuit Stew, p. 179 He-Mans Biscuits and Gravy, p. 195 Scroll down after clicking on this link to see: Bar-B-Que Beef Strips, p. 201 (We've tried this one and it's good.) Green Bean Mushroom Casserole, p. 147 (It was very good! It is a keeper recipe.) Potato Corn Bake, p. 159 (I made this yesterday and it was great!) (I took boneless - all fat removed pork chops, dipped them in water and then in a coating mix and browned them in a non-stick pan that was sprayed with cooking spray. I them layered them on top of the potatoes when I baked them. A gourmet meal. . . . From W W food list: Pork, lean, 1 sice, 1 chop or 1/2 c. cubed or shredded 2 oz. 3 pts) Chicken Lovers' Pizza Casserole, p. 217 (I have spent my last couple of days making a menu for the week and shopping. We had [this]. My husband and daughter loved it!!! ) (This was great! Charlie had to pick out the black olives, but good flavor.) Scroll down after clicking on this link to see: Breakfast Biscuit Bake, p. 294 (I added green pepper, and diced tomato and I thought it was really good.) (Sort of a secondary [breakfast/brunch] favorite is [this]. I feel like it's a little more work . . ., but not much work/prep.) Lemon Cheesecake with Lemon Glaze, p. 251 (We both liked this--I loved it! It was fluffy and such good lemon taste. I/We went through this fast. Charlie, who always notices instant pudding, asked if there was some in it! He thought 1/2 a piece would be good, because the taste got old on him. I forgot to have him put the Cool Whip on it; he did the 2nd time and it was better. Of course, he "frosted" it instead of 1 Tablespoon!) Peanut Butter and Jelly Cheesecake, p. 256 (This was so good. Strictly a peanut butter and grape jelly taste without anything else to take away from it.) Chili Veggie Soup, p. 83 (I make this before bed and allow to cook on low in my crockpot all night.) (I've made this many of times...no matter what you change it still tastes great. I'm awful about following recipes and the first time, I used canned vegetables...no waste....used whole can of each and large kidney beans can (15 ounce). Missed the part about the crock pot too....so I cooked it on top of the stove for 30 minutes. So we had more servings due to the increased vegetables.) (Last night I did fix [this]. I was exactly in the mood for this dish and even though I have the cookbook could have paged right by so thank you again. . . . I forgot the carrots (oops) but it was wonderful and I did have my cornbread and was in seventh heaven. DH had a dinner meeting so Jeffrey and I enjoyed this tasty, hearty soup and in a bit I'm having it for my lunch. Yum!) (Today is my mother's birthday and instead of ordering Chinese or going out to eat, I suggested we take lunch to her. I have fixed a double batch of [this] which I am crazy about . . . . My Mom loves soups, is always suggesting I bring a pot when we have a gathering and I think she will love this Healthy Exchange soup today.) Creamy Vegetable Beef Soup, p. 80 Italian Chicken Spaghetti Soup, p. 79 (Made this last night & DH really liked it - he never eats soup, but he was asking me to make this again! :-) (Note - I left out the Parmesan & added a pinch of garlic & thought it was SUPER - DH even ASKED for this in his lunch today! :-) (Just had to tell ya with soup all over my face, it's as good as your Dh said! Just e-mailed it to my DD. I used ground chicken instead of chicken breasts. DH likes ground chicken in soups and recipes. It makes a lot more filling. I'm stuffed!) Quick Corn Salad, p. 109 (very good) Cabbage Patch Soup, p. 82 Meatballs in Sour Cream Onion-Mushroom Sauce, p. 199 (Just wanted to let you all know about a [recipe] that my husband and I have been enjoying repeatedly. Boy is this good!! And quick. I have meatballs made up and in the freezer so that makes this dish even quicker. . . . My mom and dad were both down and enjoyed [this] too and they aren't even trying to eat healthy. . . . thought I would point [this] out as something that definitely needs to be tryed.) Scroll down after clicking on this link to see: Reuben Roll-Ups, p. 302 (I have tried [these]. They are delicious if you like the sandwiches. They went over so well with my husband that I have made them many times since.) (I made them for lunch with a bowl of soup. They are excellent, I am not sure my family will like them but don't really care . . . . I love sauerkraut if it is mixed with something.) (The Reubens are defintely worth making and they are relatively inexpensive.) Scroll down after clicking on this link to see: Texas Jo Casserole, p. 185 (We are having a potluck at work and the theme this month is Mexican. . . . I know there are tons of good Mexican type recipes in JoAnna's book, but I would like one that you have tried and really like. . . . I don't know what facilities you have, but if you have an oven to warm things up in, you might try [this].) (a definite favorite of ours) (a favorite to freeze for lunches) ([This] is one of my favs!!) (What is the best recipe for freezing in small portions? Does anyone have a favorite to do that with? I know the books have that little snowflake by recipes that are supposed to be good frozen, but has anyone tried it? . . . When my freezer worked, I used to do it all the time. I'd freeze single servings for lunches to take to work (or hurried dinners). [One of our favorites is this.] . . . I've frozen single servings of the pies that are recommended to freeze. They also were wonderful when thawed.) (I am wanting some One Skillet Meals that I can prepare and put into Rubbermaid-like containers in the freezer, so I don't have to heat up the kitchen when it is hot this summer. We don't have air conditioning, so I don't like to do much 'cooking' when it is hot. I'm looking for dishes that are freezer-friendly, that I can pop into the microwave to re-heat. Do you have a family favorite you'd like to share with me? . . . [This is] one of our favorites.) Scroll down after clicking on this link to see: Chunky Corn-Ham Chowder, p. 89 Grandma's "Homemade" Harvest Time Soup, p. 85 (Just want to share with everyone the soup I made tonight. It's [this]. It is wonderful, had to stop after two bowls.) (I also like [this].) Ruby Rio Stroganoff, p. 183 (Like you I like to keep a variety of Joanna's meals ready to go from the freezer. It does help and makes eating a no-brainer most days. I do have some pork and pasta leftover from my last cook-off so I think I might make some more [of this].) Grande Corn and Kidney Bean Salad, p. 110 (I made [this]. It is WONDERFUL. More than enough for lunch at only 2 points per serving!) Banana Eggnog Bread Pudding with Rum Sauce, p. 280 (We love this one! . . . NOTES : I never saw a dessert disappear so fast as when I was testing this one! It could have been the nutmeg wafting from the oven, or maybe the lush sauce that topped the warm pudding. All I know is, one moment it was in the pan, and the next it was GONE! Then I saw the men standing around with smiles on their faces. . . . . The ONLY change I made was I used 1 tablespoon SPLENDA instead of the Brown Sugar Twin. I was interested in how it would taste using real RUM instead, but I didn't try it. I made this today for dessert and coffee for company, and they LOVED it! Both ladies are on diets, and loved that they could have dessert with their coffee. You made me look sooooooo good--thanks again!) (NOTE: I've used a couple of things for brown sugar substitute but the best seems to be Splenda (or your favorite white sugar substitute) and a drop or two of molasses. If you're using it as a topping and it needs to look like brown sugar, you can mix the sugar substitute and molasses with a fork until they've blended together and take on the appearance of brown sugar. If you're cooking with it (as in this recipe) just put them in separately and stir!) Citrus Cinnamon Salad, p. 138 (We LOVE [this].) Scroll down (below Cheeseburger Noodle Skillet -- different recipe) after clicking on this link to see: Fast-Food Cheeseburger Skillet, p. 193 (very good!) (I made [this] for dinner tonight and hubby loved it! I thought it was pretty good too. I added more ketchup (as a kid, the only way I'd eat mac & cheese was with ketchup). Thanks to whomever posted it! (I searched for it.) This is the next book I buy.) Tuna Almondine, p. 174 (PS Just wanted to say that [this] is the best thing ever invented to do with a can of tuna. How Joanna can take so many foods my DH dislikes (celery, rice, tuna) & turn them into a dish he LOVES seems like a miracle to me!!! :-) (This is such a good recipe! I think I will put this on next weeks menu.) Cabbage Patch Meat Loaf, p. 187 (My favorite of ALL recipes is [this]! It is making my mouth water just talking about it!) (Tonight I made [this]. We both liked it very much. I used fresh ground turkey. I had 1/2 a head of cabbage, so I chopped my own instead of buying a pkg of cabbage slaw mix. Next time I will chop it up finer. I also used refrigerated garlic in a jar. We had baked potatoes and fresh green beans with the meat loaf.) (I've had time to try out different recipes this summer, and [one] of our new favorites [is this]. I did use crushed crackers instead of breadcrumbs. And, instead of adding more ketchup in the last 15 minutes, I used a can of diced tomatoes and mild green chiles spread across the top. It was moist, tender, and delicious.) Mexicalli Pie, p. 307 (It is delicious!!!) (From JoAnna: This is the recipe that started the whole thing, that launched Healthy Exchanges. It's the first one I ever created-and when I served it to Cliff, he told me he would eat anything else I prepared, no matter how healthy, as long as it tasted this good! That's about as high a compliment a "truck-drivin' man" can give.) (Sometimes I use this as a taco salad, and add the salad stuff and sour cream. Yum) (This is the Mexicalli Pie recipe I use and really like. . . . It is one of my favorites. Joanna said it's the first one she ever created.) (I took sewinlove's advise and tried this tonight. Boy was it good. We loved it. We added a little bit of ff sour cream on top, I used FF cheese instead of reduced fat and it was great. This is a keeper for us, but dd said she liked the enchilada pie I made last week better.) (If Enchilada Pie is better, I HAVE to try it! lol I love Mexicalli Pie, though. Last time I made it, I used Chichi's salsa. Now I have this really good papaya salsa from Costco and can't wait to try it with it. I would suggest parents whose childen don't like salsa to just leave that part out and add it individually for the family members who do like it!) German Green Beans, p. 146 (I was looking for a vegetable with ingredients I had in the house and made [this]. We both like it, too. A different way with canned green beans.) (Dinner tonite was one huge major hit! I made Grande Meatloaf with Potato Stuffing from Kids, p. 191, and [this]. . . . Both my husband and my son had two helpings of each of the meatloaf and the green beans and hubby was wanting even MORE. I have to admit both were absolutely delicious. I'll be making both dishes many times I am sure.) (Another good green bean one is [this]. We make those ALL the time.) (Yummm. I make them at least twice a week. I'd make them every night if I thought my husband wouldn't start complaining. They are so easy to make and taste so good.) (one of our very favorite recipes that we tried in May) (Hi! Thought I'd remind everyone about this recipe . . . . It's going to be part of my menu for Thanksgiving.) (A great recommendation Kathy. [These] are one of my family's favorites and I make them frequently. They are quick, easy and soooo good.) (Oh! And don't forget [these]. Those are incredibly good. Hubby absolutely loves them! . . . NOTE: I didn't use the almonds and it was still good. I would think adding the nuts would make it even better!) (They are a fav around here.) (I tried [this] this week. I used 1/2 the vinegar and sweetener (used 1 tbsp. bean juice also), and we really enjoyed them. I will definitely make them again.) (My favorite side dish is [this].) Carrot-Cabbage Casserole, p. 152 (I made this recipe last night . . . . We both liked it very much. This was the first time I have purchased and used Cr. of Celery soup. The recipe did take a little longer to make than eat but it was worth it. I've been searching recipes with different ways to fix vegetables. There are quite a few in this book to try.) (***** This was excellent, and I have to tell you that it was even better the next day. We had it for supper one day and the rest for lunch.) Hamburger-Potato Casserole, p. 182 (Definitely a keeper! [This] was very easy and tasted great. My son said that I could fix it every night. We will look forward to having [this] again.) ([This] is one I make often, as my son loves it.) Cherry Crumb Pie, p. 263 (Unfortunately this pie was too good, I couldn't resist a second piece! :-) (I like . . . .) JO's Trail Mix, p. 301 (We're getting together with a bunch of friends tonight and we're all supposed to bring munchie or finger food type foods. Oh the possibilities. Here's what I decided to bring. . . . I mixed up a double batch of [this] to have something to munch on all night instead of chips. . . . Then I got the recipe for Banana Split Cheesecake from Strong Bones, p. 280. . . . Well everyone loved both of the things that I brought . . . . The double batch of the trail mix disappeared even before the chips and other fatty goodies!) (This is delicious by the way. I've even substituted different cereals (in the same quantities, trying to keep wheat or corn or whatever in mind) and took it to a party and everyone gobbled it up.) Hawaiian Banana Split Meringue Pie, p. 264 Layered Chicken Dinner, p. 216 (my favorite HE recipe [this] -- I've been putting it in a crockpot instead of baking it as in the directions. It comes out great.) Easy Marinated Mushrooms, p. 154 (These are really good.) (My family really likes [this].) (They are delicious. I made them using twice as many mushrooms but leaving everything else the same. My husband devoured them. I have just enough left for my lunch.) Buffalo Chicken Macaroni Salad, p. 98 (I've been making HE salads this week because it's too darned hot to cook. [Here is a] new favorite (my favorites list is getting very long!). I made [this] to take to a pot luck on Sunday. I made a double batch and it was gone in minutes. A lot of people asked me for the recipe. Nobody could believe it was "diet food".) (tastes just like chicken wings!) (And we just discovered our new favorite - [this].) (***** . . . I found a recipe for Lite Blue Cheese Dressing, and used it. It had a bit more calories, so used the MasterCook Nutritional Information. This salad is so good, we will have again very soon.) (This was great! It's always sounded good and I can't believe I took so long to make it. My dad, who doesn't care for chicken, even took seconds! I loved the flavors involved--all like buffalo wings.) (I think it's time to make it again!) Coney Island Pasta Casserole, p. 198 (It's our keeper. . .) (I made [this] for dinner tonight. It is very tasty and quick and easy to make. I used shells instead of rotini and added a can of mushrooms. . . . My husband and son both enjoyed it . . . .) (Last night for dinner I made [this]. I had my doubts at first when I started putting all the ingredients together, because of the frankfurters, but Lord and behold was this delicious. I just couldn't believe how good it was and very tasty. My husband was OK, with it; he doesn't like hot dogs in any kind of meal, unless it's on a bun with mustard and sauerkraut. He ate it, but told me next time I make it, to leave it out. Next time I make it, I will put in some fresh Polish Kielbasa, which our Publix makes. I on the other hand loved it. It is so quick and easy to put together.) (This is one of my favorites. I've passed it along to some of my co-workers and they like it too. Fast and easy, just right for my lifestyle.) (My favorite hot dog recipe is [this].) Ranch Pasta-Carrot Salad, p. 118 (***** We both enjoyed this salad. The Fat Free Ranch Dressing we used was a home-made one made with fresh herbs and fat-free buttermilk.) (This is another super salad. We did not have Fat Free Ranch Dressing and used Fat Free Blue Cheese Dressing. We loved it! ) Scroll down after clicking on this link to see: Oven-Fried Fish, p. 170 (I use [this recipe]. It's great! . . . Hope you enjoy as much as my DH and I do.) (We like this recipe also.) Rice Maple Cream, p. 234 THANK you all for your ideas. My breakfast was a major hit this morning . . . [and from Man in Mind, I made:] Breakfast Ham and Eggs Pizza, p. 295 (To see all she made, click: Kim's Menu) EVERY SINGLE BITE was gobbled up!!! I couldn't believe it. Compliments were flying everywhere, and I must say I was rather impressed myself. JoAnna!!! Thank you so much for "being" there this weekend with me. Between this fantastic breakfast and the Greek Feta Salad, Strong Bones, p. 122 (OK this is my new fav salad. From now on though I'm leaving out those disgusting olives cause I really can NOT stand them at all. Hubby loves them, so I'll just put a few on his plate and he can have fun. . . . Note: I would definitely take two portions of this and add 1/2 cup of diced chicken to it and make myself a 6 point delicious and filling lunch.) that I took to the potluck barbeque last night, this was one fantastic food weekend. Thanks again everyone for your help and ideas. It sure helped! Italian Pea Salad, p. 105 (I really like) (I really like this salad and the peanuts make it extra good. If you like peas, you'll really like it, and if not, it might change your mind that you do. Yes, I would recommend this salad.) Pizza Skillet, p. 191 (Was looking through some of the archives and noticed that in 2000 there were some postings of this recipe. It is one of my favorites. About the only change I make in it is I sometimes use whole wheat small tiny shells for the pasta -- I love the flavor of the whole wheat. Other times I like to use the bowtie shape pasta for a change of pace.) ([This] is super wonderful and very delicious. I couldn't believe how tasty and filling it was. This dish is quick and easy to make and doesn't take too long to make, so if you are in a rush, this one is very quick to put together in no time flat. My hubby just went nuts over this dish and said to put it on his list of favorites. Boy, is " HIS LIST OF FAVORITES GROWING" at the rate it's going, I am going to need a binder for them. LOL. There is so much you can do with this dish, just by substituting different ingredients, all you have to do is experiment with your favorites and you will have a wonderful Italian dish that you will love to make and also EAT!. Hubby doesn't like olives, so I left them out. We love garlic, so I added 2 cloves of minced garlic with the meat, I also used the Italian seasonings instead of the pizza seasoning. I used rotini instead of elbow macaroni. The next time I make it, I will substitute Italian turkey sausage for the ground beef. I served this dish with a tomato and fresh mozzarella, sliced red onion, with a balsamic vinegar and extra virgina olive oil, which was delicious. I know if you try this dish, you will love it as much as we did. Just let your imagination take over and experiment with different ingredients and you will have a wonderful Italian dish. Just remember stay with low fat ingredients and you will be OK.) (Last night I made [this] that we have always loved. One thing I learned from the diabetic educator was to try using whole wheat pasta. There is more fiber . . . making less carbs per serving. I had to refigure the counts for the recipe, but it was delicious. I used the shell shape. I also learned from Richard Simmons program that was presented here to add the grated low fat cheese after the dish is cooked. I took the skillet off the fire, sprinkled over the cheese, covered the skillet and waited about 5 minutes or so until the cheese had melted and then stirred it all together. I had made this dish many times and always stirred the cheese in when Joanna said and simmered for about 10 minutes covered, and it made it a little stringy. By putting the cheese in, off the fire and allowing it to melt and then stirring in, it made the dish seem very smooth and velvety. I liked the difference.) Scroll down after clicking on this link to see: Orange-Pecan Tapioca Salad, p. 136 (I have a note on it that I had made in once, I usually put the year, but not this time. I had marked it GREAT!) Heavenly Cherry Salad, p. 124 (I made this last week & my first reaction was - it was too tart. However, after it sat overnight - it was better. Just finished the last serving today for lunch & the last was the best. Guess the flavors needed to blend & it also got a little firmer. I will change my mind after my 1st taste & will put this on my "make again" list.) (I've had time to try out different recipes this summer, and [one] of our new favorites [is this].) Party Turky Tetrazzini, p. 308 (I have been meaning to try this recipe since I first heard about it, but for some reason I just never got around to making it. Well, let me tell ya, I'll be making this one often! It is so good. I used whole wheat spaghetti and threw in a can of mushrooms, and let me tell ya . . . I was smacking my lips and ohhhhing and ahhhhing all over the place. If you haven't tried this one, please do. It is quick, easy and tastes great!) (5*) ([This] is great, too. (I've made it with turkey, ham and tuna and all were wonderful!!). . . . gosh I just love Joanna's recipes, they make me look like a good cook!!!! hehe) (What is your all-time favorite JoAnna main dish recipe? [This is one] of my favorites. . . . It was the Tetrazzini that led me to JoAnna's HE website and started me buying her books. A variation of that recipe was published in Cooking Light, and the article included the HE website address.) Spanish Green Beans, p. 148 (Well I finally went shopping and bought the frozen green beans. Boy oh boy am I ever glad I did!!! :) [This] a great recipe. I didn't even measure my green beans, just dumped the whole bag in, not small bag but not biggest bag . . . I think it was called family size bag. I oven roasted some chicken legs with chicken seasoning on them, had [this] and a baked sweet potato with Splenda. I'm full and my plate was beautiful! I love pretty things on my plate and the colors were so pretty. This recipe is so easy and so yummy, it's a keeper and a repeater! Give it a try! As you can tell I get pretty excited when I find something I can cook and tastes great. I always have a hard time with side dishes.) (I have a note by this recipe to add extra garlic and some salt.) (Tried [these] -- once again you have found a winner.) (Christmas was a time for experimenting for me, I made [this] (YUMMERS!!!!) . . . I really loved the green beans (okay, so I'm a pushover for a green bean, what can I say???)) Easy Salisbury Steak, p. 197 (One of our favorite recipes from Man In Mind is [this]. Hubby asks for it often. I have modified it to my own needs. For instance the book says to bake it after putting it all together. I just cook up the burgers, make my own gravy, add the burgers to the gravy and heat them up again to serving temperature. You'll will see what I mean when you get the book.) (Good morning! Just had to tell you, JoAnna's recipes are getting more raves at my house! Last night we had [this] and Sparkling Chocolate Pudding Treats from Dessert Every Night, p. 85. With it I served herb & butter (Great Value brand from Walmart) mashed potatoes and frozen peas & carrots. I doubled the recipe for the meat as we are a family of 5, two of them being hungry men who each weigh less than 150#, so they eat as much as they want. They ate their fill and Tony (son) took the one leftover piece of meat to his room for a bedtime snack!) Peanut Butter Dream Pudding, p. 235 (one of our favorite recipes from this book) (Really good! Just the right mix of chocolate, peanut butter, banana, and graham crackers.) Here are [some of] our favorites from Man in Mind: [that hadn't been previously mentioned] Tommy's Cheeseburger Turnovers, p. 194 Italian Grilled Chicken, p. 221 Healthy JO's, p. 306 (Another classic recipe. I had made them before and loved them. I wanted Barry to try them, and he had 3 sandwiches!!) (I also made [this] - everyone loved it.) (I like to make [these] and put one serving each in individual baggies. I then freeze them and grab one for lunch with a bun or baked potato. Very handy. I like having a warm lunch in the winter.) Apple Dessert Pizza, p. 241 Apple-Walnut Pancakes, p. 286 Ham and Corn Scallop, p. 209 Better Than Candy Pie, p. 262 (As you can see, we like out sweets. Joanna's pies are the best.) (I like . . . .) Western Macaroni Salad, p. 117 ([This] is a hit at my house. My son in law thinks it is the best!) Fruit Cloud Salad, p. 126 Mustard Coleslaw, p. 305 Potluck Sauerkraut Salad, p. 102 Creamy Turkey Skillet, p. 180 (This is also good served over toast rather than noodles, great for lunch.) (Today I made [this]. And is it good!!) (Just wanted to let everyone know that [this] is delicious.) "Pot Roast" Stroganoff over Noodles, p. 196 Hawaiian Chocolate Banana Dessert, p. 238 Swiss Steak Ultra, p. 203 (Hubby loved this one.) Basic Waldorf Salad, p. 127 (When I served this at lunch with an entree, Wendell said "Oh Waldorf Salad. I think I'll just eat that." Probably the last one he ever had was when his mother made it, as she made it quite often. I removed my one serving and he ate the rest of it for his lunch! He loved it! Changes I made is that I don't like or have fat-free mayonnaise, so I used one fourth cup, not one half cup, and I used Kraft Light Mayonnaise. Still very creamy with half the mayonnaise. I also used 4 small gala apples. I don't like red delicious apples. This is soooooooo good.) Tuna Tetrazzini, p. 172 (My husband loves Tuna Noodle casserole! I don't know which one to try first - what is your favorite . . . ? [this]) (I also made [this] - everyone loved it.) Grandpa's Old-Time Spice Cake, p. 272 We had a yummy day around here! [We had . . .] Texas Lasagna, p. 184 (I had some leftover pork roast the other night and made [this], and it was delicious. You are allowed a huge portion, and it is very good eating.) (YUMMY) Scroll down after clicking on this link to see: Tomato Rice Fagioli Soup, p. 70 They were both wonderful! I had planned to make the . . . Scroll down after clicking on this link to see: Cozumel Cloud Pudding, p. 236 but we were too full for dessert! Layered BLT Salad, p. 115 (It was the first time we had this and will not be last time. We both enjoyed it, and it will also make a good potluck salad.) Mom's Apple Pie, p. 257 (JoAnna asked that we list what our favorite pie is. . . . Our family's all time favorite and mine is [this]. Just finished the last piece tonight for supper. I make it often, and when my college gals come home, they ask for it.) (JoAnna asked that we list what our favorite pie is. . . . My family likes many of JoAnna's pies. Tonight I made [this]. It was sort of a last minute thought, but we really like this recipe. It is YUMMY.) (Could anyone please let me know what their favorite apple pie or apple dessert is . . . . Our family favorite is [this]. Yummy!) Hawaiian Pineapple Dew Cheesecake, p. 254 (JoAnna asked that we list what our favorite pie is. . . . Riviera Strawberry Pie (Heart Smart, p. 219) is my favorite. They are all so good that it was really hard to choose a favorite. Chunky Chocolate Cream Pie (Arthritis, p. 234) and [this] are close seconds.) Scroll down after clicking on this link to see: Corn and Onion au Gratin, p. 155 (I made [this] for dinner tonight and we just LOVED it!! I made it with pork chops and brown rice. Corn dishes are always like comfort food to me, and both DH and I love onions, so this was perfect and very pretty, too.) (I made [this] last night and it was very good. I did not add any pimento as I never buy it. If I had had some roasted red peppers, I probably would have cut up one and used that for some color.) (We liked it also! I did use some pimiento for the color, but I like your idea of a little red pepper instead -- I'm going to write that in my book to remind me for next time, because I'll definitely make this one again.) (Made [this] recipe and boy was it good . . . . I didn't add the pimento either. . . think the next time I make this, will add some shrimp and crabmeat.) Hawaiian Banana Butterscotch Pie, p. 260 (I made [this]. Wow, another favorite. Try it; you won't be sorry.) We also really like . . . Ham Lasagna Toss, p.208 Italian Chicken Noodle Skillet, p. 218 Chuck Wagon Franks and Beans, p. 223 (All of these have good sized portions and are really good!) Italian Green Bean Salad, p. 103 (A summer staple at our house to go with barbequed chicken breasts from the grill is [this]. I thought this recipe sounded strange when I first read it, but my sister made it when we visited her house, and now we're hooked! Incidently, she used French-cut green beans instead of the cut ones the recipe calls for, and we've made it that way ever since. Man in Mind is one of my favorite cookbooks!) Blueberry Dew Pancakes, p. 285 (These were delish! I made them this morning. However, I did count it as a full fruit and full starch. Instead of a 1/2 a fruit, and a whole starch. BUT, mm very very filling. And satisfying. For a few extra calories (not many), I added 2 tablespoons mini chocolate chips to the batter. (pecan chocolate chip pancakes are my favorite) And it made it absolutely delish! Next time I am adding a little pecans, too, and just adding a fat window to it.) Cherry Chocolate Parfait, p. 232 (There are a few recipes that I find myself making over and over again. In fact I've pretty much memorized them. . . . one is [this].) Bacon Crunch Deviled Eggs, p. 296
