January 2004 newsletter
- Skillet Spaghetti, p. 9
(I made [this]. I did add chopped green pepper, celery and carrots, but found the result very tasty.)
("Pretty darn good" was Charlie's comment. We really liked this, and it's so fast and easy and all
in one skillet.)

(I made [this], and it was so fast and easy and it was a hit also. I did add some chili powder and
cumin powder to it, though. I gave a bowl to our friend Dan who lives across the road from us, and
he wants the recipe.)

(I made [this]. It got an A+ from my daughter and husband, and chicken is not one of his favorites.

Hot Italian Ham Pasta Salad, p. 5
(Has anyone tried [this]? It is so good. Dh had 2 helpings. Needless to say no leftovers last night.)
(I have made this recipe twice. Both times my husband raved about it. It's a keeper.)

(This was very good! Charlie said it was like other HE cakes and a little too heavy. But I will be doing
this again for me and others. Not quite as good from the freezer--a little soggy.)

(These were very good. A little work; more than some of the recipes, but not so much. That's the only
thing that would be holding me back from calling it a keeper. Charlie suggested that if you doubled the
recipe and made twice as many, the time would be worth it.)

(I made [these], and they are excellent.)
(I made [these] last night and I agree -- very good! Next time, I'd pull them out at exactly 20 minutes --
I was doing something else, and they stayed in a couple extra minutes and got just slightly dry. But
definitely a keeper!)

(I just made my first recipe off of the newsletter that I received this morning in the mail. It is [this].
Oh my gosh, it is to die for! I did a few changes. I used salsa ranch dressing instead of ranch, and I
used a cup of Rotel tomatoes with lime and cilantro! I may never eat a regular salad ever again!)

Cheeseburger Macaroni, p. 10
(Tried [this]. We like it, 1 son said I should have doubled the recipe. He ate two helpings, the other son
complained about the tomato pieces in it but ate it anyway. Although it said 4 1 cup servings, mine came to
5 servings. Recipe is also in Cooking Healthy Across America.)
(We love this recipe. I always double it and freeze the leftovers. They freeze real well. I don't like the
tomatoes either. Anytime one of Joanna's recipes calls for whole tomatoes, I just put in a can of tomato sauce
and it always turns out great! That's what I do with this recipe, too.)
(I had the last serving for my lunch today. Actually, we always called this recipe Goulash but never put chili
powder in it and used tomato soup instead of the can of stewed tomatoes.)
(Actually, I have been making this recipe for years, and we also called it Goulash. I have always put chili
powder in it also, but not the cheese.)
(We really liked this, and it's fast and easy.)

(Has anyone tried [this]? It's on my menu for the week . . . . I'm also trying to decide what to serve with it;
any suggestions or comments?)
(I made [this], and it wasn't that spicy, and I don't like chili powder very much, and I did put it in. I thought
I had cornmeal in the freezer, but didn't, so I used a small Jiffy corn bread mix for the topping. It was very
good and even better warmed up the second day. I can't remember what I served with it but probably had fresh
green beans. You could serve any kind of beans, black, northern white, kidney etc. How about a salad? DH had
two rolls with his dinner.)
(You could have a salad or fresh veggie tray, with a fruity cheesecake pie of JoAnna's. There is a really good
one in her HE Cookbook, p. 199. [Fruit-Cocktail Chiffon Pie] It's really great. That would soften the
spices from the casserole.)
(I would say definitely a salad. And, I would go with a kind of island type dessert or drinks, like pina coladas --
she has a great recipe for them, or sangria, and, hmmmm, a chocolate cinnamon dessert of which she has many.
That's very Mexican. That, or another island type dessert, like pineapple coconut bars, or a Hawaiian-style pie
of hers.)

(I made this tonight, and it was a GREAT veggie lasagne. It was a little watery, but I'm sure if it sat a little
longer before cutting into it, it would be better . . . we were hungry and didn't wait long enough! I'd cut the
Italian seasoning back to 1 tsp. next time . . . it was a little strong for us. This one's a keeper!)

(I made this with diced ham, instead of hamburger, and it was very good. I just love these "bakes" for Sunday
mornings - I need to make them more often!)
- Impossible Lasagna Pie, p. 4
(I loved this. Charlie said it didn't make him say "whoa". I will want this as a keeper for me to put in the
freezer.)

- I made the 3 recipes on the back page. All I can say is YUM YUM YUM.

- Olive Grove Lettuce Salad, p. 12
(I especially love the salad. I made subs the other day, and put some leftover salad in
them. Yum.)
- Italian Ziti Skillet, p. 12
(Yesterday, I tried [a recipe that was] excellent. [this one] I made half a recipe for the
two of us and still had some left over. I didn't have the mozzarella cheese called for, so
I used cheddar. I even used WW Core required whole wheat pasta.)
- Heavenly Coconut Cream Hash, p. 12
(I tried [this] and it is great.)
([This] would be great in a graham cracker crust, too. Yum again.)
(My other son ate up 3 servings of [this] and then looked for the last of it, but I had it
with my dinner.)
- Almond Rhubarb Coffeecake, p. 9
(I just had to have some rhubarb, so last night I made [this]. It only used a cup of rhubarb,
so I could pull enough fresh rhubarb. It is great - I had some for breakfast this AM, as well
as a piece last night. I did cut it in 9 pieces instead of 8, so think it figured 3 Points a
piece that way.)
- Spring Is in the Air Asparagus Quiche, p. 9
([This] is a definite keeper! I was afraid it had a little too much asparagus in it, but it
didn't for my family; of course, we're all asparagus lovers. I did leave out the nutmeg and
put in about 1 teaspoon dry mustard powder, though.)
- Cornbread Ring, p. 7 microwave
(Very good. Charlie went back for more, so I know it was very good.)
- Layered Lemon Pie, p. 1
(Just wanted to share I tried [this], and my husband ate almost the whole pie (not at once).
He's been eating lots of Joanna recipes and doesn't have a clue they're good for him.)
(I liked that pie also . . . . In fact, I made all the lemon desserts on the page (all good).
Doesn't JoAnna do a great job of making healthy, guy-approved recipes?)

(Since JoAnna brought it up in May's newsletter, I've been thinking about fixing [this]. I have
made it several times, and my guys like it.)

(I made [this] on Saturday. It is delicious--a real comfort food.)
- Mediterranean Loose Meat Sandwiches, p. 7
(Guess this one can be added to Favorites, as I've fixed it twice already, and the month is just
half over . . . . Jeffrey gave it a thumbs up, also.)
- Cheesy Chili Potatoes, p. 6
(These were very good and different. Something like I crave; I crave Tater Tot Nachos or Village
Inn Skillets. These will fit that bill. A little more work than some, just because of juggling
stirring two pans at once. I liked the cheese taste in the chili "sauce".)
- Macaroni and Beef Quickie, p. 7 microwave
(This was very good. And fast and easy to make. If I made sure I had 1/2 lb. of hamburger thawed,
this could be on the table in no time!)
- Sunrise Tacos, p. 9
(This was good and easy to make. It will make a good breakfast on a regular basis with barely little
more work than scrambling eggs. I would rather this hot breakfast than a bowl of cereal! Charlie
said it was good, but not Wow. He also said his taste buds weren't ready for salsa that early in
the morning. He might fare better with these as a supper!)
June 2004 newsletter

(I made [this], excellent. Definitely give it a 5 out of 5.)
(an easy way to doctor canned peas for a quick side)

(Then I made [this] -- once again amazing. However, I made a bit of a change. I used the
hashbrowns that already have pepper and onion in them, as I am highly allergic to raw onions
and didn't have anyone to cut them up for me.)
- Blueberry Pineapple Crisp, p. 1
(This was VERY good. DH flipped over it. . . . with [this] Blueberry dessert rating a favorite
place. I had bought blueberries and made this dessert and one from Light & Tasty, and I preferred
this one hands down.)
- Impossible Breakfast Pie, p. 9
(This was really good to both of us. It was going to be a keeper, but Charlie wanted to see how
it reheated the next day first. It passed that test too. Yum!)
