But because there is only Dennis & I, we froze half of it; we had the second part yesterday, and I have to say that it froze very well and we enjoyed it just as well as we did the first time around. . . . we sure loved it. Thanks JoAnna another hit . . . .) (This sure was fast and easy in the microwave! Charlie had to use his "magic fork" to push the green pepper out of the way. Otherwise he loved it. I loved it too--mostly for the quickness and easiness. The taste was very good too.) (What is the best recipe for freezing in small portions? Does anyone have a favorite to do that with? I know the books have that little snowflake by recipes that are supposed to be good frozen, but has anyone tried it? . . . When my freezer worked, I used to do it all the time. I'd freeze single servings for lunches to take to work (or hurried dinners). [One of our favorites is this.] . . . I've frozen single servings of the pies that are recommended to freeze. They also were wonderful when thawed.) (I am wanting some One Skillet Meals that I can prepare and put into Rubbermaid-like containers in the freezer, so I don't have to heat up the kitchen when it is hot this summer. We don't have air conditioning, so I don't like to do much 'cooking' when it is hot. I'm looking for dishes that are freezer-friendly, that I can pop into the microwave to re-heat. Do you have a family favorite you'd like to share with me? . . . [This is] one of our favorites. . . . NOTES : I had 3 cups leftover noodles to use one day so I increased the recipe by 1/2 except for the meat and used 3 oz low fat pepperoni instead of the additional ground beef. It was a wonderful meal! Also, I made it in a skillet instead of the microwave, I left out the sugar substitute and used more Italian seasoning.) I usually add 1/8 tsp. nutmeg, and I quite often use Jo's vanilla pudding recipe rather than the Jello pudding mix. What ever way it's made, it is delicious, quick and easy.) Bacon-Tomato Herb Dressing, p. 208 (We tried [this], and it is very good. It is also only 1 pt. per ¼ cup. JoAnna’s also has a recipe for Tangy Tomato Bacon Dressing [Dec. 98 HE newsletter, p. 4] that is better than Kraft's.) Grande Breakfast Hash, p. 212 (I add diced chili pepper.) (We loved this one -- great when you want a hearty breakfast on a cold morning.) Tex-Mex Fiesta Casserole, p. 155 Almond Surprise Apricot Pie, p. 191 (It's really great.) (my very favorite HE pie. to date anyway!!) (Next time I make this I am going to try it with raspberry or strawberry fruit spread, and use vanilla instead of almond extract. Another combination I think sounds good is to use blueberry fruit spread, and use lemon extract in the pudding mix. Enjoy! We always do.) (I also just put [this] pie in the fridge, and I'll put a piece of that in my lunch tomorrow. If you've never made this pie from F,C,& E, try it. It tastes so rich and decadent!) I almost never made cheesecakes before Healthy Exchanges, now I make them often and my husband loves it!) Chocolate Fanciers Cream Pie, p. 200 (If you are craving chocolate this is the one for you.) Lemon-Chocolate Ambrosia Cheesecake, p. 202 (to die for!) Confetti Macaroni & Cheese, p. 127 (my all-time favorite Mac & Cheese recipe of Joanna's) Boardinghouse Dilled-Pea Salad, p. 93 (This was great!) (I just made [this] for lunch. It's delicious and only 2 points per serving!) I make it all the time substituting lemon for lime.) (I usually omit the 1/4 lime and use lime yogurt in place of the plain yogurt instead. For the Lemon Chiffon I do the same by using lemon yogurt.) Hasty Rice Pudding, p. 182 (I have made [this] three nights in a row - my family absolutely loves it. This is wonderful warm or cold!) Private Label Hot Cocoa Mix, p. 217 (I wanted to share [this]. This hot cocoa is so rich and delicious.) (I have made the hot cocoa and I agree this is very good.) (Last year I gave my WW friends a batch of [this] with a mug. . . . It was well received by everyone on my gift list, and most of them asked for the recipe. With a cute holiday mug, it made a very nice gift.) (I think I would add a little vanilla whenever I stir up a cup.) Applescotch Pudding Treats, p. 172 Diner-Style Burger Soup, p. 78 (You were saying you wanted a good hamburger stew for dinner. I just wanted to share with you my favorite one. [this one] It's really good.) Cabbage Meatloaf Patties, p. 145 (That is an excellent recipe by the way. My husband and son love it.) (I substituted peas and carrots for green beans and left out the mushrooms. I hope you enjoy as much as we have.) Marinara Bread Casserole, p. 120 (Haven't had this one in a few months, and I absolutely love it. . . . A favorite of mine! I always think of it as pizza dressing. I may have a dish of applesauce with it, and some green beans.) (Looking forward to dinner, we're having [this]. It's one of my favorites. If you've never had this one, please try it!) (I made this one yesterday, . . . and it was great! Kind of like a Pizza dressing/stuffing. The only thing I would change is to cook it 30 minutes, then add the mozzarella cheese on top, and bake for another 30 minutes. I like my stuffing a little drier. Nice big servings at 3 pts apiece. I also added roasted minced garlic (from a little jar i bought in the produce section) to the onion and peppers when I was sauteeing them.) Midwest Scalloped Chicken and Corn, p. 139 (Hey there! Last night I made [this] . . . man, that was good! Kinda like a mac & cheese w/chicken, corn, celery & onions . . . my family really liked it. . . . NOTE*** I never even transfered to the baking dish . . . served hot right out of the skillet . . . much faster for me when all are yelling for dinner.) Turkey Hot Dish, p. 136 Apple Pie Pancakes with Applesauce Cream Topping, p. 210 (This is definitely a keeper. Tastes far too good to be healthy. Nice size portion. Wonderful for breakfast, or for a brunch.) (***** We found it a bit bland, so we sprinkled some of my salt free spice on it, and it was awesome.) Campfire Simmered Beans, p. 116 (Does anyone have ideas for cold lunches?? I don't have access to a microwave. . . . If you like beans (northern, kidney etc.) some of her hot bean recipes such as [this] are good as a cold side dish to a sandwich or on top of a green salad.) Baked Macaroni and Cheese with Tuna, p. 134 (great, and another comfort food) (***** Dennis and I both loved this version of tuna casserole like my mother used to make.) (***** We loved it. . . . If you like Tuna Casserole and you like Macaroni & Cheese, you will love this recipe. We loved it!) (This has become our Tuna Casserole. It is a combination of Macaroni & Cheese along with the Tuna, makes this super!) (Loved it!! My husband is not a tuna fan, so I had this all to myself. I used whole wheat macaroni, and I actually got sad when I ate the last bite . . . LOL. Will definitely be making this again!) (another great recipe!) (This was real good. We both needed to put a little salt on it to give it the flavor we were looking for.) Chicken Vegetable Noodle Soup, p. 75 (It was cool yesterday and this hit the spot for lunch.) I made several of JoAnna's recipes and I got rave reviews on all of them. I had to give several people the Taffy Apple Salad recipe. I made The Best Baked Beans (Make a Joyful Table, p. 170), Taffy Apple Salad (HELP Cookbook, p. 246), [this Lemon Fluff Salad], Baked Hash Browns au Gratin (Make a Joyful Table, p. 166) and the Deli-Style New York Cheesecake (Cooking Healthy Across America, p. 88). Everyone kept raving at how good everything was, and I was able to tell them how healthy they all were and brought out all my Healthy Exchanges books. . . . [My MIL] doesn't like complicated recipes and ones with exotic ingredients. I had been telling her about how good the HE recipes were and finally had a chance to demonstrate to her. She took several of the recipes home and I now know what I can get her for Christmas . . . some HE cookbooks :-) Thank you, JoAnna for making my party a success and for helping me to shed 46 lbs and feed my family good food at the same time. (I had a family reunion over the Labor Day weekend and took the Caramel-Apple Salad from the September 98 HE newsletter, p. 1 and [this]. They loved it!! I did not tell them until later, the second day, that it was a healthy recipe. My FIL took the leftovers home!! It was a good way to try a new recipe.) I am cooking exclusively from Joanna's books right now and having a blast. Last night I made . . . Easy Pizza Meatloaf, p. 146 (We loved it!!! It was cooked in the microwave. All I did was make some pasta and throw some sauce on it and dinner was served!!) ([This] is out of this world. It takes longer to get everything read, than it takes to cook it.) (Also, one that I and the girls enjoyed a lot was [this], served with pasta on the side.) (I've just started using Healthy Exchanges recipes, so most of you may be familiar with these, but I wasn't, so it might not hurt to remind people. I tried some new recipes this weekend. They were outstanding; my family loved them. [One of them] was [this one]. I had no leftovers. They were simple to make, and I know that I can make more than one and freeze them.) (I tried [this] - this was excellent. My family loved it and said it was a do again.) I also made . . . Mom's Salmon Noodle Casserole, p. 135 (***** Dennis and I both love canned salmon, plus this fish is high in Omega 3, plus we mashed the bones and added to recipe which gave us extra calcium. Super, super!!) Aloha Supper Skillet, p. 162 (We loved this. It reminded me of Hula Pizza but without the spices. Maybe we will add Italian spice next time! Way to go, JoAnna.) It was well received in our family. The only thing my husband said was that next time I needed to use mild salsa. Yesterday while out purchasing groceries he told me to get the medium, so I did. Today, he tells me it was too spicy. My 17 year old son said, "I like it, Mom, so you can fix it again." So, I recommend this recipe if you like cabbage and noodles.)
