(My notes: When I made this pie I used a graham cracker crust because that's what I had on hand. And I put the coconut in the Cool Whip Lite that was spread on top of pie and sprinkled the mini chips on top. Either way you make it, I'm sure it will be delicious. Another thing is I used sliced almonds in the pie, again that's what I had on hand.) (This is my husbands favorite pie. If you haven't tried it, please do, you will not be sorry.) Applesauce-Oatmeal Muffins, p. 225 (I bake [these] often.) (These have a great flavor and a wonderful texture.) (This is one of my favorite muffin recipes. Try it, you'll like it.) (My 18 yo son devoured [these] that I made the other day.) (I thought I'd throw my two cents in! I made [these] last night and baked this morning. A little tinier than I'd have liked but the flavor was great . . . with a caveat. I added between an 1/8 cup and 1/4 cup of apple butter to the recipe. I often add my own little tweaks as I'm sure most homestyle cooks do. I also substituted 1/4 of the white flour for wheat flour because I like the taste/texture it gives.) Carrot-Apple Salad, p. 76 Simply Superb Banana Cream Pie, p. 203 (top of the list) (JoAnna asked that we list what our favorite pie is. . . . Ours is hands down . . . [this]. That is, if I have to pick just one!!!!) Becky's Southern Banana Butterscotch Cream Pie, p. 202 (I had done this one way back when I got the book; way back when I wasn't using dry milk, but skim milk. I couldn't remember it. It was very good. Charlie liked it despite the instant pudding mix.) Carrot Salad, p. 73 Green Bean-Carrot Salad, p. 74 (very, very good) (Gooood) (This has a vinegar & oil, sweet & sour type dressing (no mayo) with fresh parsley.) Kidney Bean Salad, p. 83 (I have to say that I just love [this].) Chicken-Corn Chowder, p. 64 Chicken-Cabbage-Noodle Soup, p. 65 (***** It was cool enough to have this m-m-m good. This will be a great one leftover in October from the Thanksgiving turkey, and after Christmas.) (Love the soup, really comfort food.) Cliff's Macaroni-Pea Salad, p. 92 (My daughter made [this], and it was worthy of trying again.) (Took this to a family reunion, brought home an empty bowl!!!!!) He's been good eating wise, and it wasn't a huge portion . . . and the first thing out of my mouth was "Oh, I like Joanna's version better.") (My DH loves Fettuccine Alfredo and this one got 4 stars when I served it. Add your chicken on the side or mix it in if you wish.) My daughter has joined me and I'm cooking for the entire family (big plus) by using JoAnna's recipes. I've made many recipes this week, but the all time favorite has to be [this]. I didn't have the green onions, so I omitted them. I also chilled my rice (used instant from another meal that had been cooked in chicken broth) a day before using on the stir fry. I fried the carrots with the ham for a while (shredded the carrots with a potato peeler so they'd be thin) to soften the carrots (husband doesn't like crispy). I also cooked the peas (large frozen green ones) until just tender and cooked that with the carrots. A big thumbs up from the family! 8-). ) (I usually cook extra rice too. The leftover rice makes great fried rice from the Healthy Exchanges Cookbook.) ([This] is one of my family's favorite HE recipes. It was one of the first I ever tried. I think I will make it this week.) (I made [this] but used chicken instead, because that's what I had, and it was sooo good. I also added an extra cup of shredded carrots. Salisbury Steak, p. 153 (This is my favorite Salisbury Steak of Jo's! It is really really good!) I thought I had a different man in the house last night when I made [this] . . . it's not fancy by any means, but by gosh he liked it! He wanted more, yet fearful of trying something new, I didn't make very much . . . he said "you can make this again that's for sure . . . where'd you find the recipe?" Well, little does he know about this website and it finally opened the door to tell him about it. I don't know about yours, but cooking is not one of our top conversations in the evenings! More like his work, hunting and hound dogs! Kinda like Men are from Mars, Women are from Venus . . . just call me Venus!!! Hellooooo. . . . nonetheless, he made me happy by complimenting dinner, thanks Joanna.) (My husband made [this] today for lunch. Mmmm, was it good. The meat part tasted exactly like salisburry steak, and he used ground turkey. The gravy did taste a little like ketchup though, but it was still good. Without the ketchup, it may taste a little more like the real kind of gravy. Either way, though, I thought they were excellent.) Party Turkey Tetrazzini, p. 166 (Just wanted to share with you that I tried this recipe. . . . It was very, very good and will definitely be a repeat of mine! I can see why Joanna said it was one of her favorites!) (It is a favorite of mine, also. I usually add a little milk to it. Sometimes I enjoy adding a can of Ortega chopped green chilis, drained (4 oz). Just gives a little extra zip, to vary it a little. Also I have used Cream of Chicken soup, instead of Mushroom. It is good any way you fix it!) (5*) (What is your all-time favorite JoAnna main dish recipe? [This is one] of my favorites. . . . It was the Tetrazzini that led me to JoAnna's HE website and started me buying her books. A variation of that recipe was published in Cooking Light, and the article included the HE website address.) Fruit-Cocktail Chiffon Pie, p. 199 (If you and your husband want to try something that we think is really good, try [this]. YUMMY! I made it yesterday and 2 of my grandkids each wanted 2 pieces as well as my husband. I had to fight them all for my piece.) (. . . with a fruity cheesecake pie of JoAnna's. There is a really good one in her HE Cookbook. [this one] It's really great.) ([This] would be an excellent choice to fill that pie shell.) Triple-Layer Party Pie, p. 209 (either made with butterscotch and chocolate or anything else with chocolate. I've used chocolate with the chocolate and white chocolate with the chocolate and vanilla with the chocolate.) (no crust, great!) (JoAnna asked that we list what our favorite pie is. . . . Hawaiian Strawberry Pie (Best of Healthy Exchanges Cookbook, p. 144) has to be my favorite. . . . It is absolutely fabulous! JoAnna says this is her favorite all-time recipe and I can see why! [This] "ain't half bad" either!) Salsa Dip, p. 227 Scroll down after clicking on this link to see: Healthy Jo's, p. 156 (We love [these]--we just had them again this week. Charlie would prefer them over any other sloppy joe!) (These are fantastic.) (Another classic recipe. I had made them before and loved them. I wanted Barry to try them, and he had 3 sandwiches!!) (Loved everything -- I ate the last of it today for lunch on rice instead of a bun. It was good that way, too.) (I like to make [these] and put one serving each in individual baggies. I then freeze them and grab one for lunch with a bun or baked potato. Very handy. I like having a warm lunch in the winter.) Cheesy Tuna Noodle Bake, p. 167 (I made [this] and now I know why I had it ear-marked. It is indeed one of my favorites. Comfort food......yes Mam.) (It is very good although it serves 6 so the servings are small.) Choco-Mint Pie, p. 211 (I made the Choco-mint pie and it is great. I erred and bought the low-fat Keebler graham cracker crust instead of the chocolate which would probably have been better and prettier, but it tastes fine in the low-fat crust. I cut it up and put the extra pieces in the freezer in individual containers so I can eat a piece every now and then. It is just too tempting for me to have the whole pie in the fridge.) (My hubbie used to be employed as a professional chef. Finding recipes like these that are tasty, healthy, easy to put together, inexpensive AND meet his approval are a god-send. So far I've made the Stroganoff Meatballs (Jan. 2000, p. 1) and Choco-Mint pie (took it over to my parent's house for dinner, my Dad declared them both a "winner" and hubbie cleaned up 2 servings! ) (It [Choco-Mint Pie] is really good, and easy! I just ate my piece for the day! ) (Oh, loooved to find out it also tastes like York Peppermint Patties ... that's Hubby's fave candy treat ... and Son loves the Andies candies at restaurants after a meal! So this should be an easy hit with us ... and you can actually make it during a tv commercial???!!! That's awesome! ) (I have been going to Weight Watchers for 12 weeks and have lost 22.8 lbs. Since learning of the HE Cookbooks I have used them for most of my recipes. Love that most of the recipes can be frozen, so that makes throwing together good meals possible without a lot of work. Recently I had company, and could just grab this and that out of the freezer and have quick meals as we were always on the go, and my company really thought I was a terrific cook (ha!). I served the Choco-Mint Pie, and received the comment, "Now you CAN'T LOSE WEIGHT eating that!!!!!") (This was great. I varied it a little . . . instead of adding mint extract, I used peanut butter extract, and added 1 T RF peanut butter to the pudding mix. Guess I was just in the mood for peanut butter.) Chocolate-Peanut Butter Pie, p. 210 (Mmmmmmm, this was so good. I made it again today! :) Scrumptious! My family just loves Peanut butter pie...this could stand up to any of their full fat, full sugar, full CALORIE pies!) (I was going to mention yesterday about peanut butter cravings and forgot. I love [this]. So far that is the family favorite. That maybe why I don't really crave the peanut butter. This one freezes so I do have pie for later in the week. I make this at least every other week. Sometimes once a week. :) (It is my sons favorite pie and I make this alot for him.) (The pies (Black Forest Pie [see below] and [this one]) were a hit!!!! Rave reviews and recipes wanted from some of the ladies that were at our social. If you have not tried these pies you might want to. They were the easiest to make too!!! I love that!) ([This is one of my] favorite desserts, and I am not a big fan of Peanut Butter. But [it reminds] me of a Reese's, and sometimes I want to indulge, so this satisfies me.) (Here is my son's favorite peanut butter pie.) (This was always one of my favorites and the first thing I made after I joined this club and got the recipe again. . . even my husband had a taste and thought it was good.) (yummy!!) (my personal favorite) (I also made [this] (one of our favorites!). I always make my pies without the crust to save on bread exchanges. This time I just threw everything except the Cool Whip into the blender, blended a couple of seconds and poured into little bowls.) Black Forest Pie, p. 196 (My father asked for that for his birthday . . . .) ([This] was a big hit at church monthly dinner and I don't tell them it's sugar free.) (We really liked.) (This was my first JoAnna pie and is still my DH's favorite.) Mandarin Orange Salad, p. 106 (I just got back from my first weeks weigh in. I am down 9 pounds. I feel really good and was not hungry at all. If anything, I actually had a hard time getting in my minimum points. I tried 3 of Joanna's recipes this week also. They were [this]. Did the point value and it was only 1 point per serving. I found it to be excellent. You could almost use it as a dessert as well with a little dab of Cool Whip Lite on top. The other two were from Make a Joyful Table. Creamy Cajun Turkey Skillet and Cabbage Rolls Skillet. These were also very good.) Scroll down after clicking on this link to see: Blueberry Yogurt Muffins, p. 226 (These were great! You know how I'm always saying they are too heavy? These tasted like "real" muffins.) (Enjoy! These are marvelous. Just remember not to overmix the batter.) (Unlike most blueberry muffins recipes, these actually have enough fruit in them to satisfy my blueberry-loving teenager without being too wet & goopy or too tough. These are almost a little cake-like, really excellent!!) (I made these today to take to Bible study. They were a big hit and I'll definitely be making them again. I thought I'd have some left to take home, but no such luck! I used fresh blueberries and made a double batch. It made 18 huge muffins. I'm sure you could get 12 muffins out of a single batch. [Recipe says it makes 8 -- single batch.]) (I really like these.) (My church is having Muffins with Mom next Sunday for Mother's Day. I volunteered to bring a dozen muffins. I'm looking for a kid pleaser that is also HE friendly. . . . Anybody know of a really good one? . . . These blueberry muffins are excellent and one of our family favorites.) I can't believe I can have 2 servings, a huge 16 oz. glass, for my snack. JoAnna, you were right--it's fantastic! Charlie said it was OK, but didn't make him want to run for more.) Amana Coleslaw, p. 81 (with horseradish) (We've made this three times now, I wasn't a coleslaw fan before this but this made a believer out of me!! Not too sweet, not so much dressing that the veggies get soggy, if you like a more savory coleslaw with a bit of bite, this is your dish!) (I'm at the computer because my almost 2YO DD just stole my bowl of Amana Coleslaw!! :-) But my toddler will eat ANYTHING as long as I'm eating it too - I started feeding her the same food as the rest of the family as soon as she had enough teeth & a mature enough digestive system to handle it. Oh, sure, she has her preferences & some days she'll eat certain things & then the next day not eat the same food, but still as long as what goes into my mouth is healthy, she eats healthy too.) Creamy Chicken Stir Fry, p. 164 (Last night, my hubby, daughter and one son went camping with church kids and that left me and my 15 yr-old son to have dinner alone. We celebrated that the "creamy-food haters" were gone (there really ARE such people) by having [this], only I used her homemade fat-free cream soup since I didn't have canned...and my son LOVED it! He laughed and said "No way!" when I told him it was fat free. Now, would I joke about a thing like THAT?!) (I LOVE the creamy chicken stir fry - its one of my all time favorites -- and SO EASY!!) Creamy Italian Tomato Salad, p. 72 (. . . like to make a beef wrap (using lean deli roast beef) using some of [this] in it.) Italian Kidney Bean Salad, p. 91 (For lunch, I made [this]. I really liked this one. The only thing I did different was the dressing. I used 1/4 cup ff Italian & 1/4 cup ff ranch. . . . I would make again.) Ham and Green Bean Casserole, p. 179 Yahoo Access (Just finished [this]. Delicious!! Best thing is my family like the recipes also, so I don't have to cook for me and something else for them!) (I wrote "Wonderful" above this recipe!) Cheesy Macaroni-Vegetable Bake, p. 138 (We like [this]. It has the broccoli/cauliflower/carrot mix in it. This was the first HE dish I made and it's one I still make frequently. My husband requests this often, and he's not on any kind of diet. He eats what I cook, and it's low fat and mostly sugar free. He just knows it's good. I substitute 3 ounces Velveeta Light for the cheeses in the recipe.) Potatoes Olé, p. 160 (I prepared [this] to have for lunch and supper today. It was really good. I made a mistake in preparing but think it will be ok. Instead of the "1 cup" of green beans and carrots, I added the whole can of each. Oops!! Had to put into a 13X9 dish. So I still went by the 4 servings and just counted having more veggie exchanges. Who would have thought cream of mushroom soup and salsa??) Blueberry Mountain Cheesecake, p. 213 (Cheesecake is probably my biggest weakness! . . . I have also made [this], and [it] got the 5 rating on the spreadsheet/tracker. . . . I just really haven't met a cheesecake that I didn't like!!!! Just wish I had more time to make them.) (I was wondering if anyone would give me their favorite cheesecake of Joanna's. . . . [this one] [one of] our favorite cheesecakes. I almost never made cheesecakes before Healthy Exchanges, now I make them often and my husband loves it!) Swiss Potato Soup, p. 61 (I have been using the recipes in Healthy Exchanges Cookbook for quite a while now. My family's favorite soup is [this].) Scroll down after clicking on this link to see: Jiffy Eggs Benedict, p. 220 (I had made [this] for our Sunday Brunch yesterday. This recipe is so quick and easy to make and so super duper delicious. If you haven't tried it yet, I strongly urge all to try it. I know once you try it, you will keep making it over and over again, just like I do. Who ever thought that something so simple could be so wonderful and tasty. Hope you enjoy it as much as we do. I have served this recipe for breakfast, brunch and even for a quick dinner when I am too lazy to cook. LOL) Frost on the Pumpkin Patch Pie, p. 207 (I still think, overall, nothing beats [this -- for a pumpkin pie]. This is the book I keep going back to. I like the . . . Mexicalli Pie, p. 150 (Re: Glad OvenWare: Well, I have used some of the freezer dinners. I re-cooked Mac & Cheese w/ Hotdogs (Kids In Mind) and Mexicali Pie (Heathy Exchanges Cookbook). Both reheated in the GladWare VERY well. I have yet to re-use, because I am storing the left overs, that is cool that I don't have to come up with little containers right away, I can just store in the pan and still have my glassware available if I get the urge for something else. Way cool.) (I took sewinlove's advise and tried this tonight. Boy was it good. We loved it. We added a little bit of ff sour cream on top, I used FF cheese instead of reduced fat and it was great. This is a keeper for us, but dd said she liked the enchilada pie I made last week better.) (If Enchilada Pie is better, I HAVE to try it! lol I love Mexicalli Pie, though. Last time I made it, I used Chichi's salsa. Now I have this really good papaya salsa from Costco and can't wait to try it with it. I would suggest parents whose childen don't like salsa to just leave that part out and add it individually for the family members who do like it!) (Tonight I am going to make [this]. It is one of my husbands favorites.) and . . . Meat Loaf with Vegetable Stuffing, p. 151 (I did add grated zuchinni to the meat mixture, about 3/4 c. It was really good.) . . . is one of my favs, just to name a few.) Tamale Pie, p. 155 (I've made [this] recipe several times. It's especially good with the fat free refried beans.) (I thought this was wonderful and it is going to be a favorite in my house.) Cabbage and Rice Casserole, p. 146 (The first time I made it I cooked it uncovered instead of covered as Joanna directed - well Joanna always has her reasons, it's much nicer this way!! :-) Plus its cheap, tasty & high in veggies that are easy to find in January (cabbage & canned tomatoes! :-) - and the servings are HUGE!!!! I first served mine & thought, that can't be right, this must serve 6 instead, but nope, 1/4 a casserole is right - great for those times when you just want to feel FULL! :-) Lemon Fluff Salad, p. 110 (It is absolutely sinful and yet only 2 WW points [for 2/3 cup serving].) (Really good -- I did add an extra can of fruit cocktail to the lemon fluff salad.) (Used Diet Mt. Dew instead of water.) Mustard Coleslaw, p. 79 (I've made it often and it is good.) (I made a double batch Sunday and the whole family thought it was great.) (Everyone loves this one.) (I just want to let everyone know that I tried [this]. My DH loves coleslaw, and I don't particularly care for it, so I made [this]; he liked it.) Mexican Corn Salad, p. 84 (I made it, but put red peppers in instead of olives. I liked it after it had sat in the fridge for a bit...) (I let it sit overnight in the fridge and brought some to work with me today. It tempted me too much and I had it for a morning snack. I thought it was great. I liked the olives but may try adding red peppers in addition to everything else next time.) Lived up to its billing and will definitely make . . . again.) Cherries Jubilee Pie, p. 197 (We have made this pie at LEAST 5 times - it is so easy & my picky DH loves it!! This really hits the spot when you are wanting cherry cheesecake but can't afford the calories :-) (This may not satisfy YOUR cherry cheesecake cravings, but it sure does mine! :-) (Everyone really liked this. I had originally planned to make Black Forest Pie from HE Cookbook, p. 196, which I'd made a long time ago and we really liked, but when we lost our power for 14 hours give or take and I didn't get my preparations completed the "day before" our dinner, I decided to make something that didn't require cooking and cooling. We've had [this] in the past, and we really liked it. My one difference is that I used canned water-packed cherries instead of bing cherries. I actually did make it once with bing cherries, and we liked the canned cherries better.) Does anyone have ideas for cold lunches?? I don't have access to a microwave. . . . Polynesian Salad, p. 90 (One of my favorite recipes using ham is [this].) (I am in serch of a good ham salad recipe. Can anyone tell me in which of Joanna's newsletters or coobooks has a good one to try? . . . My all time favorite ham salad is [this]. It's a staple here during warm weather days.) Au Gratin Cabbage, p. 122 (Here [is one of] the new recipes Dennis & I tried yesterday. We enjoyed [it].) Strawberry-Banana Split Salad, p. 111 (one of our very favorite recipes that we tried in May) Impossible Lasagna, p. 149 (***** Love it.) Creamy Cucumbers, p. 68 ([These] are great.) Hubby and I had an excellent dinner last night. I prepared:     · Chicken Pot Casserole, p. 161 (***** This was second time having this casserole. We added some of our own special spice combination and we loved it. It has been a bit cool here on the first week of August, so having a comfort casserole was great.) ([This] says it serves 4, but it is so plentiful, I shall cut the portions down where it will serve 6.) (What is your all-time favorite JoAnna main dish recipe? My all-time favorite main dish of JoAnna's is [this]. I love this recipe. The only thing I do differently to the recipe is add a dash of garlic. But then, again, I add garlic to everything! (Keeps the vampires away, you know!)) With this, I served a tossed green salad and:     · Tomato-Potato-Zucchini Pie, p. 127 (This dish is not only extremely flavorful, but it makes a pretty presentation also.) (Thanks, Carolyn, for reminding me of this recipe. There are so many good ones, sometimes we get caught up in tring new ones and forget about the old ones. I'm going to make it this week-end. I love this dish and have served it to company.) (It's wonderful.) ([This] is indescribably wonderful!! It uses shredded potatoes for the crust, with a layered filling of sliced tomatoes and sliced zucchini. I just cannot say enough good things about this dish.) (*****) (I know [this] was shared on this board earlier this year, but now is the time of the year to make it with everything fresh from the garden. It is absolutety delicious. One note . . . I used reduced fat pepperjack cheese instead of swiss. If you like something with a bit of a bite, the pepperjack cheese makes it an awesome meal.) (My all-time favorite side dish of JoAnna's is [this]. This recipe is to die for! It is so very good and good for you too!) (What is your all-time favorite JoAnna main dish recipe? [This is one] of my favorites. Femmy uses [this] as a side dish, but I like it as a main dish for a vegetarian dinner.) (And you are right . . . [this] is hearty enough to be the featured main dish in a meatless meal!) Dessert was:     · Fruit-Cocktail Chiffon Pie, p. 199 ([This] is out of this world. I believe this pie would also be good with drained pineapple in place of fruit cocktail, and I'm going to try that next.) (My Notes: I believe this would also be excellent to use 2 cups drained crushed pineapple in place of the fruit cocktail.) (This pie is one of my favorites! It is so good!) (I made [this]. That is really good. I have lost 19 pounds since Feb. and kept it off. I agree with you that it doesn't feel like a diet. I get to eat all these great recipes, and never feel like a dieter. I have a lot more weight to lose, and it is coming off slowly, but if I lose 20 pounds a year, in 3 more years, I'll be at my goal. That's a lot better than gaining 5 # a year for the last 19 years. Try that pie, it is great.) All three recipes were absolutely excellent. . . . If you try these three recipes, I believe you will really like them as we do.
