July 2002 newsletter
- French Chicken-Pasta Salad, p. 1
(***** We tried this the day after we received the newsletter. We had some leftover chicken,
so we thought why not. I have to tell you, Dennis and I found that the snow peas in this
salad made it; we both really enjoyed it. Every month I can't wait until we get the
newsletter, so I can try a new recipe from it. So far we have enjoyed all of the ones we
tried.)
- Chocolate Almond Pudding, p. 12
(Made [this]. I used skim milk and just enough dry milk to make up the 2 servings. It was
very good.)
- Indy Ham Pasta Salad, p. 1
(I woke up on July 4 wanting to cook, so made my way to the kitchen and got started before
hubby told me not to! LOL
Anyway, it took me a while to find everything I needed but I was able to put together two
of JoAnna's recipes -- Waldorf Salad, from Across America, p. 69, and [this one]. Both
recipes were very yummy and I'll be making them again many times I'm sure.)

Southwest Spaghetti Salad, p. 1
(I really like this recipe. Have tried it twice since I received the July Newsletter. First
time I made, forgot and used whole can of kidney beans. Also used French dressing (Ken's Lite)
as I didn't have the Catalina. I used the Creamettes Whole Wheat Spaghetti for added fiber
(3 grams). I made again this morning and used some green chilies in it.)

- Polynesian Meatballs, p. 7 microwave
(These were so excellent! They are so quick and don't heat up the kitchen. Wonderful flavors!)
- Orange Freeze Pie, p. 8
(This was so good! I said to Charlie, "Good stuff" and he said, "No, not good, excellent stuff!"
This is a keeper for us and so easy to make. Charlie *loves* Blue Bunny Chocolate Chunk ice cream.
He said this was even better than that! He said it came close to being his favorite HE pie,
although Strawberry Lover's Pie [from May 98 HE newsletter, p. 1 ] will probably always have
that #1 spot. We preferred this softer, so after freezing the 2 hours, we would put it in the
fridge.)
- Mushroom Macaroni & Cheese Casserole, p. 5
(this was great and is definitely a keeper)
- Tuscan Bean, Tomato and Bread Salad, p 7
(Sarita and I loved this one and even made it twice. The 2nd time with peeled cucumbers and
mozzarella instead of parmesan. It was good both ways. We used cannellini beans instead of
great northern both times.)
(Sarita and I have made this several times. We love it.)
(. . . recommended this, and she is so right. It is absolutely delicious and has good fiber.)
- Patio Potato Salad, p. 9
(First time for this one, and it was little bit different -- the celery made it crunch. We liked
it and will have it again.)
August 2002 newsletter
- Italian Zucchini Supper Torte, p. 7
(Tried [this] for supper and it was terrific. My husband and I really loved it.)
- Grandma's Apricot Banana Bread, p. 4
(I made [this]. IT WAS FABULOUS!!! I left out the nuts, and made the dried fruit into 3/4 cup of a
combination of dried apricots, raisins and craisins, and then I made 12 muffins instead of a loaf.
I like doing that because it's portioned out for me. Made 12 good sized muffins too. The recipe
calls for 8 servings. Anyway, today (the next day) it was even better! I'll definitely be making
this one over and over again.)
- Picnic Corn Salad, p. 1
(I made [this] last night and it was very good. I only made 1/2 a recipe for the two of us. I used
thawed frozen corn. Next time I might cut back on the dressing a little. It really had a lot.)
(So far I have only made [this from the Aug 02 newsletter]. I marked it 'very good' with no notations
to make any changes.)
(good but a little sweet, used fresh corn from the garden, think I'll leave out the Splenda next time)

(I made [this]. Wonderful! Big hit at my house.)
- Watergate Cake, p. 11
(I made [this]. Wonderful! Big hit at my house.)
- Cheesy Chili Meat Loaf, p. 7 -- microwave
(I made [this] for dinner tonight. We all enjoyed it; it's nice and moist and very tasty. I'll
definitely make it often. It's nice for the summer, because you do it in the microwave and don't
heat up the kitchen.)
- Creamy 7-Up Treats, p. 11
(Made this this weekend, and found it to be light, and very refreshing on a hot day.)
- Cliff's Brunch Casserole, p. 6
(I thought this was very, very good. I once had a recipe for ham and cheese biscuit balls and this
reminded me of them. The biscuit texture was good and it's very cheesy. Charlie didn't care for
it much. I thought this wouldn't be a keeper. As I had the leftovers, and the exchanges work well
for a snack, I decided I would want to do this for me again. Maybe for guests, too.)
(I added some hot peppers, and used red bell pepper instead of green. Made a 1/2 recipe and it was
very good.)

(We really liked these. So simple and yet sort of pizza tasting.)
- Fiesta Brunch Pie, p. 9
(Sarita and I both liked this one. But at first I thought you really got a small piece for 5 WW points,
but the next morning I had it with fresh fruit and it seemed to satisify me more.)
- Apple-Graham Cracker Pudding, p. 12
(***** We loved it, will be making again.)
(This is not the first time we made this. Both Dennis and I love this fruity dessert.)
September 2002 newsletter
- Souper Supper Squares, p. 7 -- microwave
(I just made [this]. We all enjoyed it. I added a can of mushrooms to the sauce. It rained all
day here in New England and didn't get above 60, so it was a good "meat and potatoes" day.)
- Zucchini-Nut Muffins, p. 1
(I made [this]. I left out the nuts though and instead added 1/2 cup raisins. MAJOR hit. Hubby
said they are the best muffins I've made in a while.)
(I made [this] yesterday and [it was] great!! I really enjoyed the muffins.)
(My church is having Muffins with Mom next Sunday for Mother's Day. I volunteered
to bring a dozen muffins. I'm looking for a kid pleaser that is also HE friendly. . . .
Anybody know of a really good one? . . .
I also make a zucchini nut muffin that is good, but I don't know if it would be a winner
in the kids' eyes.)

Zucchini Chicken Casserole, p. 1
(I tried [this] and really liked it. I doubled the recipe and baked it in a 9X12 pan. I cut it
into 8 servings and have 4 left over to freeze.)

(Both were very good. . . . I left out the mushrooms & onions on the bread (my family won't
eat mushrooms or onions on bread). I will be making the bread again soon - oh so easy.
The possibilites are endless with this bread; all you need is a little imagination.)
(Loved this one but it made too much. Hope it's good warmed up as I have a lot left over.)
- Zucchini-Tomato-Onion Side Dish, p. 1
(Thanks for telling us that you were going to make [this]. I was standing around trying to think of
something to go with my teriyaki pork roast, and then remembered reading what YOU were having. I
knew only DH and I would eat this so cut the recipe in half and then divided that into two single
serve containers. Hubby LOVED it and he doesn't even like zucchini too much! Told me I could make
any and all veggies this way.)

(***** Actually this should be 10 stars out of five. Oh, this so good. We served with with Ultra
Light Cool Whip (same as Fat Free in US). Oh, JoAnna, until we found your books I was not a dessert
fan, now . . . well, you have read my e-mails.)
(I tried [this] and hubby liked it! He is a little choosy with his sweets, so I know it's a winner.)
(Today I just made [this]. It was as good as everyone was saying!)

(We tried [this] for dinner tonight and it was very tasty. Quick and easy. This is one that my DH
would love to have again.)

(What a coincidence . . . . I fixed that for dinner tonight also. I added some hot sauce to it (because
my family likes hot, spicey food) and everyone liked it very much. I'll be making it again for sure.)

- Crunchy Cabbage and Apple Salad, p. 11
(Sarita and I both loved this one. I will make it again. I did use tart apples from our tree instead
of the Red Delicious that were called for.)

(2 g fiber)
(Delicious with a capitol D. Keeper for sure.)
(Also made [this] and it was very good. Definitely a keeper recipe.)
(I have [this] in the oven right now. If the cake tastes half as good as the batter did . . . this will
definitely be a big hit! What a super easy recipe this is and I can't see how it can be any less than
spectacular. HURRY COOOOOOK cake!)
(Well I finally got to have a piece of this cake I made this up tonite and it's terrific. Very easy to
make and just chocked full of great stuff. There's actually more add ins than there is batter! I cut
it into 9 pieces instead of 8 and the pieces were certainly big enough. This puffs up really big too.
If you haven't given this a try, you're missing something.)
(Give [this] a try from this month's newsletter as well. That is VERY good.)
(Well . . . [this] finally got done. Didn't get to cool long, because the knife was cutting it before I
knew it. All I can say is "This is the best Joanna Lund cake I have ever eaten." My husband agrees!
Because of the apples and raisins, I'm sure no one could tell it is diet friendly. If you haven't made
it . . . do.)
(Did you ever try [this] that everyone was raving about? I did and it is delicious especially with a
dollop of Cool Whip.)

was the first time for this recipe and has gone in the file to have again.)

many peas. It sort of seemed like chicken and rice soup taste in a casserole.)

(Excellent! To the WHOLE recipe, I added: 60 gram (3 Fruit serv.) raisins, salt,
& 6 pkts. Splenda; To my INDIVIDUAL serving, I added, when ready to serve: 1 pkt.
Equal & 1/8 c. (2 T.) FF 1/2 & 1/2 )
- Chicken Pot Pie Fettuccine, p. 6
(I thought this was really good. The soup made a good sauce. Charlie thought this
was good too.)
- Hot Turkey Salad Casserole, p. 1
(We liked this. Charlie could tell the crunch of celery, but it was small enough
pieces, that he was fine with it. I think the crunch gave it the "salad" of the
title.)
- Potato Crowned Turkey Casserole, p. 1
(We liked this. Not awesome, but really good. Charlie even ate the peas without
pushing them aside!)
- Bountiful Harvest Walnut Bread, p. 4
(This was great. The cinnamon taste throughout and on top was very good. Taste and
texture like any regular nut bread.)
- Broccoli and Ham Bake, p. 12
(This was really good. If you like broccoli you will love this. I made one mistake,
but it was great. It calls for (1) 12oz can evaporated fat free milk, and I used
JoAnna's recipe. The problem was I only used the recipe to make 1/3 of a can (I
didn't triple the recipe to equal 1 can). It turned out fine, and we agreed had we
used anymore, it would have been too runny for us.)
December 2002 newsletter

(The choc pie with the choc fudge and white choc puddings is very good.)

(The winner hands down!!! very good, moist and flavorful! I will make these again.)
(These are very very moist, DO NOT STORE AT ROOM TEMP. If you aren't going to eat them
all right away please keep them in the refrigerator. I made them on Sunday and by Wed.
night they were bad (had hair growing on them). I don't know if they would freeze, but
I guess you could give it a try. I made several of the cookies in the Dec NL, but these
were our favorites.)
(I froze some and they were fine when thawed. You're right Gail, they are very moist . . .
almost too moist. I made them for our prayer group, and they were sticking to the plate
when I took them out and to everyone's fingers when they ate them. I'm not sure how to
solve the problem, but perhaps baking them a minute or two longer might help. However,
they are delicious and if being too moist is the only problem, so be it!)
(These do sound good. Do you think you could drain some of the juice from the pineapple
before adding it in, would that help with the "stickiness"?)
- Pepperoni Pizza Brunch Quiche, p. 9
(I really liked this. I liked that it was just meats and so it left room for my choice
of starches. Charlie said no. I think it's his bland tastes that didn't like the
pizza seasoning.)

(I really loved these! They are just like real biscuits. Charlie liked them too.)

Holiday Yeast Bread, p. 7 Yahoo Access
(***** This is a very moist tasty bread. My daughter Lisa, says that it tastes a bit
like hot cross buns that we buy at Easter in Canada. Everyone enjoyed the bread.
Thanks JoAnna for another great recipe. (We made 4 times this month.))

- Easy Creamed Vegetable Medley, p. 12
(Well let me tell ya, that JoAnna has outdone herself this time. I made the easy creamed
vegetable medley and it is out of this world! Yep you guessed it, it does have green beans
in it. And carrots and onions, now how could you go wrong??! Thank you JoAnna, I'm your
slave forever!!!! Ya'll just gotta try this one, creamy and decadent tasting. . . . 1/2 cup
serving comes out to 1.1 pts on WW's. Next time I make it I'm going to add a few more green
beans and a can of mushrooms. This is one of those recipes I'll make over and over.)
(I tried that one and it came out rather "goopy" to me. Maybe I did something wrong or didn't
measure properly. [Maybe the extra veggies would help?] )

(Last night I made [this]. . . . It is so good. . . . I do not have an 8-cup glass measuring
bowl to make in the microwave, so did it the old-fashioned way in 2-quart pot on top of stove
and it worked well.)

(I made [this], and we enjoyed it very much. Guess what Sarah - it had green beans! I guess
it's my favorite vegetable, too.)

(I prepared [this]. It was delicious. It reminded me of a Mexican bubble pizza. Next time I
make it, I'll save some calories by not using the sliced American cheese.)
