(I used this for my son's high school graduation brunch. I don't know if it's still available
or not, but I used to use Kaukauna Fat Free Cream Cheese, honey walnut flavor in place of
plain fat free cream cheese. See Menu)
(After seeing the recipe posted, I decided to try these yesterday. WARNING, WARNING!!! Do not
make these unless you are serving to a crowd. They are so good you will want to eat all of
them yourself. Sorry to say I had way more then 1 serving. At 3 points for 2 I was OK, but
later on, I had 2 more and 2 more and so on. I was thinking that if I made them larger it
might seem more satisfying to eat just one. If I make them again I will do this and see if
it fools my brain.)

- Chicken Casserole with Potato-Cheese Topping, p. 5
(I made [this] for dinner last night. It is definitely a keeper. It tastes like a delicious
chicken pot pie. . . . It takes a while to prepare but is worth the effort. The servings are
big. I made mine in a 7x11 pan and it filled it to the very top. It also ran over just a bit
while baking (so I got to clean my oven LOL).)

(I made [this]. The flavor was incredible. The flavor of fresh ripe peaches . . . but it never
set completely. I refrigerated it for over 2 hrs. After it was cut, and I scooped the first
two pieces out, it ran together in one big mess. I double checked that I had used instant
pudding, and I had. The water amount was right . . . next time I will just reduce the water.
I definitely want to eat this one again!)
(I just love this pie. I have not had a problem with it not setting up but then probably don't
add as much water as called for. I have used canned peaches but had to dry them really well
with a paper towel. I got one slice of it the last time and my oldest son ate the rest of it
after I went to bed.)

(What is the best recipe for freezing in small portions? Does anyone have a
favorite to do that with? I know the books have that little snowflake by recipes
that are supposed to be good frozen, but has anyone tried it? . . .
When my freezer worked, I used to do it all the time. I'd freeze single servings
for lunches to take to work (or hurried dinners). [One of our favorites is this.]
. . . I've frozen single servings of the pies that are recommended to freeze.
They also were wonderful when thawed.)

rating to. We love Healthy Exchanges, have for several years . . . .)
(I am wanting some One Skillet Meals that I can prepare and put into Rubbermaid-like
containers in the freezer, so I don't have to heat up the kitchen when it is hot this
summer. We don't have air conditioning, so I don't like to do much 'cooking' when it
is hot. I'm looking for dishes that are freezer-friendly, that I can pop into the
microwave to re-heat. Do you have a family favorite you'd like to share with me? . . .
[This is] one of our favorites. . . . NOTE: I usually prepare this in a skillet on top
of the stove. It works very well!)

a variation on the original recipe: I use a fat free cheese slice and either 1
slice of Hafnia or other extra-lean ham or 1 slice of fat free bologna. This
sandwich would even be a good breakfast.)

(I have been going through my newsletters, and writing down all of the ones that I
want to try. I am going to add them to my spreadsheet, so that I can find them when
I want to make them. Anyway, we tried [this], and they were really good. I
substituted Hunt's Seasonsed Diced Tomato Sauce for Soup & Stews for the Hunt's
Chuncky Tomato Sauce since it is no longer available. If you haven't tried this one,
you may want to give it a whirl soon!)
(My notes: I used Hunt's Tomato Sauce for Soups & Stews in place of the Chunky Tomato
Sauce because it is no longer available. I read that that is what she suggests for
her old recipes calling for the chucky tomato sauce, and it was great. At the bottom
of the recipe it says cut into 12 pieces, but then it says serves 8. I assume that it
was a typo, and you are to cut it into 8 pieces. Don't take that for Gospel truth, it
is my assumption.)

platter and use 1/2 red & 1/2 green candied cherry on each piece.
On the 4th of July, each piece could be decorated with a blueberry
and a strawberry or raspberry.)

- Butterscotch Peanut Butter Pie, p. 1
(We tried [this] recipe this week we hadn't tried before, and
it's a definite winner! Please note, I added 1 teaspoon Watkins
peanut butter flavor. I do this with most of the HE dessert
recipes that use peanut butter, because JoAnna doesn't use much
peanut butter (the calorie count would be too high), but the
Watkins flavoring intensifies the taste. If I remember correctly
I got that hint from someone on this message board a couple of
years ago! In any case, this is an older recipe . . . but
definitely one worth trying! It's a keeper at our house!)
(I neglected to add one tip. I think the peanut butter blends
better if you stir it into the water before you add the dry milk
and pudding mix. You can also add the peanut butter flavoring
at this time to get it well mixed.)
(Yes, that is a great recipe and certainly deserves a five rating.
I, too use Watkins peanut butter extract to enhance the peanut
butter flavor. One other important item to note is that the
health food store has a great low calorie peanut butter that has
40% less calories, and 85% less fat and is very good. When a
recipe calls for 1/4 cup of peanut butter, I usually use approx.
6 T., so it still comes in lower than some of the other low fat
ones. The brand name is Better 'n Peanut Butter. Says
it's 100 calories per 2 T., with 20 calories from fat. Check
it out.)

(My husband won't eat too much of Joanna's recipes, because he
doesn't think he needs to eat like that. One day I made this
pie, put it in the refrigerator and went away, and he ate most
of it and he's not a sweet eater, either, will leave sweets.
Also, if anyone on WW wants to know the points, it's 4 points
for 1 piece. This is a real good recipe.)

This pie is one of the best I have ever tasted. I found it on
this board some time ago . . . . and I don't even like banana
cream pie . . . but this pie sure changed my mind in a hurry. :o)

(I make this every Thanksgiving. It's my Mother's favorite, as
well as mine.)
(I made this salad today and it is wonderful! I will probably make
it again at Christmas or New Year's.)
(I made it this week and it is very good. Even better the second day.)
(I used cherry s/f jello, unsweetened cranberry juice and a little more
Cool Whip, as to clean the tub out, but mine was Fat Free. A sweet and
tart salad DH and I both liked.)

college whose mom made a pie with almost this same filling - she
gave me the recipe but after a few years I lost it & have tried
EVERY source I could think of to find it again but no luck :-( I
was THRILLED to find that these tarts taste EXACTLY the same, but
much lower in calories - thank you Joanna!!! :-)
- "Sausage" Bread Pudding

(Just wanted to let everyone know that I had made one of Jo's soups.
. . . . I made the soup on Monday and served it for dinner on
Tuesday. My husband took me out for Valentine's Day so I had
to put it on hold. I am glad I did, because it gave the soup
a chance for all the flavors to blend well with one another.
I made a few changes to the soup by adding 1 ( 8 ounce can of
corn drained and rinsed ) 4 medium potatoes peeled and chunked
and 2 Maggie Vegetable bouillion cubes for that extra flavor.
Just before I was ready to serve the soup (about 15 minutes),
I added 2 more cups of tomato juice and 2 cups of water to
loosen up the mixture. My husband and I just couldn't stop
eating the soup, it was hearty and rib sticking. This soup is
a meal in itself, serve it with some low fat bread and you have
a delicious main course. . . . It is hard to believe that this
soup is low fat.)
(I added corn and veggie boullion as she did but not the potatoes.
I also agree with her. This recipe improves with age. The flavors
blend, the tomato mellows. I added more creamed corn to the
leftovers and some broth. My son really liked this soup and it
was a life saver with him home for the holiday.)
- Nacho Potato Casserole, p. 6
(I need a little help with dinner on Tuesday. I've got several
pieces of bags of hashbrowns in the freezer that need to be used.
I've also got hamburger on the menu for Tuesday. So, I'm looking
for a recipe that will include both: ground beef and hashbrowns.

(I made [this] last night and we loved it. Another to add to my
favorites list. Yummmmm.)
(Well, It turned out very good. I was a bit skeptical at first when
I saw the way it looked after baking 30 min before adding the cheese.
But JoAnna came through again. It was delicious. My 12yo dd loved
it. My very picky 9yo dd looked at the toasted cheese top and said
"I'm not eating". Then I told her it was cheese and she decided it
might be ok. It was a bit warm for her especially since she could
"see" the green pepper from the salsa. . . . I can't wait. I will
be making it again, but maybe without so much green peppers and salsa.)

Sinless Hot Fudge Sauce, p. 7 -- Cooking Tips
(Ok Guys, here is the scoop on Jo's Almost Sinless Hot
Fudge Sauce. It is sheer heaven. The texture is so
velvety smooth and very lite and airy almost like eating
chocolate marshmellow fluff but with a slightly thinner
consistency. The flavor is just wonderful. We topped our
White Chocolate No Bake NY Style Cheesecake last night
(see Dessert Every Night! ) and all I can say is my
husband and I died and went to heaven. The combination
of cheesecake and this velvety smooth hot fudge just did
us in, all we kept saying was ooooooooooooooooh,
aaaaaaaaaaaah and then some. It was sinfully delicious.
If you haven't given it a try yet, please do so, I know
you won't be disappointed. This would be great on the
Blue Bunny Sugar Free and Fat Free Ice Cream that Jo has
spoken about in her newsletter. I am picking up some
today a Walmart which carries it. I hope all who tries
it will enjoy it as much as we did, I will be making it
alot. I am just wondering if I use the vanilla,
butterscotch, banana etc, cook and serve puddings and
make it the same way as the chocolate fudge, would it
taste as good? I guess I will have to experiment with
it and see. Why should we just limit ourselves to
just hot fudge -- skies the limit. Take care and enjoy!
