The Heart Smart Healthy Exchanges Cookbook (Best of 1995)

Riviera Strawberry Pie, p. 219 (My 9 year old loved it! He told me his mouth thought it had gone to heaven.) (our very, very favorite) (another family hit) (Heaven in a Crust (May 2003 HE Newsletter, p. 1) rates right up there with [this]. They're both so good, words can't adequately describe how delicious they are!) (JoAnna asked that we list what our favorite pie is. . . . [This] is my favorite. They are all so good that it was really hard to choose a favorite. Chunky Chocolate Cream Pie (Arthritis, p. 234) and Hawaiian Pineapple Dew Cheesecake (Man in Mind, p. 254) are close seconds.) I think they look forward to seeing what I am going to come up with every day for their meals. It is easy with the Healthy Exchanges cookbooks.) (Got ready to make [this] and found I had no lemon jello. What to do?? Had some orange s.f. jello and substituted that. Added 1 t. lemon juice after it had cooked up. The pie was delicious. The orange color looked good with the peaches also. I don't think I will ever make it again with the lemon jello. Just thought someone else might be interested in this revision.) (Someone once wrote that they could purchase peach sf jello at Walmart and said it was awesome with the peach desserts.) (I have used peach or apricot ever since. It is a little more mello than the lemon, and we like it better. . . . I should say that this is one of the first pies I ever made, and we have it all of the time. I use it with canned peaches in the winter when I don't have fresh. In fact, I was going to make one today, so I better get going.) (Have to take a dessert to a party this week. What pie is your very favorite that you make alot and everyone in your family/friends love? Since there are so many I am having a hard time zeroing into one. I use canned peaches when I don't have fresh available, and I leave out the blueberries when I don't have them around, and it is still a very good pie. Not like traditional peach pie, but everyone that has tried it liked it. Says that it has a very refreshing taste.) (When you mentioned peaches, this came to mind. This is a pie I make with or without the blueberries, but it is a very good peach pie. It has been made over and over and over in our house. It was one of the first pies that I made. Chocolate Pecan Layered Pie, p. 230 (I really really loved this pie. Some of the dessert recipes that I try are basically just for me, but this one is one that I definitely plan on sharing. Possibly for Christmas dinner.) Father's Special Green Beans, p. 120 Yahoo Access ([This] is wonderful!!! It is definitely one of my favorites now.) (fantastic!!!) Cheesy Tuna Garden Skillet, p. 146 (my favorite [fish dish]) (I made [this] and substituted the 2 cups of carrots and green beans for a bag of frozen (thawed) cauliflower, broccoli & carrot, it was great. Of course this has got to be one of my very favorite recipes, can hardly stop eating it once I start. Thats how good I think it is.) (I made [this] just this last week also and I subbed a small bag of frozen peas and carrots for the veggies. It was very good. We rated it a 5 around my house. I imagine it will freeze well, so the next time I am going to double it and freeze half in the new Glad Ovenware. I have noticed the tuna is mushy also in all brands except Bumble Bee Solid White Albacore. Starkist and store brands are terrible. The Bumble Bee has a cheaper brand but I don't mind paying a little more for the Solid Albacore.) ([one] of my family's favorites) Cherry Cola Salad, p. 110 Vegetable Meat Pie, p. 162 (I worked all day, came home and prepared [this]. It started out shaky. I had a wee bit more turkey meat than the recipe called for, for the life of me I could not find the green beans, and I did not have a deep pie pan :( I took a deep breath, told myself everything would be ok...and it was :) I used my 9x9 inch pan and it worked beautifully. I put the pan back in the oven for the final 30 minutes, told my hubby to take it out when ready and start eating, and my sis-in-law and I took off for the gym. When I staggered back an hour and a half later, I had this wonderfully tasty healthy meal waiting for me . . . . I am taking bites while typing this. Oh my, it is delicious. The sauce that goes on top during the final 30 minutes is the best sauce topping I think I have ever had. Sweet with none of the guilt.) (See also Cola Chicken in A Potful of Recipes. Mexicalli Pasta Salad, p. 89 (I also made [this] most mouth watering, fiber rich, Pasta Salad. . . . His doctors and dietitians love fiber, and are forever telling him to add as much as possible to his diet. I never thought the combination of Rotini pasta, light red kidney beans, Fat-Free French Dressing, chili seasoning, and dried parsley flakes could taste so sinfully good. . . . DH was helping me shop Thursday & when I stopped in the pudding section, he grabbed an extra box of banana cream pudding to throw in the cart, in case I wanted to make an extra pie :-)!!!!!) Cheeseburger Noodle Skillet, p. 160 ([one] of my family's favorites) (I am wanting some One Skillet Meals that I can prepare and put into Rubbermaid-like containers in the freezer, so I don't have to heat up the kitchen when it is hot this summer. We don't have air conditioning, so I don't like to do much 'cooking' when it is hot. I'm looking for dishes that are freezer-friendly, that I can pop into the microwave to re-heat. Do you have a family favorite you'd like to share with me? . . . [This is] one of our favorites.) Momma's Porcupine Meatballs, p. 166 (I just wanted to share that I made [this] tonight and they are VERY good! I don't think anyone would know they are "diet" food. (smile) (Looks like one that could be prepared and put into the freezer for future use. I've been trying to prepare main dishes on the weekend that can be used during the week. It certainly makes life easier for me.) (Loved [this] that someone else was talking about too.) ([one of] the "most favorite" of my favorites) Mexi-Chicken Lasagna Bake, p. 151 (Tonight I made [this]. We really liked this it was very good tasting . . . . Blaine really liked it.) ([This] is really good. . . . It's one way to use up Salsa . . . . We will have this again I'm sure.) (really good!) James's Quick and Thick Chili, p. 69 (a hit last night . . . I made a triple batch of the chili & those hungry men ate EVERY BITE!!) (I liked this one almost as good as Blazing Glory Chili, p. 84, Man in Mind.) Cliff's Calico Skillet, p. 184 (I've got another for you, [this]. I fixed it last night and it was a hit. DH gives it a 5 star rating. I'd probably go with a 4 but hey, this is a snap to fix, mostly open cans and dump. Dinner is on the table in no time flat. DS finished the other half skillet when he got home from a ball game so I'd say he liked it too. I served these bread sticks [Cheddar Cayenne Twists] with it. They have a bit of a bite to them but are additive and not bad if one doesn't eat too many (oh, oh).) (Easter Menu? . . . here's what we're having for dessert at Easter this year. It's soooooo good.) (Also a note on rhubarb. You can buy it in the spring at the grocery (hopefully soon). It looks like red celery sort of. The leaves are poisin so cut them off. Jo has a lot of recipes for it. If you find some, try Grandma's Rhubarb Sauce, p. 291, in Potful. I remember I wanted it thicker than it turned out, and it may be the batch of rhubarb, so I cooked it down more on the stove (like applesauce). This is really good on ice cream and very low cal. You can have a large serving for around 30 calories I think it was. Yummy. I found rhubarb through JoAnna - another reason I'm grateful to her!) (You can also buy the rhubarb frozen (already cut up). That's the way I buy it. I just made a double batch of [tis] and, man oh man, it looks fantastic. I can't wait to get my teeth into it. Best of all it's so low in the calorie (or point) department. I follow the WW and it's only 2 pt. for a piece. THAT's my kind of dessert.) (This isn't cake, but OH is it good! Give it a try.) Blender Key Lime Pie, p. 236 (This was a hit with the whole family.) (I have made [this] several times. One of Dexter's (son's) favorite JoAnna desserts and the rest of us love it too.) (JoAnna asked that we list what our favorite pie is. . . . . . . love [this], which I might just add, everyone at my Mom's Heart Rehab classes loves it too!!! Reuben Pasta Salad, p. 96 (Does anyone have ideas for cold lunches?? I don't have access to a microwave. . . . [Try this] . . . a favorite) Mediterranean Carrot Salad, p. 80 (This was marvelous. I didn't have green peppers so used red. Next time I'll use both. And I didn't have French dressing so used Catalina. It was so tasty and sweet and hubby said he wants all his veggies to taste like this.) Blueberry Cheesecake Dessert, p. 242 Yahoo Access (This might satisfy your craving.) Grandma's Cucumbers, p. 78 (I never met too many pickled things this family doesn't enjoy.) Beans and More Beans, p. 129 (Made this one last night and my daughter, her BF and I loved them; I was craving baked beans and this hit the spot. I think hubby would enjoy this one too as he loves beans, but he is off working.) This recipe is a cheesecake flavored with rhubarb and strawberry jello. Very good flavor to it. We went to my inlaws for dinner and I took this pie and it was a hit. I was surprised that my father-in-law even tried it, because he is a pumpkin pie eater every night! When we were getting ready to leave and I was packing up what was left of the pie, he said hey where are you going with that? He wanted me to leave him another piece for the next night.) (I was wondering if anyone would give me their favorite cheesecake of Joanna's. . . . [this one] [one of] our favorite cheesecakes. I almost never made cheesecakes before Healthy Exchanges, now I make them often and my husband loves it!) Maple Cornbread Muffins, p. 269 (I made these with only 1/4 cup maple syrup as 1/2 cup seemed like too much & they turned out great, sweet but not overly so. But they kind of had a popover effect & got all hollow inside - tasted great & were very amusing to the toddler!! :-)

 Heavenly Blueberry Salad, p. 99
    (I made [this] before; it was excellent.  I made it for a party and got many comments on it.)
    (My grand-daughter is here for a visit, and wanted to cook something for our dinner tonight. 
     So, I gave her Heart Smart, and told her to pick out something.  She made [this].  If you 
     haven't tried it, you are missing out on a great light dessert.  And it makes a good-sized 
     serving, for 107 calories!  We used loose-frozen blueberries straight from the freezer, and 
     they worked out just fine -- in fact, they helped it set up even sooner.  We did add about 
     1 Tbsp. of Splenda in with the creamy layer on top. . . . It made a perfect finish to our 
     dinner, and I think it would make a refreshing snack anytime.  Great fruity combination of 
     flavors.)
    (I finally got around to making [this].  It was great.  I will be making it again.  I only 
     had one problem.  When making the whipped topping with cream cheese and Cool Whip it was
     lumpy.  I let the cream cheese sit out for a few hours and used a wooden spoon to blend, but 
     just couldn't get it smooth.  Any suggestions? . . . 
          You know I have always had that problem with the fat-free cream cheese-until this weekend. . . . 
     This time I got the cream cheese in the round tub that is already softened.  It blended so 
     much better.  I'm going to use that from now on instead of the block fat-free.
          I have a little of that same trouble, but I let my granddaughter work away at it with 
     the whisk for quite awhile to soften the cheese.  That helped, and she enjoyed it. . . . 
     Glad you liked the salad. . . . I think it's about the best thing I've ever found to use my 
     frozen blueberries!  We love it--gotta make it again soon.)
    (Anyone have suggestions for good dishes to take to potlucks?  
     I'll start -- took this to a church potluck today and everyone raved about it.  They were 
     amazed to know it was "diet".  Needless to say, there were NO leftovers to bring home for 
     tomorrow :( ) 
    (I've made this several times -- by my husband's request!  I have decided to make a small 
     change in the recipe.  I believe I like it better without the ff cream cheese, just use Cool 
     Whip on top.  I served this at a family dinner, and received rave reviews!)
    (At this time of year you keep seeing colorful advertisements showing July 4th desserts to 
     make.  I don't believe very many of them are low cal.  Has anyone got suggestions for red-
     white-and-blue desserts to make from JoAnna's recipes? . . .
     [this one]  It's one of Jo's "sweet salads" that look and taste very much like dessert to 
     those of us not from the Midwest!  Anyway, it tastes wonderful!  I would make it in a 
     rectangular dish (7x9" is almost same size-wise as an 8x8" pan), so that it would be more 
     "flag shape".  Or double the recipe if you've got a crowd around, so it would go into a 13x9".
     Then, as you will see, it has a top creamy layer that is made with the cream cheese.  I would 
     lay blueberries over it for the field of blue (pretty close together), and maybe add strawberry 
     slices in rows with some of the white showing for the white stripes.  If the strawberries are 
     quite large, I might cut them in half, and then slice crosswise to lay sort of side by side, 
     alternating the straight side of berry slice up, next one down, then down again, to get a 
     little more uniform "red stripe".  Then, skip the coconut altogether, or just sprinkle 
     lightly between the rows of strawberry-slices for the white stripes.  And, if you wanted to 
     fuss just alittle more, you could tuck in mini-marshmallows in among the blueberries as 
     needed, to make "stars".  Shouldn't upset the counts by a whole lot, I wouldn't think.  
     I've only made it with frozen blueberries back at Easter time, and it was TOTALLY yummy 
     then.  Using fresh should make it even better, I'd think.)

    (This was awesome, more than a *****.  We used fresh cauliflower instead of frozen, but believe 
     we will be serving this during the winter months using frozen.  Also, think I will try it with 
     dried basil as a different taste.)
 Carrots Supreme, p. 121
    (***** (Plus)  Oh, did I love this one.  You know JoAnna, if I was asked which recipe of JoAnna 
     Lund's would you pick, I would have a very hard time, but this one would be right up there.)

 Pam's Meatza Pie, p. 170
    (This was great and reminded me of lasagna.)
    (This one was a keeper.  Very flavorful.  And easy to put together.  DH was the one who made it! 
     Nice size servings too.)

 Mushroom-Scalloped Potatoes, p. 126
    (Everyone really liked this.  I decided to use the same method of preparation for this dish as 
     German Scalloped Potatoes (from Make a Joyful Table, p. 167).  This required using cooked potatoes, 
     so I cubed them and then cooked them in the microwave oven.  This way, it didn't take as long 
     in the oven for final preparation.  This is one of the dishes I had to abandon on my "do-ahead" 
     schedule.  However, I did make it early in the day on "dinner day".  I decided to add a couple 
     of other ingredients that were not in the recipe.  I decided that Hormel's Bacon Bits would add 
     a nice flavor.  I also added some low-fat cheddar cheese.  I was making a double recipe so it 
     was about 2/3 cup bacon bits and about a cup of cheese.  I probably wouldn't add the cheese next 
     time; it didn't do much for it.  However the bacon was very good.  I'm sure it would have been 
     very tasty without the bacon also.  My son-in-law said it smelled like stroganoff.  It does have 
     mushroom soup and sour cream in it.  Now, I have to make a short additional comment.  My son-in-law, 
     who does all the cooking in their family (our daughter doesn't like to cook), would NEVER, NEVER 
     knowingly eat or prepare anything fat-free or low-fat, or anything with artificial sweetener in 
     it (because he "doesn't like it").  He liked these desserts and potatoes in spite of this.  My 
     daughter knows what I used; needless to say, I didn't enlighten him.)
 Macaroni Cheese Bake, p. 135
    (*****  This serves 2 and is absolutely a comfort food, and you can have this and not have 
     leftovers to eat second helpings.  Hurrah, JoAnna.  Thanks for stopping me from having seconds 
     of one of my favorite comfort foods.  We served it with 1/2 cup canned diced no-sodium added 
     tomatoes.  Oh, it was sooooo good!!)
 Oatmeal Chocolate Chip Cookies, p. 202
    (These were wonderful, and all of us loved them; they didn't last long in the cookie jar.)

 Partyline Kahlua Cheesecake, p. 239
    (My suggestion for the [HE dessert] challenge would have to be [this].  No alcohol of course, but 
     if you enjoy the flavor of coffee, I can highly recommend it.  It's a mild coffee & coconut flavor 
     plus chocolate & pecans; we liked that it wasn't really super-sweet, but oh-so-creamy and delicious
     (and of course, you can add extra sweetness as you'd like).  It's very rich cheesecake, and a small 
     serving with a good cup of coffee is PERFECT.  I laid chocolate graham crackers into bottom of 8" sq. 
     pan, and spread the cheesecake mixture on top (and with the calories I save this way instead of the 
     commercial crust, figured I can afford a little dollop of Cool Whip Lt. on top!)  I've made it several 
     times . . . in fact, stirred it up again today at Hubby's request!  Although I've made several others, 
     each time he says, "This is good, but I like that coffee one better!  When are you making that one 
     again?")
    (. . . typo in the recipe I'd suggested during the recent challenge for new dessert recipes we've enjoyed.  
     I inadvertantly left out the amount of pecans in the recipe:  it should say 2 Tbsp (1/2 ounce) chopped 
     pecans.)
    (I made [this].  It's so good and will now take the honor of being tied for first place in our house along
     with Rocky Road Cheesecake (Dessert Every Night, p. 167). . . . Also, do you usually add 1 tsp. coconut 
     extract?  I find 1 tsp. to be overwhelming in any recipe . . . I added 1/4 tsp. to the cheesecake, and it 
     gave it just a hint of coconut . . . just right for my taste.) 
    (So glad that you tried the Partyline Kahlua Cheesecake.  We also had one this weekend - I think we've had 
     it about every other week since I first found it; we like it THAT well. . . . Yes, I decreased the coconut 
     extract this time too . . . kind of by accident as the bottle only had 1/2 tsp. left.  I love coconut and 
     expected that I wouldn't like it as well, but turned out liking it even better.  Let's the coffee shine 
     thru . . . SO yummy.)

 New Orleans Bean Soup, p. 71
    (I fixed the BEST dinner last night.  It was [this].  I used black beans rather than kidney beans, because 
     my family likes them better.  I cooked rice to add to the bowl like gumbo if anyone wanted, and it was a 
     hit!  I really do recommend it.)
 Dijon Green Beans and Pasta, p. 140
    (Now this is a great green bean casserole. I used whole wheat rotini.  It went perfect with a piece of 
     grilled chicken cooked on the Foreman grill.  Delicious!!)  
 Stroganoff Macaroni and Cheese, p. 136    Yahoo Access
    (5 Stars all the way!!!  This is my new favorite recipe.  Loved the extra flavoring that the sour cream 
     gave to this.  I will be making this again very soon!  I used whole wheat macaroni.)

    (This gets 5 STARS!!  I loved this salad . . . and will be bringing it out the next time we have company
     over for dinner.  If you like spinach, radishes, cucumbers, green onions, eggs, and ranch, then you will 
     LOVE this salad!)
