July 2003 newsletter
- We have had these twice already this month!!
- Ultra Easy Skillet Beef and Noodles, p. 4
(Oh, WOW! Excellent! This was SO good and SO easy. If I had to pick one recipe
to live on for the rest of my life, this would be one of the candidates.)
(Here's a recipe for Dry Onion Soup Mix, if you happen to run out of it, that is a
combination of several recipes that I found on the web:
4 beef bouillon cubes or 4 tsp. instant beef bouillon
1 tsp. onion powder
8 tsp. (2 T. 2 tsp.) dried minced onion flakes
1/4 tsp. Bon Apetit or celery salt
Use with 4 cups water for soup or use as 1 pkt. dry onion soup mix.)
(This is just as it says ULTRA EASY!!! AND DELICIOUS.)
(This is the easiest dish and not a lot of mixing dishes, etc. Open a packet, open a can.
That's about it. The flavor is great. Charlie loves Hamburger Helper, so it was a pleaser
here.)

Ham and Cheese Oven Omelet, p. 9
(I have also made [this], and it is very good and easy.)
(This was good. I loved the green pepper and onion that gave it a good mix of flavors.
Charlie said it was too many veggies, but good. I would consider doing this again,
especially for guests. Being only meat exchanges, it works so well to feel like a
larger, special breakfast. It's not the only dish you serve that way. I served with
Blueberry Yogurt Muffins (Healthy Exchanges Cookbook, p. 226) I had in the freezer.)
(We girls made [this] last night. You were right, It was GREAT!! I microwaved the onions
until soft, and used broccoli instead of green pepper, as no one in our family likes
peppers at all. My little one gobbled it down, most of the onions and all!! She said
that "this is a great breakfast casserole.")

(For lunch we also liked [this].)
(Charlie wouldn't try this because of the horseradish. From the title I would have
expected Swiss cheese and beef, but it isn't. The sauce added a lot, but it was wayyy
too much sauce on a sandwich for me.)

(I really liked this. Good flavors and great color. It would be great for any meal you
want to impress!)
- Ranchero Beans, p. 4
(This was really good! Even better than it sounded. I thought I'd try it, but it would
never be a keeper. [But, Debbie put the "favorites * " by it.] Loved the sauce! Very
easy to make, which always moves it toward a keeper in the first place!)
- Salsa Hamburger Steaks, p. 6
(These were great!)
- Fruit Cocktail Pie, p. 12
(This was very good, easy, and all season. My boss liked it, too. Loved the pudding
consistency in the pie without Jello that is in so many of the pies. This is something
I could make with little notice--the ingredients are easy to have on hand.)
- Orange Swizzle, p. 1
(Used diet 7-Up instead of diet ginger ale--I can never find the ginger ale. Very good.
A coworker said she hadn't had this combination since she was a kid!)
- Greek Delight, p. 7
(What a delight this salad is. Dennis and I both loved this.)

- Fresh Tomato Soup, p. 7
(I made this soup last night and had a bowl (actually two bowls!) for lunch and it was
absolutely delicious!! I really like that it is made in the microwave, but make sure
to use a big enough bowl so it doesn't boil over -- I used a 4 quart pyrex bowl and it
was fine. I omitted the chopped celery, because I didn't know how that would cook up,
but now I think it would be fine if it was chopped very fine. For me, it turned out
more like a bisque because some of the tomatoes stayed in small chunks -- I like it
that way. It was a little thin last night after I cooked it, but it really thickened
up as it cooled -- very nice consistency. I plan to make a couple batches this weekend
and freeze them -- the fresh tomatoes and basil will be such a treat in the fall/winter!
This one is definitely a keeper! :-)
- Fresh Apple Cake, p. 1
(Excellent! We had it warm, and Charlie liked it a lot, too. (Of course he needed much
more Cool Whip!) He said he'd have to see how it was the next day, but fresh was really
good. A better-than-others JoAnna cake! One I would serve to guests, which isn't the
way with lots of the ones I've tried.)

- Mighty Zucchini Soup, p. 1
(This afternoon I made [this], and I just had to share that DH and I both loved it! I
especially liked that you don't cook the zucchini so long that it gets mushy. . . . I
simmered it for about 20 minutes after adding the zucchini, and it still had quite a bit
of crunch to it.)
- Apple Walnut Coffee Cake, p. 9
(I have tried [this] and it is outstanding!! I've made some of JoAnna's coffee cakes
before that use reduced fat baking mix and thought they were dry, but this one is very
moist!!)
(I also have a few recipes I make over and over. [This is one.])

(DH and I both liked [this]. We will be adding this to our favorites list.)

(This was real good and good with the brats I had it with. Since Charlie won't like it,
I probably wouldn't do it again. Otherwise, it would have been a keeper! You know, I
think it will be, despite that it's just for me!)
November 2003 newsletter
- Country Bean Soup, p. 9
(I just received my November Newsletter yesterday and wanted to tell you that I and my family
tried [this], and it was a hit! I really enjoyed every morsel. It serves 6, however my Son
ate 3 helpings and he's not a big soup eater for dinner. Hope everyone tries it. The only
thing that I did a bid different was throw in a dash of Mrs. Dash's seasonings. So enjoy if
you can.)
- Hamburger Milk Gravy Meat Loaf, p. 6
(What we did try was [this] and it was wonderful! What a bargain - 245 calories with your meat,
potatoes and gravy all in one. My husband couldn't quit eating it, but he is allowed more
calories than I am - so I had a left over serving for lunch today.)
- Breakfast Scalloped Potatoes, p. 9 Yahoo Access
(Another great recipe that we both didn't want to quit eating was [this]. Thought about it all
day!)
(We both really liked this. I can definitely see this as a great dish for most any guest and easy
to put together in the morning. Great basics for ingredients in the morning--ham, cheese, egg,
potatoes, mushroom soup, onion.)
- Mexican Bean Soup, p. 7
(I did make [this] and my husband loved it. I'm not much of a soup eater (unless it's cream based),
and I won't touch beans. But he really liked it.)
- Harvest Pumpkin Loaf, p. 1
(This is a very good bread. The bread itself is very heavy feeling, tasty and filling. Almost
tastes more like a cake than a bread. I will be enjoying this for breakfast the next couple of
days.)
December 2003 newsletter
- Hawaiian Layered Dessert, p. 5
(I'm sitting here eating some of [this]. This is one delicious dessert. I used 1% milk instead of
the powdered milk and water (too lazy to run down to the pantry) and I left out the coconut extract
(because hubby doesn't like it) and still this is really good! Cut it into 9 pieces instead of 8
and then wound up eating two pieces! Oink....)
(You sound like me -- It's hard to cut into 8 servings, easier to make nine, and if you have a smaller
serving size, it just makes sense to me to have 2 pieces. LOL)
- Chocolate Haystacks, p. 1
(I made [these] and they are very good.)
(I can easily get the mini chips and can still get the sugar free cooked puddings. I do think that
mini-chips are unnecessary for the Haystack recipe. They are melted-but I haven't compared the
calories etc to regular.)
(I read once if you can't find the mini chocolate chips, just chop up the regular ones.)
(Just tried [these]. Oh my gosh are they ever good. They are very easy to make, too. This is the
first time that I've ever used Jo's Sweetened Condensed Milk, and I was surprised that it actually
turns out to be more like butter than milk. Anyway, the Chocolate Haystacks are great!!)

(Both types of cookies, the Haystacks and [these] are good.)
- Quick Macaroni & Cheese w/ Mushrooms, p. 7
(Very good and very fast. No thawing required. I always need this kind of recipe!)
- Tom's Pizza Meat Loaf, p. 6
(I loved this! I was just about guaranteed to -- the smell was so awesome! Charlie said it was fine,
but nothing great. Well, it's a keeper to me, no matter what he says. I would love to serve this to
guests, too.)

(We made [these]. They are very good!)
- Butterfinger Dessert, p. 4
