for her meatloaf recipes. My husband really loved this one (as usual).

Oh my goodness, you might as well ask me which of my children is my favorite, LOL. I have
more than one favorite, but I'll give you the 3 that I make most often. [This is one.])
I add 1 tsp fennel, 1/8 tsp coriander, 1/4 tsp red pepper flakes and 1/4 tsp black pepper.
The additions make it taste like it has Italian sausage in it, and the whole thing tastes
like the best pizza you ever had.)

new in-laws when we had them over for dinner and it's a dessert I'm
always proud to serve! No one ever suspects it's low fat/low calorie. . . .

(This was SO good. I left the skins on the potatoes, because I like them that way!
I can't get Fat Free Mayonnaise over here in Malaysia, so I use a combination of
Light Mayonnaise and Fat Free Ranch Dressing -- see Why Recipes Fail -- LOL. No,
actually, it worked out fine. )

Cowboy Pot Pie, p. 202
(I fixed it recently and we enjoyed it very much.)
(Another one we really love is [this]. I made that for supper last night, and
my skinny husband ate two servings! Too bad for him - he didn't have room for
dessert.)

Oktoberfest Pork Tenders, p. 219 -- skillet main course
(I made [this] using boneless pork chops last night and they were really tasty.
I had to let them simmer longer than the recipe indicated since they were not
the tenderloins but it was a great way to make a healthy version of pork.
Willy and Ellie didn't get to rate that dish since there wasnt one single crumb
left. . . . I didn't want to go out and cook on the grill and I didn't want to
turn the oven on either, too hot for either one. It was a good alternative.)
Munch Mix, p. 302
(I made a batch of [this] this morning to have something to snack on in the car
this weekend. It is really good. I believe I will have it around regularly for
a snack. 2/3c is a serving, but I don't know if I would eat that much because
it is kind of on the sweet side and goes a long way--plus it is quite filling.)
Vegetable Stuffing Side Dish, p. 171
(This is the second time I've fixed and each time I do things a little
differently, a flexible recipe. This go around I used yellow squash and
bell pepper and the bread cubes per the recipe--last time I substituted
Pepperidge Farm Herbed Stuffing Mix as that was what I had on hand. I
like the compactness of it also, your starch and veggies in one neat dish.)

(This is an excellent salmon loaf recipe and I really love salmon loaf.

Island Shrimp and Rice, p. 186
(I just made the best dinner and wanted to share with you. I used coucous
instead of rice and if you follow the Weight Watcher plan it lowers the points
to about 3 points. This is so good I shall make it time and time again. . . .
enjoy...this is a keeper.)

just okay, if even that - boy was I wrong, this is fantastic!!)

(I was wanting to make sure you know about another great green bean recipe -- was
mentioned on the board not too long ago, and I have made it several times since --
it's wonderful. . . . if you haven't tried it, you're missing out on a good one!
We've enjoyed it so much! . . . NOTES: I just use the reg. cuts of green beans,
instead of the french style -- works out fine.)

(In place of the 1/4 cup Brown Sugar Twin, I used 1/8 cup Brown Sugar Twin and
4 packets of Splenda -- that was 1 extra packet of Splenda, because I usually
like things a little sweeter. This is wonderful!)

(very good -- I didn't have cooked turkey so I used some cooked ground
turkey instead.)
"Cabbage Rolls" Skillet, p. 211

not be having it for lunch.)

(really good -- It really does taste like pizza.)
Mexican Scrambled Eggs, p. 284
(I wanted something different for breakfast this morning, and while thumbing thru
Joyful Table came across this one. I was hesitant at first, adding black
olives and corn to scrambled eggs seemed radical. lol But we decided to go for
it. Wow. It was great. The only thing I did differently was add a little 2%
shredded cheese to it. To go with it, I sliced some small pieces of sourdough
bread, and mixed a little low fat ricotta with vanilla extract, Splenda, and
strawberry fruit spread. After toasting the bread, I spread this mixture on it,
and melted it under the broiler. It was just the right touch of sweetness with
the eggs.)

Zucchini Bean Salad, p. 138
(Here is one of my favorites, and it uses a bunch of zucchini! I took it to a
potluck last night and everybody raved about it. . . . I've made a few variations
on this recipe. I've used more zucchini, up to half a cup, just to finish the tail
end of the zucchini. I've only used red pepper, since I never seem to have green
on hand. I think it adds more color and a sweeter taste. I've used black beans
instead of kidney beans, and last night when I doubled the recipe, I used one can
of each. I didn't have plain Italian dressing, so I used Caesar Italian and it
was wonderful. Last night's was a combination of Caesar and Zesty Italian.
I'm going to throw some leftover rotini in my salad for lunch today. Yummy!)

It has three layers. One chocolate cream cheese, then chocolate pudding and
then white chocolate pudding topping. If you love chocolate, this is to die
for. :-)

Chicken Cordon Bleu Casserole, p. 192
(You've got to try this one. Last night we had [this]. Absolutely wonderful.
This will be a regular around my house. It was very easy and quick to make
and only took 30 minutes to cook. I added a chef salad and dinner was done.
I just finished the leftovers for lunch and it was still great.)
(Last night we served [this]; we loved it and it is definitely a company dish
as well. The only changes we made was to add some onion and garlic powder and
a pinch of thyme. We loved this and will serve again real soon. Here is
another winner from JoAnna.)

(We didn't have any turkey, but used a couple of chicken breasts for it, and
it was by far the best that we have tried. It was great! It got a 5 from

and Chief Cook and Bottle washer son 12)
(***** We still love this soup. I think we first had this after our Canadian
Thanksgiving. This time we used cooked chicken breast. I think it is the

Banana Peanut Butter Dream Pie, p. 248
(We tried a pie recipe this weekend that we hadn't had before. . . . It
combines three of my husbands favorite things, bananas, peanut butter and
chocolate. I think he gave it a 5+ rating!)

now, everyone! That makes three recommendations for this good pie.)

(We went to a church pot luck last night and I was determined to take something
healthy and eat only it. I also wanted to do something that was fairly cheap
to make. I scoured the recipes and found Tuna Corn Sauce Over Muffins from
Make a Joyful Table. The sauce sounded delicious, but I wasn't going to
take English muffins to a pot luck, so I substituted rice and mixed it into the
sauce making it into a casserole. I figured the exchange were the same, because
I substituted 1/2 cup rice for every 1/2 English muffin. To make a long story
short, people were asking who made the rice dish and asking for recipes. I never
said a thing about it being healthy.)
(I just noticed that the amount of milk is unclear in the [variation of the] Tuna
recipe. It should be 3/4 cup.)
German Scalloped Potatoes, p. 167
(I made these for dinner last night and they were really good. I love the little
"bite" that the vinegar gives them. The whole pan disappeared in record time.)
(My husband mentioned something about it this week, so I made it the other night.
He really liked it. I wasn't sure if he would compared to the higher fat kind, but
he said he thinks he actually liked it better.)

Corned Beef Toasties, p. 227
(I found a yummy recipe - [this] and since I had corned beef left over from St. Paddy's,
I prepared that. DH liked it so much he asked for seconds. He only gave it 3 stars
because he said there were too many onions for his taste. He could be right because
I tripled the recipe, but only doubled the onions and added about 1/4 cup diced celery.
I'm never sure what to do when making more of a recipe. He said he would have given
it more stars if I had put in less onions.)
(Maybe if you cooked the onions first in a skillet sprayed with nonstick cooking spray,
your DH might like it better. I have to do that for my DH anytime I'm doing onions,
celery, carrots, green peppers -- even for crockpot recipes.)

made several variations by using different cheeses and once even used lean roast beef
instead of corned but since we don't care for sweet pickle realish, I always use the

pasta every night. My Grandmother was Italian and a fantastic cook. Pasta is a course
with every meal but she was slender her entire life (could it be the 11 block walk to
the market for her favorite cheese?). I'm spoiled.)

(My note - this is the salad I make for snacking - I usually divide into 4 servings - it is
still 1 Point and gives 1 F and 1 V serving. I use lemon or lime sugar free Jello and both
are very good. If you have another favorite Jello flavor I would try it. I have also used
the large size Jello and doubled the recipe and put into a 9x13 pan.)
(Since Andi told me about this recipe, we have made it at least twice a month. It tastes like
a dessert, not a salad, and it is very low in Diabetic Exchanges.)

Everyone kept raving at how good everything was, and I was able to tell them how healthy they
all were and brought out all my Healthy Exchanges books. . . . [My MIL] doesn't like complicated
recipes and ones with exotic ingredients. I had been telling her about how good the HE recipes
were and finally had a chance to demonstrate to her. She took several of the recipes home and I
now know what I can get her for Christmas . . . some HE cookbooks :-) Thank you, JoAnna for making
my party a success and for helping me to shed 46 lbs and feed my family good food at the same time.

Layered Tomato and Mozzarella Salad, p. 137
(This was very good. Other flavors almost covered up the tomato flavor, but I really enjoyed
it. Last year someone I know shared a dish of alternating layers of mozzarella cheese and
tomato slices and then had Italian dressing drizzled over it. The olives and basil made this
one even more classy.)
Baked Apple and Graham Cracker Pudding, p. 244
(***** As you will notice, we have been eating a lot of apple desserts, this being we bought a
hamper of apples, so we are trying as many of JoAnna's apple desserts as possible this month.
We both loved this one. The slight taste of maple syrup made this dish.)

Italian Baked Onion Rings, p. 298 Yahoo Access
(These were awesome, the best oven baked onion rings I've tried. I think maybe even better than
fried.)
(***** Joan was right -- these were super, and I enjoyed them better than the fried ones I used
to buy. Dennis and I both really enjoyed these, and we might have that as a snack instead of a
side dish.)
(These were really good and very easy. I just have to make sure that I cut the rings big enough.
I made a couple small rings, and they burned up pretty good. LOL. Barry also loved these; in
fact, he bought a huge onion at the store the other day and requested these.)

(One time I was teaching and away for 2 months. The only cookbook I brought with me was Make a

(Thought I'd share some great recipes I tried and my husband loved (the "real" test!!) . . . All are
great, and I hope you try them. For dinner last night, I made rotisserie chicken,
Orange Candied Sweet Potatoes (Across America, p. 115), corn on cob, and [this] for dessert. For
those on Weight Watchers, that dinner and dessert were 11 Points.)

South-of-the-Border Chicken Breasts, p. 191
(Here's another similar chicken recipe [similar to Mexicali BBQ Chicken, Dec ’97 NL, p. 5] that we love.
It cooks on top of the stove and is really simple to make. I have altered the instructions from the
original recipe to the way I do it. None of the ingredients have changed, just the instructions.)
