When my freezer worked, I used to do it all the time. I'd freeze single servings
for lunches to take to work (or hurried dinners). [One of our favorites is this.]
. . . I've frozen single servings of the pies that are recommended to freeze.
They also were wonderful when thawed.)

(I absolutely loved it and thought every time I had a piece I was off my healthy
eating plan LOL . . . I think the only thing I will do different next time I make
it is to put the chocolate chips in with the cream cheese part instead of on top.
The bad part about it is, mine is gone :( time to make more!!)
(I loved it - very tasty with the fresh raspberries!!! It is one that will be on
the keeper list. My DH was surprised when I put the chocolate chips on top and
very surprised! He really liked the taste. I just need to remember to put the
Cool Whip in next time!)

(I had tryed this recipe last winter and it was good. . . . It's starting to

(We served this to a couple of good friends recently and it was very well
received - thought perhaps I should share the recipe with all of you. It's
a bit early for cherries, Washington's birthday isn't until February, but
it's so good you might want to have some before that. It's one of my
husband's favorite pies . . . . It's so good to know we can have desserts
while we watch our calories!)

(This is one of our very favorites and JoAnna's right, it DOESN'T taste even
remotely healthy! My cousin and her husband get together with my husband
and I at least once a year. When we started using HE recipes, I told my
cousin I'd fix dinner one evening, so we could have at least one low cal
dinner. She told JoAnna about a year ago that she didn't want to hurt my
feelings, but she wasn't thrilled at the prospect of some sort of "diet"
recipes. We haven't fixed even one that they haven't been thrilled with,
especially the HE desserts! This was one of the first!)
(Gram's been cooking. . . today; & my kitchen smells wonderful! Made [this]. . . .
[This will] be repeated at our house. DH's comment - "We are eating healthy
& it's good!")
(JoAnna asked that we list what our favorite pie is. . . .
Our favorite pies are Butter Pecan Layer Pie (Sept. 1994, p. 11), [this] (we
make this often), and "Peanut Brittle" Apple Crumb Pie (Jan. 2000, p. 8).
JoAnna has so many good pies it's impossible to pick just one.)

(I made a pan of [this], which turned out really good.)
(I've got some bananas that I need to use today or they will surely commit

Mexican Cream of Tomato Soup, p. 11
(If you like tomato soup, but would like something other than the old standby
from Campbell's, give this one a try. It has a fresh tomato flavor. Very
good.)
(I read the tomato soup post and was reminded that I have half a can of tomato
juice in my fridge leftover from making chili a few days ago. Does anyone
have a recipe for tomato soup using tomato juice?
Found this recipe that makes just 2 servings--although it calls for
tomatoes, blends to make smooth anyway, so I'm thinking you could use juice
just as successfully. . . . We had fresh snow last night, and it's blowing
around out there on a really chilly wind. . . perfect weather for hot soup!!)

Neapolitan Sea Shell Casserole, p. 7
(I have made this recipe repeatedly! I don't always have spinach so sometimes
I have substituted carrots or cauliflower or even the frozen broccoli,
cauliflower, carrot mix. It is a very forgiving recipe . . . LOL they
have to be for me to fix them!!! Throw whatever veggies you like in it,
it will still come out great!)

Applesauce Morning Cream, p. 9
(One of my all time favorite breakfast treats is [this]. (YUM< YUM).
Sigh, I have never found anyone else who does like it.)
(You've just met someone who likes [this], too--me! I'm the only one in
my family, though.)
(Personally, it tastes much better after being in the refrigerate overnight.)
(I stirred it up for one of my breakfasts this morning. IT'S DELICIOUS!!! I
stirred in 3/4 oz of oats using a bread serving. This makes a great on the go
breakfast!)
(I am thinking that this would be good on waffles, or french toast.)
(It's excellent on waffles. Haven't tried it on french toast, though. I also
like to stir in a quarter cup of Grape Nuts right before I eat it.)
(a favorite way to use yogurt . . . Sometimes I use the whole small carton (8
ounces; other times I made this using a quart size nonfat plain yogurt and
followed the recipe with 3/4 cup (6 ounces). Both ways worked fine. And it
stays good in the refrigerator for next day. This would be good any time of
the day not just breakfast, but it is a nice change and a pretty low point
breakfast and adds a milk and fruit to the day's count.)
(I used vanilla yogurt in this instead of the plain and then just omitted the
vanilla extract. It's delicious.)

Country Vegetable Soup, p. 7
(I made this soup today! YUMMY! Very satisfying and very filling! My parents
are coming up this weekend. And this soup will make a tasty lunch!)
(I just love this soup, but unfortunately, my family didn't. Then, I substituted
16 oz. of 90% lean Italian turkey sausage for the gr. beef, added a little minced
garlic & a few crumbled bay leaves. . . . Now it is a family favorite!)
(We had this soup for dinner tonight. I had a can of a tomato sauce that was stew-
soup flavor that I used. I only used 1/2# of gr. beef - so cut back somewhat on
the ingredients. Anyway we give it a 10. Was very good. For the veggies I used
the onion and then a bag of mixed veggies and of course the fresh potatoes. I added
a little salt and pepper. Give it a try. I figured it to be 4 WW points per serving.)

Grandma's Rhubarb-Pineapple Cobbler, p. 1
(My hubby was convinced he didn't like rhubarb but he was wrong!
My son thought it was cherry pie so there you go. I liked it and it was easy.)
(Um-m-m good, a little tart and a little sweet. Just suits a sweet-sour taste.
It is a winner.)
(I tried it too. We also enjoyed it, very much. Seems to make spring official,
doesn't it, to make rhubarb recipes? (Altho, I had to use frozen rhubarb also,
as mine is only about 3" tall so far, and it even got a little dusting of snow
last night!) . . . I would say that you have two positive votes for it here.)

(This is one of our favorite cheesecakes - I love mocha in just about any form!)

Pizzaburger "Steaks", p. 4
(I made [this] for supper last night and everybody LOVED IT!)
(It was wonderful! The changes I made were using oregano, garlic, red pepper
flakes for pizza seasoning and I drained a can of diced tomatoes for the tomato
juice. Then added diced tomatoes to sauce.)

Easy Stroganoff Bake, p. 12
(I used [this] and it was fantastic! Even my 12 year old granddaughter had a
third helping and she rarely goes for seconds! I'd doubled the batch. With
two hungry men onboard, I knew 4 servings wouldn't be enough. I had a new package
of noodles and all that leftover steak. Also added about a tablespoon fat free
parmesan and baked it in a 9 X 13 pan instead of the square one. I always have
fat-free sour cream on hand, but couldn't find it, so I left out the onions and
substituted fat-free french onion sour cream dip for the sour cream. I trimmed
all the fat off the steak and cut the meat into little bites. . . . We will
definitely be having this again. I served it with pea salad and watermelon.)

Creamy and Crunchy Apple Slaw, p. 4
(I fixed this slaw recipe the other night and was reminded how wonderful it was.)
(I'm already thinking about the 4th of July and looking for a good Healthy Exchanges
coleslaw recipe. JoAnna has lots of them and it's difficult to choose. I thought
everyone here might tell their favorite. . . .
This is slightly sweet and it calls for apple pie spice in the dressing. It also
has apples and celery making it nice and crunchy. I have made it many times and
frankly, we were not people that were particularly fond of coleslaw. . . . I would
highly recommend [this].)

(I made this recipe on top of the stove and it was so delicious.)
(This is a great dish to do, as it doesn't have a lot of ingredients that require
refrigerator space which is always at a premium at the beach. The first time I
did this, I made one crockpot full of these beans and one crockpot full of a more
traditional recipe. [This] was scraped clean! This is going directly in my
notebooks for Healthy Exchanges newsletters.)

(Have you ever had [this]? It is a keeper.)
(I like to use the reduced calorie pancake syrup made
with Splenda instead of the Brown Sugartwin.)

Chuck Wagon Stew, p. 12
([This] is another one that is low count and good tasting.)
(I whipped this little number up very quickly last night so we'd have something
terrific ready for our lunches today. I substituted soy crumbles for the lean
ground beef (made it all the easier). It was terrific and way less fat this way.)

(These ARE good. I made them this morning. I got 11 muffins though instead of the 8.
I ate one hot this morning and another one tonight for a snack. It was better tonight.
Can't wait till tomorrow to try them again. I'm betting they are even better. I find
that the muffins need to sit overnight to blend the flavors.)
(They're great!! I got twelve nice size muffins that break down to 106 calories each!
They are wonderful. Definitely a repeat recipe.)

([This is one] of my favorites. . . . In contrast to many of you, I don't often prepare
desserts, but the one I've listed here is, oh, soooo good! It's one of the few "healthy"
desserts I've made that my hubby really liked.)

Broccoli Harvest Salad, p. 11
(one of my Thanksgiving favorites -- I make it the same day,
as it doesn't keep really well.)
(another great broccoli salad -- We loved this one as well as all of the other
broccoli recipes of JoAnna's that we have had.)
Zucchini Rice Lasagna, p. 6
(Tried a great recipe last night: [this one]. I can't always get zucchini or
even cottage cheese here, so I actually had both and found this recipe at the
same time. It was wonderful! I usually make recipes exactly as written the
1st time around, but I had the classical radio station on, and it must have
stirred a creative impulse, because I made some changes:
I added 1 fresh garlic clove, minced, while I was browning the meat and onion,
instead of the dried minced garlic.
I added a 16 oz can of mushrooms, drained and sliced, to the meat mixture.
Also added a dash of pepper and one 14.5 oz can of tomatoes, DRAINED, and
chopped, to the meat mixture.
I put the 1 tsp. of Italian seasoning in the meat mixture, but I also stirred
in some extra Italian seasoning and some garlic powder to the cottage cheese.
I really love this stuff. One serving is only 5.0 Points. I realized that 1
of the regular hot dogs (a U.S. brand) that we get here, without bun or anything
added, is 4.9 Points. Now which one is more satisfying? The Zucchini Rice
Lasagna by far.)
(I forget how long it takes me to put [this] together. I don't care, though,
because I absolutely love the stuff! I should really start it at 1:00 p.m.
and just have it ready early to put in the oven later.)
(I made [this] today and it is a keeper. I did manage to cut the recipe in half
to serve 4 -- the changes I made were to cut ingredients in haf when I could --
but I did use all of the tomatoes, and a little more rice as when I made the rice -
the amount that I used made a 1/3 cup more than I really needed. I also used
mozzarella cheese instead of what the recipe called for and grated a sprinkle of
Parmasan-Romano over the top when I took it out of the oven. I also used more
of the zucchini than a 1/2 of recipe would have called for, since I had the
zucchini and didn't want to waste it. I was glad I did as the zucchini almost
disappears and the more the better, I would say. . . . It is really good. My
husband would not eat zucchini if I served it as a veggie - but he did not recognize
it in this recipe. :-)

Steakhouse Soup, p. 7
(Well JoAnna has done it again; we tried a new recipe [this one]-- the only
change -- we added 1 teaspoon of Mrs. Dash, Tomato, Garlic & Oregano Salt-free
Seasoning and 1/2 teaspoon Old Bay seasoning. Dennis and I both loved this
soup and is going to be one of our favorites.)
(***** We make this once a month.)
([This] comes to mind for that leftover steak. . . . It calls for roast beef
but the steak would be great. I've used steak before. It's a delicious soup
and DH can eat the whole darned pot at one sitting. VERY easy to make as well.)

(I make this soup with a piece of steak as well. It's so gooooooooooood, so
if you have some beef around, don't wait. Delicious!)

(I made [this] yesterday for snacking and froze half of it so a piece with tea
for today's afternoon snack. . . . . I had those afternoon munchies too. Today
I took a walk and then had a piece of [this] with water. That's a good snack, BIG
pieces and only 3 gms fat.)

Apricot Tea Bread
(Hi all apricot lovers, Wanted to share something I tried with you -- it's SOOOOO good!
For a long time, I've enjoyed making Jo's Snack Banana Cake recipe. Eventually, I'd
gotten to making 1/2" slices to use it like a tea bread. So I decided to try tweaking
the recipe just a bit to make an Apricot Tea bread (or Snack Cake, whichever). I
substituted Yoplait Lite Apricot Mango Yogurt instead of the plain yogurt that was
originally called for, to boost the apricot flavor. It turned out really great! I
baked it in one of those plastic Glad pans, 8x8" sq. because it bakes nice and high --
and very moist, but light. I tried it as muffins, and in mini-bread pans, but I think
it baked up best in the 8x8" pan. I've made it 4 or 5 times now . . . and we just like
it better and better. I thought you might like to give it a try, too. Especially with
the holidays coming, when you might like to have a little "goodie" available to serve
with tea or coffee.)

Don's Cauliflower Salad, p. 4
(This is a good summertime change of pace salad.)
Chocolate Cereal Mounds, p. 9
(Here's another that may help during Halloween Treat Time
or Christmas or anytime.)
(I did up a batch of [this] last night so DH has a treat in
his lunch and I will have an afternoon snack with a cup of
tea. I only ate one but it was good!)
Peanut Butter Banana Muffins, p. 9
(Check out these muffins! . . . I got out my newsletter and
started baking. They were really good! I popped 6 in the
freezer because it says they freeze good. We are going camping
in a couple of weeks, so they will be nice to take along.)
(Hubby just informed me, these are to be made weekly. *yeah,
like that will happen!*)
(If you have a favorite recipe, like this, why not cut the work
in half! As you measure out the dry ingredients for one batch,
measure out equally for a second batch into a Ziploc freezer bag
and stick it in the freezer. Next time all you have to do is
measure out your moist ingredients, stir together and bake. It
would save time and clean-up! Hubby could have his muffins more
often, making you look like a queen. Remember that commercial
where the preparation was so easy the woman threw flour in her
own face to make everyone think she had been slaving in the
kitchen? ;)
Grande Baked Spaghetti, p. 7
(My husband really liked this; he is a salsa lover. I chose it
because I had some pieces of zucchini left from grilling some
of the larger strips. It was a nice change from regular
spaghetti.)
(I have made this and added 8 oz. of lean ground beef. I then
don't mix in the cup of shredded cheese, just sprinkle half a
cup on top. The words "meatless main dish" don't go over too
well with my DH and DS.)
(We had the leftovers tonight and honest they were better than
the first night. Next time I'll make a couple of days ahead
and then reheat in microwave as I did tonight.)

Pumpkin Toffee Cream Pie, p. 8
([This] sounded so good, I made it for dessert last night (minus
the crust and toffee chips). I used it as pumpkin pudding, and
it was a great big hit. I'll be making it again for Christmas.
For people that don't care for butterscotch pudding (I'm one of
those people), you can't taste the butterscotch. It just makes
the entire dessert taste rich and decadent. It definitely does
not taste like diet food. If you like pumpkin, you'll love this
recipe.)
(Great idea on making the filling as a custard or pudding dessert
in a small dish. I know diabetics that do that all the time to
try to make their carbs go farther.)

(This is SO quick and tastes absolutely wonderful! Just be sure
that the Ranch Dressing completely covers the flour mixture.)
(Another thing you can do with this is to mix the leftover flour
mixture with the Ranch Dressing. Then, I added just a little
water, and it made it easier to completely cover the top of the
chicken.)

(Made [this] for my card club and everyone loved it.)

(a cheesecake that is really good for either the Thanksgiving or

(I made [this]. WONDERFUL!! So very rich and creamy. I love
cranberry and orange together.)

(I just finished baking [these]. I couldn't wait to try one, so I
went ahead and had just one. If you love carrot cake like I do,
you will have to try these, they are WONDERFUL!)

([This] is a real keeper. I served it over sliced and browned polenta.
I made a couple of changes - I used real brown sugar - but only half
of the called for amount, and I put in a good shake of McCormick's
Santa Fe seasoning, and then a little less of the Taco seasoning.
Glad there are only 2 of us -- so we have leftovers for another day.
My husband is not too fond of chicken -- but he really liked this.)
(You will love that chicken recipe. I am itching to make it again --
maybe this weekend.)

(a good BBQ chicken recipe to try)
([This] is one of our favorite chicken dishes. I took it to a pot luck
last night, and I can't tell you how many came up to me to say how much
they liked it and ask for the recipe. . . . The only thing I did different
for the pot luck was to use 2# of chicken breast and cut it up into
chuncks. I also used brown sugar rather than Brown Sugar Twin.)
(I serve it with rice and spoon the sauce over the rice. For the veggie,
I usually serve it with broccoli (my favorite veggie).)
Ranch Potato Casserole, p. 6
Tiny But Mighty Meatloaf, p. 9
(Tried a new entree today, at least it is new to me. [this one] Was a
recipe for two and it definitely was a thumbs up. Cooking time in the
microwave was only 6 minutes, with 2 minutes standing time.)
(I made this exactly like the recipe, except I used regular ketchup. I
have a turntable in my microwave, so didn't have to turn it. I cooked
it 3 minutes, added ketchup on top, and cooked for another 3 minutes.
Let set for 2 minutes. Was great and FAST. My husband and I decided
definitely a keeper! Hope your husband likes it. Oh yes, I had a glass
refrigerator dish the exact size and it was perfect!)
S'more Cake Brownies, p. 9
(Then for dessert I made [this]. This also was a thumbs up. Delicious.
. . . The only change I made in the recipe was I used vanilla yogurt.)
(I made [this] again. They are one of my absolute favorites. I bake them
in a 7 x 11 pan, cut them into 8 pieces, wrap each one in saran wrap, put
them in a ziploc baggie in the freezer, then grab one for my sack lunch.
I think about them all morning. Very good. Also good as an afternoon
treat with coffee or iced tea.)

Crazy Mix, p. 7 microwave
(Actually, a snack for work is exactly what I was after too. I thought
that JoAnna had a recipe that was more like the Chex Mix, but I couldn't
remember where I saw it. I was glad that I stumbled on it again. It
says microwave on high for 6 to 8 minutes or until crisp. I only nuked
it for 7 minutes, and it wasn't quite crisp enough, so I wonder if another
minute would have made it better. We still liked it though.)

Strong Bones, p. 274, Barbie has a new favorite! This pie was
creamy, and chocolately and melted in my mouth! One suggestion - It
calls for 1.5 cups of water, and I thought that was too much so I
scaled back to 1.25 - but it was still runny. So next time I make
it I'll use only 1 cup of water. . . . Yum!!! This pie is so good,
I'm still dancin'!)

(Last night I made [this], for our Bible study group. It was a big hit.
It is like the old fashioned tomato soup cake but no sugar and low fat.
The only thing I'll change the next time is to use 1/2 cup raisins instead
of the 3/4 cup in the recipe.)

(Really really wonderful. . . . This is one to really try. In my book a 10 star.
Simple to make. And the taste from the combination of flavors is superb. Satisfies
your sense of flavor, look, and taste. One serving leaves you totally satisfied. I
didn't even want dessert.)
(That was Very Good! Mine was a little runny though. Was yours like that? The flavor
is still good regardless. Very quick for Sunday evening when I never feel like cooking
much.)
(I have prepared this recipe many times for my family. They love it! I usually double
the recipe so I have a serving or two left-over to take to work.)
(Here's another one that's a DEFINITE for the favourites list! This is definitely a 10
out of 10! The only change I made to it was I added 1/2 cup (or so) of frozen corn and
then I used FF cheese on top instead of the RF and about 1 oz. of WOW Dorito Chips crushed.
I baked it 30 minutes, then just took it out of the oven and added the cheese and crushed
Doritos. OMG it was so good. Luckily there was just one son and I eating it tonight,
so there's leftovers for tomorrow. Great size piece too and very satisfying. I just
added some carrots to the meal and it was done.)
(It is one of my favorites. . . . I agree it is excellent.)
(I made this last night and agree! It was DELICIOUS!! I also added about a half cup of
frozen corn and about a quarter cup of green peppers, chopped. Everyone raved (my husband
and both my sons). I've been "begged" to make this OFTEN! LOL! . . . Oh, and I used ground
turkey and hot salsa to make mine.)

Baked Jamaican Chicken Breasts, p. 7
(Good Morning Everyone on this nice sunshiney morning in Ohio . . . . Last night I made
a recipe I found in theKansan.com thanks to fellow Healthy Exchangers; I like this site.
It has recipes in the archives dating back to 1998. My husband came home and the age
old question was what's for dinner. I just simply said "Baked Jamaican Chicken Breast",
before I could say anything else . . . he said "Don't tell me another JoAnna Lund recipe!"
He said she may as well live with us . . . . he's getting to know her pretty well. Cute
huh? Course it wouldn't bother me if she moved in with me. What an inspiration it would
be to wake up every morning with her in the house rooting me on to stay on the health wagon.
Now that I've bent your ears . . . Sorry I rattled on so much, if you try these I think you
would like it, too. . . . Even the 5 year old liked it.)

Sunny Broccoli Salad, p. 6
(***** This is a great salad. Ever since we tried
Becky's Broccoli Salad (Yahoo Access) (May 2002 HE newsletter, p. 4),
we have tried other broccoli salads that we have found in JoAnna's cookbooks. Everyone is
just a bit different and still great! Dennis and I mentioned every time we have one of the
salads -- if we had only known earlier how great raw broccoli is!)
