Kids in Mind
Macaroni and Cheese with Frankfurters, p. 209 (My family likes Mac and Cheese with Franks. I don't like the taste of the fat free franks so if I made this again I might use a low fat frank instead but the family liked it a lot.) (My family gives it a "thumbs up"! ) (Re: Glad OvenWare: Well, I have used some of the freezer dinners. I re-cooked Mac & Cheese w/ Hotdogs (Kids In Mind) and Mexicali Pie (Heathy Exchanges Cookbook). Both reheated in the GladWare VERY well. I have yet to re-use, because I am storing the left overs, that is cool that I don't have to come up with little containers right away, I can just store in the pan and still have my glassware available if I get the urge for something else. Way cool.) (I knew when I was reading the recipe for this, that I was gonna love it and I was right! . . . LOL . . . It is really great and has become a fast favorite.) Scroll down after clicking on this link to see: Green Bean Pie, p. 131 (Well, that green bean pie is a definite 10! It makes 6 large servings and would definitely make it again and even for company. We had two slices for dinner and I have frozen the other 4. I served it with some slices of turkey breast and a lettuce salad. I put FF Ranch dressing and salsa on the salad. Try it, really good.) (We thought it was just wonderful. I am going to try it again soon and use asparagus. It gets an A+.) (I tried [a new recipe] this week which [was] very good, and I will be making again.) (I have made [this] recipe, and it is one of my favorites.) Almost Grown-Up Punch, p. 281 Triple-Treat Chocolate Poke Cake, p. 249 Dad's Favorite Coleslaw, p. 302 (I'm already thinking about the 4th of July and looking for a good Healthy Exchanges coleslaw recipe. JoAnna has lots of them and it's difficult to choose. I thought everyone here might tell their favorite. . . . I like [this].) Scroll down after clicking on this link to see: Tuna Sandwich Melts, p. 116 (really like [this] best) (Dinner tonight will be [this] which I love . . . .) (This isn't tuna salad but they are my favorite tuna sandwich, more of a melt. You can get more like 5-6 sandwiches, quite full as those reduced calorie buns are a bit smaller I think. Refigure the calories based on the # of sandwiches you end up with. You can prepare them and then reheat the leftover ones or DH carries to lunch and zaps 'em (after removing the foil, I hope) in the microwave. Real good!) (very good for lunch) (These were great! I loved how the bun was crunchy!) Breakfast Drop Scones, p. 85 (They are awesome!) Breakfast Tarts, p. 90 (I made these for breakfast this morning; THEY WERE DELICIOUS! I served with a glass of milk and fruit. YUMMY) (I used this for my son's high school graduation brunch. See Menu) (I've just started using Healthy Exchanges recipes, so most of you may be familiar with these, but I wasn't, so it might not hurt to remind people. I tried some new recipes this weekend. They were outstanding; my family loved them. [One of them] was [this one]. I had no leftovers. They were simple to make, and I know that I can make more than one and freeze them.) Tuna and Swiss Cheese Buns, p. 117 Scroll down after clicking on this link to see: Baby Ruthy Delites, p. 232 (Ok, Gals. I made this yummy dessert and its is delicious . . . definitly a keeper for me amd my family. I would even bring this to a potluck dinner. . . . It is that good.) (Here my latest experiment with desserts. This is awesome. . . . Thanks, JoAnna.) (These were excellent! Charlie didn't even begin to like them and I'm not sure why. He said it wasn't the pudding being instant--usually a turnoff for him. I'm not sure if they are a keeper for me. They make lots, but I might make them for a group. I might do a pie before I'd do these again for me.) (BTW, I questioned the exchanges and JoAnna said the Diabetic Exchanges on this should be 1 1/2 St, 1 fat.) (It's a bar recipe, not a cookie recipe, but they are quite good!) Cowpoke Western Scramble, p. 315 Peanut Butter and Jelly French Toast, p. 87 Tom's Easy Cheesy Skillet, p. 189 (Quick and sooo easy) (This was great and so easy. Great tastes together.) (This was excellent.) Baked Gringo Steaks, p. 199 (I made [this] for dinner last night and they were pretty good. If I make them again I will add some Taco Seasoning or some other type of seasoning. Since I used mild salsa, they didn't have much "kick" to them.) (My youngest daughter absolutely loved [this]. We are going to have it again next week.) Scroll down after clicking on this link to see: Magnificent Baked Chicken, p. 299 Crunchy Grande Baked Chicken (Out of this world) (The Colonial has nothing on JoAnna.) (I fixed it for the first time tonight and both of my guys loved it.) (I did fix [this] last week. My son never leaves me leftovers when we have it.) (I tried this for supper last night and was a success with everyone. The crust is very crunchy and taste great. This is definitely a keeper and a repeater.) (This was great! I loved the crunch of the coating and a little tang from the mayo/Dijon. Charlie really loved it too. He doesn't like mayo, so I wasn't sure he would say this was even OK.) Grandpa's Apple Maple Crumb Pie, p. 311 Pizza Popover Pie, p. 195 Friday Night's Supper Menu (This is my favorite pizza recipe of Jo's!) (You have got to try this one, it is wonderful!) (It was excellent. A few changes I made: I added fresh spinach and mushrooms to the ingredients. I would also recommend making it in a square pan rather than pie plate as it cooked over (probably due to extra ingredients). ) ([This]was wonderful. I even managed to freeze 2 portions. I used the Italian seasoning and it worked fine. Next time I will add lots of garlic. (I love it) I also might add some of my leftover Papa Johns seasoning that comes with the thin crust pizza.) (I too love [this]. I add mushrooms, garlic powder and fresh spinach.) (One of our favorite main courses is [this]. I usually replace the tomato sauce and pizza seasoning with the new pizza flavored tomato sauce. The recipe calls for lots of ingredients, and you can add just about anything that goes with pizzas.) (Oooh I loved this one, and it came out so pretty with a nice smooth browned crust on top. Will make this one again and again!) (I am wanting some One Skillet Meals that I can prepare and put into Rubbermaid-like containers in the freezer, so I don't have to heat up the kitchen when it is hot this summer. We don't have air conditioning, so I don't like to do much 'cooking' when it is hot. I'm looking for dishes that are freezer-friendly, that I can pop into the microwave to re-heat. Do you have a family favorite you'd like to share with me? . . . One of my favorites is [this]. . . . it's great and freezes.) ([This] has always been a hit around here as another suggestion.) Little League Meat and Potatoes, p. 285 (A couple of years ago, there was a lady . . . who posted a lot on these boards, and her all time favorite was Little League Meat & Potatoes. I mean, of ALL the recipes she had tried, this was her favorite. She made it time and time again.) (We had [this], and it was a hit!) Mom's Tuna Salad, p. 157 Aloha "Steaks" with Island Sauce, p. 198 (got a 5* from hubby) (Have any of you made [these]? They are so good. Even 3 1/2 year old grandson would eat some with more catsup on them. He is Mr. Picky Eater, who only will eat 1/2 dozen things. The recipe is easy.) Scroll down after clicking on this link to see: Lazy-Day Lasagna, p. 193 (yum yum) (My absolute all time favorite is [this].) (WOW! I just made [this] couple days ago for my fam5 AND my parents, which includes gourmet DAD who thinks anything simple is for simpletons...Guess what? They gobbled it all up and everyone said they wanted it again! It even has meat in it! I had to double it for the amt of people served...and I used shredded mozz instead of sliced FF and figured in the extra, still easily within my goals, and it makes me even happier that the family wants it again!!! It's super simple too!) (I made [this]. Excellent!) (I've just started using Healthy Exchanges recipes, so most of you may be familiar with these, but I wasn't, so it might not hurt to remind people. I tried some new recipes this weekend. They were outstanding; my family loved them. [One of them] was [this one]. I had no leftovers. They were simple to make, and I know that I can make more than one and freeze them.) Tuna Krispie Bake, p. 176 (We LOVE [this]. We have it at least once every 2 weeks.) Scrumptious White Chocolate Cheesecake, p. 247 (Oh my gosh! It is good. So creamy and dreamy.) Magical Kingdom Fluffy Fruit Dip, p. 276 (Great addition or pick up to fruit. I used it with all kinds of fruit. The coconut does something "magical" to it.) Baked BBQ Pork Tenders, p. 203 (This was really good for both of us.) Scroll down after clicking on this link to see: Jiffy Scalloped Potatoes, p. 298 (I made this today, yummy! I used cream of chicken soup though instead of celery. I also added a little garlic powder. It tasted just like my dad's! I love it! It will go into my regular rotation of menus.) (This one's a hit with my non-dieting family! It's easy, takes few items and my whole family loves it . . . . I have to double it (recipe says an 8x8 pan serves 8, but please. That's 8 PEOPLE WHO ARE COUNTING EVERYTHING THEY EAT, not my ravenous teens who would eat the 8x8 between them without even looking up). It's okay, I just double it and measure MY portion accordingly. We had it the other night with the . . . Scroll down after clicking on this link to see: Italian Glazed Chicken, p. 180 (was a winner with the whole family!) (. . . they LOVED it! And it's even simpler!!! I love finding recipes that can be thrown together in seconds and can bake while I make a salad. It has 3 ingredients: B/S chk. breast, ketchup and FF Italian dressing [and pepper]. Just bake 30 min and watch them gobble it up! I told them that it's so simple, they can make it themselves whenver they want . . . . And that's when I saw a faraway look in their eyes I've never seen before. Hmmm, maybe thinking outside the bubble . . . . Ha! Anyway, a tasty, quick hit for my picky ones. . . . I'm a happy girl!) Home Run Chocolate Birthday Cake, p. 286 (I use Kraft FF. I am not willing to use regular mayo with as much fat as eating Crisco out of the can. Mayonnaise is not where I want to use my fat grams. I'd rather have dessert. I baked [this] yesterday. A nicely portioned piece has 187 calories and 3 gm of fat. That is 2 grams less than a T. of lite mayo and was much yummier to me! This recipe contains Kraft FF Mayo by the way. I think that if you will use the fat free you will adjust to the taste and the savings is really worth it if you prepare a lot of cole slaw and other dishes with a lot of mayo.) Scroll down after clicking on this link to see: Root Beer Float Pudding, p. 220 (Last week I made [this]. This tasted just like a root beer float. I will be fixing this again. Since this was so good I thought I would try it with diet black cherry soda. This turned out very good.) Cabbage Apple Salad, p. 149 (Please add [this to Favorites List]. The peanuts, peanut butter, and maple syrup make this a 'different' slaw. My husband loved it. I will fix it on a limited basis as it has 140 calories and 7 gms of fat, kinda stiff for a slaw.) Peanut Butter Cup Pie, p. 293 (Yummy, Yummy, Yummy.) (yummy!) (My absolute favorite from this book is [this]. My kids and husband love it, too, and we are not big dessert eaters.) (Have to take a dessert to a party this week. What pie is your very favorite that you make alot and everyone in your family/friends love? Since there are so many I am having a hard time zeroing into one. Thanks a million for your time to answer this question. . . . [this one] You can't go wrong with chocolate & peanut butter!!) (Hubby adored this one as did his assistant. He took some to work, and she said I was a gourmet cook. It tastes sinful! It's even better after it sits in the fridge for awhile, if you can wait that long.) (JoAnna asked that we list what our favorite pie is. . . . [this one]) Green Beans au Gratin, p. 130 (uses minced onions (I've used fresh instead or with) and a corn flake topping which I have varied with other cereals on hand. My son is a huge green bean casserole fan, almost like Cliff only Jeffrey likes Broccoli.) (My 19 month old toddler and my teenager both enjoy the recipes in this book - some of the recipes they have both eaten without complaint (no mean trick :-) - Hope this helps!!! I've tried about 20 recipes in this book, I have liked them all, and usually at least one other member of the family liked each of them, but my family is SO picky these are the only ones EVERYONE has has liked so far!! :-) And this is still SOOOOOOO much better than other cookbooks, with most cookbooks before I discovered Joanna, I was lucky to find one or two recipes per book that everyone would eat!!) BLT Salad, p. 163 (This is the second time we had this. We had it in May. I found in at the KWQC site online (03/17/1998). This salad is great.) (I adjusted the recipe for 2, and it is super. We had this a lot last summer.) (This is a repeat, and we have it a least once a week -- easy to make and delicious to boot.) Scroll down after clicking on this link to see: Olé Taco Layered Salad, p. 164 (This is good on a hot summer night for dinner.) (I've been making HE salads this week because it's too darned hot to cook. [Here is a] new favorite (my favorites list is getting very long!). . . . Last night I made [this]. Oh my goodness . . . it's so good. It made up my mind as to what I would take for a dish to pass at the barbecue tonight. I'm sure it will be a big hit, and I know it's something I'll be making frequently for my family.) Cheesy Chicken Pot Biscuit Cups, p. 181 (my son's favorite) (We both really liked this.) (I made [this] last night. My kids (and hubby) loved it! I wasn't sure how they would do with these, but my oldest told me I have to make them again! . . . I served these with French-cut green beans, and rice made with chicken broth, oregano, and basil. Yummy!) Idaho Hot Dog Bake, p. 210 (It's on the menu tonight. Today is one of those hurry, hurry hurry days. At least until 6:30 when dh will be off to work well fed.) Bacon Cheeseburger Patties, p. 305 (. . . just this week we've had [this] (which my kids LOVE) . . . these freeze quite well, too.) Pronto Pizza, p. 173 (I have very picky kids and we have had a real good turn out with the recipes in [this] book. My 8 year old son asks for [this] all the time and both will actually clean their plates.) (one of our favorites too!) (very good) Cinnamon Crisps, p. 257 (were great and easy to make after school) Chicken Parmesan Noodle Bake, p. 182 (I used Sweet n Low and it's a bit too sweet, otherwise fantastic!) (Last night for supper we had [this]. . . . OH BOY WAS THAT GOOOOOOOD!!!!!) (This was very tasty.) (Excellent! It smells great, tastes great! Charlie didn't have to pick around any ingredients. Perfect blend of seasonings with a little sweetness.) Rio Grande Rice, p. 169 (a winner -- This was my first HE cookbook and the kids fell in love with most of the recipes!) All American Pancakes, p. 80 Country Chicken and Biscuits, p. 183 (My kids realy like this and so did my husband. They ate this up in no time flat.) (This was a big hit at our house.) Chicken Pot Pie Chowder, p. 99 (Family loved [this]. Only complaint I had was from my almost 9 year old daughter -- that was it had too many peas. "If it did not have so many peas in it it would be perfect, but it tastes realy good any ways, Mommy." So as you can see even my green bean eater liked it.) Tommy's Chili, p. 108 Cream of Chicken Corn Chowder, p. 101 (a great chowder . . . I served this with a salad. Yummy!!!) Pineapple Upside-Down French Toast, p. 88 (I tried a new to me recipe from the Kids book which was very good. It is [this]. It's a nice Sat. breakfast when you have a little more time. . . . I also used lite raisin bread for the french toast and I think it made it extra special.) Ambrosia Pudding, p. 224 (This [was] not on the Favorites and needs to be. My husband went crazy over it. The recipe makes 4 so the extra (3 of us) went in an empty [Blue Bunny yogurt] container in his lunch. He brought the container back for a "refill".) (***** I am a person that really is not a dessert fan, but Dennis is, so we try to have a couple a week. Now I look forward to mousse, Cheesecake Pudding (Dessert Every Night!, p. 87), and now [this].) (We had tried this several months ago and loved it, still love it!) (We had not made this in a while and had forgotten how great this is.) Scroll down after clicking on this link to see: Oven-Baked Turkey Hash, p. 184 (This is a good 'potato lover's dish'. Also large helping if you're hungry. Not as good as the Chicken Broccoli Corn Casserole [Cooking Healthy Across America, p. 292] though.) Frankfurter Noodle Soup, p. 104 (Made this for lunch today. My son and my husband just LOVE this. It's so easy to whip up too.) Company's Coming Tetrazzini, p. 318 (I made this for dinner tonight! It was DELICIOUS! I will definitely be making this often!) Taco Burgers, p. 121 Scroll down after clicking on this link to see: Cheese-Corn Griddle Cakes, p. 81 Quick Pork Parmigiana, p. 204 (Fixed [this] last night, very quick and easy and good! Hubby ate two portions and really liked it.) (wonderful served over wheat spaghetti) Scroll down after clicking on this link to see: Grande Meatloaf with Potato Stuffing, p. 191 (Dinner tonite was one huge major hit! I made [this] and German Green Beans from Man in Mind, p. 146. . . . Both my husband and my son had two helpings of each of the meatloaf and the green beans and hubby was wanting even MORE. I have to admit both were absolutely delicious. I'll be making both dishes many times I am sure.) (NOTE: I used the Texas muffin pans instead of a loaf pan. Just did the same thing but used 6 muffin wells instead. The baking time was cut in half and then each person had their own little meat ball muffin. Worked great. These are DELICIOUS.) (That was soooooooo good. Got total rave reviews around here. Had to hold my son and hubby back at two portions. Today there was one portion left. Hubby says: Arm wrestle ya for it. Geesh - take it. Brat did too. LOL) (Give [this] a try. It's got mashed potato stuffed into the middle. I make it in jumbo muffin tins and each person gets their own. It's delicious and everyone cheers when it arrives on the table.) (one of our very favorite recipes that we tried in May) (Recently I found a discussion about making one of JoAnna's meatloaf recipes as individual (large) meatballs. I think the recipe called for a mashed potato stuffing (sort of the reverse of a South American recipe) but I can't find it again. . . . I believe the recipe you're asking about is [this]. This is one of my husband's favorites so we have it quite often. I'm curious to know how you make it into meatballs. . . . This one is definitely a fav around here, too. I make them in the Texas muffin tins. Kids love them that way. And I know what a portion is that way, too!) Carrot Stuffing Casserole, p. 127 Comforting Beans and Carrots, p. 128 Pretty-in-Pink Birthday Cake, p. 279 (I made [this] several weeks ago and my family liked it. Someone on the board mentioned that they added cocoa powder to the crust and peppermint extract to a chocolate pudding layer to come up with a variation of this cake. I haven't tried it yet, but thought we would like it.) ([This] is delicious -- we are having some tonight.) Classic Picnic Potato Salad, p. 304 (Our favorite [potato salad] is . . . [this]. It's GREAT!!!!!!) Italian Braised Steak, p. 200 (Last night's dinner was very enjoyable, so I thought I would share with everyone. We had [this] for the main dish. This was such an easy way to add flavor to round steaks. DH doesn't usually like tomato flavor with his steak but he enjoyed this. For dessert I made Margarita Pretzel Salad Dessert (p. 280, Dessert Every Night).) Grandma Jo's Lettuce-Tomato Salad, p. 154 (***** This was a nice plain salad, one not too fancy, and both Dennis and I enjoyed it with a bowl of Old Time Chicken Noodle Soup (Soup's On! Cookbooklet, p. 28) that we had left over from the day before.) (Only changes we made was adding some sliced fresh mushrooms. This is a great salad to begin a meal.) (What a great salad -- no points. We have this salad almost every day either for lunch or dinner and sometimes have it for a snack!) (This has become one of our salad standbys.) Quick-n-Easy Sticky Rolls, p. 86 (This morning I made [these]. They are very good. These will be great for a light breakfast with a cup of coffee. The recipe makes 6 servings at 3 points each.) Ham Breakfast Casserole, p. 79 (Very good. I did add a little black pepper.) Minestrone in Minutes, p. 95 (This was very good. I have enjoyed all of JoAnna's versions of Minestrone and make the one from Joyful Table (p. 89 -- Maxi Minestrone) the most. I did use chicken broth instead of beef in this one.) Meatball Soup, p. 107 (Very good, even picky Dexter liked this one.) Josh's Potato Ham Bake, p. 323 (. . . just this week we've had [this] . . . [it freezes] quite well, too.) Salmon Noodle Bake, p. 178 (very good, fast and easy meal) Scrambled Egg Hash, p. 77 (Very good and easy. Not out of the ordinary, so don't know if I'd do for company, but maybe.) Rocky Road Bars, p. 262 Chocolate Fudge Sodas, p. 271 Creamy Franks and Rice, p. 213 Creamy Scrambled Eggs with Franks, p. 78
