The Diabetic's Healthy Exchanges Cookbook (Best of 1993)

Broccoli-Tuna Casserole, p. 176 French Onion Chicken Bake, p. 179 Chicken Casserole with Potato-Cheese Topping, p. 186 Corn and Macaroni Bake, p. 162 Scroll down after clicking on this link to see: Rice Pizza, p. 218 (We did have it last night & everyone, including SUPER picky teenager loved it!!! DH said to make it again & teenager gave me a hug & told me I was a good cook - this from the girl who had a complaint about every single meal I fixed the first 5 years she lived with us!!! :-) (It was pretty easy to prepare, as easy as regular pizza, and I was REALLY surprised at how well the crust held together!! I baked mine on my [Pampered Chef] pizza stone, that may have helped, but I think it's just that it's a good, well put together recipe, too!! :-) Smothered "Steak and Onions", p. 220 (I have been making recipes from the 1993 Newsletters this week and last, and [this] is sooo good!) (It was tasty, quick and used few ingredients.) (really good with mashed potatoes) Fresh Strawberry-Rhubarb Pie, p. 250 (took more time than dinner to prepare but it is great) (You may not have rhubarb but in the Spring...my favorite!) Golden Salad, p. 134   Friday Night's Supper Menu (Lots of carrots and that is a plus for the healthy side.) Zucchini Spaghetti, p. 171 (I also make [this] quite a bit.) Peach Becky Pie, p. 255 (featured on the 1999 calendar in August) (I made [this]. The flavor was incredible. The flavor of fresh ripe peaches . . . but it never set completely. I refrigerated it for over 2 hrs. After it was cut, and I scooped the first two pieces out, it ran together in one big mess. I double checked that I had used instant pudding, and I had. The water amount was right . . . next time I will just reduce the water. I definitely want to eat this one again!) (I just love this pie. I have not had a problem with it not setting up but then probably don't add as much water as called for. I have used canned peaches but had to dry them really well with a paper towel. I got one slice of it the last time and my oldest son ate the rest of it after I went to bed.) (I just made this again today. I love this flavor combination -- peaches and raspberry. . . . . I have made this pie many times.) Scroll down after clicking on this link to see: Crazy Pizza, p. 216 (Just had my two teen age grandchildren here for dinner this evening and I made them [this]. Everyone thought it was wonderful including my hubby.) (This is also one of our favorites, it satisfies those pizza cravings without all the calories!) (Tonight I tried [this] and like it a lot. Couldn't find chunky tomato sauce so used basil, oregano, and garlic tomato sauce. Made it with turkey breast. I think I'll see if I can find pizza seasonings in the store as I would like it a little bit spicer. DH says it is fine as it is. It is definetely one I will make again.) Scroll down after clicking on this link to see: Zucchini Bread, p. 290 (The best zucchini bread is [this]. I have made this recipe and I used to take it to work all the time and no one ever realized they were eating sugar free, lo fat bread!) (I am tempted to leave out the raisins and try adding a little well drained pineapple. It seems I never follow a recipe to the letter!) (I recently made the zucchini bread recipe from Diabetics. It called for vanilla instant pudding, and all I had on hand was chocolate. Then...since I was using chocolate, I decided it would be interesting to use dried cherries instead of the raisins called for.......and you know what? It was great! Then, at snack time the next night, I had a dish of leftover Chocolate-Covered Cherry Pudding from Arthritis. (I still had no vanilla pudding, so this time I substituted white choclate pudding, and loved the pink color!). I took the Chocolate-Covered Cherry Pudding, and spooned it on top of the Chocolate Cherry Zucchini Bread. Oh my. I thought I was having choclate cake with cherry ice cream. It was wonderful! It was to die for, really.) (Taking Jane in Florida's advice saying it was good, I tried it. It turned out very nice and is quite good.) (I made this today. Just ate a slice and mmm mmmm it's good. If you like your stuff really sweet, though, I'd double the amount of sugar substitute (I use Splenda). I also added about 1/3 - 1/2 cup grated carrot to the recipe and a lidful of butter extract. It was delicious.) (Had not one but TWO slices of this bread today. It's very moist and delicious.) Scroll down after clicking on this link to see: Lime Nut Salad, p. 136 (I used to be a quantity eater . . . now I'm going for quality. That is the main reason I like Joanna's recipes so much . . . they are quality. Well speaking of quality think I'll throw a batch of Pudge brownies in the oven and make [this recipe]. I am probably the only person in the world that loves lime Jello and this salad makes me think of one my aunt made years ago. If you haven't tried it yet, you should, it's easy to throw together and is very satisfying.) (Lime Nut Salad is wonderful, in fact it is my favorite Jello salad in the whole world. My aunt used to make an unhealthy version that I loved as a kid and Joanna's tastes EXACTLY like hers! . . . I didn't have plain yogurt, I only had lemon chiffon, I used it and it was wonderful, in fact I think better than the times I've made it with the plain . . . next time I might try the lime yogurt and see how that turns out!) (I made it with lemon jello and lemon yogurt. It was fantastic! I am a lemon lover so had to try it. It is every bit as good as a higher fat one that I have been making for years.) (I made this last night and it is wonderful!!!!!!!!!!! ) (You have to try [this]. . . . gosh I just love Joanna's recipes, they make me look like a good cook!!!! hehe) (my favorite sweet salad of Joanna's (It is like a recipe my Mom used to make that had loads of nuts and cream cheese in it, only Joanna's is better . . . shhhhh don't tell my Mom please!!!))
Lemon Poppy Seed Bread, p. 288
([EDITOR'S NOTE: I couldn't resist putting the whole message here -- it was too beautiful.]
Thought I'd let you all know how the wedding went... last week was the busiest week I've ever spent! I was able to keep up my exercise until Friday, though. My mom and sister got here early Friday morning/late Thursday night. I met them at their hotel Friday morning, and they were suitably impressed by the weight loss. My sis told me that I looked like I was supposed to look now (I was thin until my 30s) I showed them my before and after pictures. My "before" was from a time when I wouldn't send them pictures, so they never saw me at my heaviest. They were kind of shocked. I also took them Lemon-Poppyseed muffins, made from the bread recipe in Diabetics. They were a big hit! As I said, I wasn't able to exercise on Friday, unless you count the mall walking done on last minute errands. [Oh, I definitely count mall walking! My favorite sport!] But that was ok, since I couldn't eat from Thursday on :). Saturday went off beautifully, though at one point (right before we had to be at the church) last minute problems cropped up and we almost didn't make it on time. Then when I put on that dress and looked in the mirror, I saw a redheaded Audrey Hepburn and it felt so good! I know we're living this lifestyle to be healthy, but feeling beautiful on your wedding day is good too. We're off today for our honeymoon. God bless you all! -- Anne Margo)

 Cherry Pie Filling, p. 272
(I made this because I can't find the sugar free filling that is in the
recipes. I used it in Just for Daddy Cheesecake [July 2001]. It sure
tastes extra good with the cherry taste added from the Jell-O! It's
probably better than anything from a can!)
(I like JoAnnas cherry pie filling a whole lot better than the Canned Lucky
Leaf Pie Filling. Hers will set up if left overnight and not run all over
when you cut it, which the canned will do. It is so quick and easy and
     great on cheesecakes.)
(You made an excellent point regarding the Lucky Leaf pie filling vs. JoAnna's.
I substituted it for one of the Black Forest pies once and it was very runny,
not a pretty sight. JoAnna knows best. I do love that Crazy Cherry Pie
(June 2001 newsletter, p. 4) with the Lucky Leaf though.)

Cherry Swirl Coffee Cake, p. 238
(I tried an old standby recipe in a different way last night. I love [this]
and have made it many times as the recipe reads and also by using Lucky Leaf
Splenda Cherry Pie Filling. Well last night I had a can of the Lucky Leaf
Splenda Apple Pie filling and thought apple coffeecake sounded good. When
I made the batter I put some apple pie spice in it and used the apple pie
filling. Don't get me wrong, it is good but it is rather bland. So a word
of warning, if you ever decide to do this use some cinnamon or apple pie
spice in dough and in pie filling. This is a great recipe as it is with
the cherries but I love coffeecake so I'm always experimenting with different
fruits. Next time I'm using blueberries. I can't wait to try that one!)
(I took [this] in one morning and I thought I had been hit by a tornado!
There was such a rush swarming around me that my hair stood on end for an
hour. Everyone wanted to know how it was possible to have something low
in fat and no sugar and taste so great.)

Garden Pasta Fagioli, p. 97 Yahoo Access
(I wanted to mention a soup recipe which we ALL really loved. I eat soup all
year, even in SC but if you only enjoy it in the winter be sure to squirrel
this recipe away. We think it's the best of JoAnna's soup recipes we've tried
     to date.)
(I like to add fresh vegetables I have on hand, a very adaptable recipe. Okra
is excellent in it. This is my very favorite soup recipe of JoAnna's.)
(I served this with a breadstick and salad and I didn't think Olive Garden
     could have done better.)
(***** First time this winter that we had this soup. We had it last winter,
and it is still a winner!)

Kielbasa-Rice Casserole, p. 203
(Made [this], and it was GOOD! This is second on my all time fav list!!
(First being Heartland Mac and Cheese, Man in Mind, p. 213)
(Also tried [this]. No store in town carries Healthy Choice kielbasa so I
used Louis Rich Turkey Kielbasa. It is also a keeper.)

Impossible Zucchini-Tomato Pie, p. 170

Mint Patty Pie, p. 258
(This is great if you like Ande's Mints. . . . I really like this particular book.)
(I made [this] for the game Sunday and my kids absolutely loved it. That is saying
     a lot for them.)
Gina's Potato Salad, p. 120
    (a good potato salad)
(This was pretty good! Charlie is pretty picky about his potato salads--in fact,
I pretty much quit making it and got it from the deli. I decided to try this for
me and he liked it too.)
(Easter Menu? . . . My favorite potato salad recipe is [this]. Funny you
should ask as I made a bowl last night. DH thinks it is the BEST!)

Peanut Butter-Carrot Salad, p. 110
(I didn't feel like peeling and grating carrots and had some diced celery that
needed to get used up. My stepdaughter named it 'Ants in the Mulch' because
of the resemblance to Ants on a Log :-)!!!! It is really good!)

Oatmeal-Raisin Cookies, p. 234
Ranch Hand Meat Loaf, p. 224
(We both really liked this. Maybe a little much on the vinegar, but it sure reminded
     me of childhood meatloaf.)
Eggnog, p. 284
(I've made [this] - it's very very good! I usually add skim milk til I get to the right
texture, because it is a bit thick. Skim milk is 80 cal a cup, so it's easy to figure
out how many calories are being added, and it doesn't change the taste. It does keep
for a couple days in the fridge. I also think it needs a shot of rum, but that's another
     matter! :)
(This is really really good. I have nephews that would drink the whole recipe themselves
     if they were allowed.
I highly recommend this for any winter function. It will get the craving curbed! :)

Italian Broccoli Salad, p. 112
(. . . Refrigerate for at least 30 minutes before serving. (actually I think it tastes
great if you don't too :-) Toss in a shredded carrot if you have one handy!)
([This] I have to make at least once a week!)

Butter Brickle Dessert, p. 242
    (That dessert is truly yummy.)
([This] is out of this world yummy!!!)
    (I love [this] also.)
(One more comment on [this]. It tastes just like that German Choc Cake frosting that is
like 45 fat grams per tablespoon so no one buys it!!! It also reminded me of the little
candies my sister adored as a kid called "Maple Nut Goodies" so if you like either one of
these treats you gotta make [this].)
([This] was the Number One choice for my tryouts last week! It tastes like the frosting
for German Choc Cake you know that coconut, pecan stuff that is 50 g per T.?? You will
     love it . . . promise . . . .)
(Also tried [this], and we loved it! Thanks for whoever brought that to our attention!)
([I had] 2 helpings [of this]. I was only going to eat 1 helping, but I had the exchanges,
and it was so, so good! I loved it!)
(We just finished a most delicious dinner. It was one of those meals where you just want
to keep eating until everything is gone. I maintained self control until dessert, so
I'm glad I only had a smoothie for the rest of the day, since dessert probably "did me in".
Anyway, we had Pork and Sweet Potato Casserole from Potful, p. 256, with rice, green beans
and applesauce. . . . Then for dessert we had [this]. I have been avoiding recipes with
butterscotch pudding in them because I'm not fond of butterscotch (at least I wasn't until
now!). I made it for my DH who loves butterscotch. Guess who suggested seconds . . . if
you guessed my DH, you're wrong. There's just enough left to have a snack when we get home
     from church tonight.)
(Another favorite dessert of mine is [this]. This uses butterscotch pudding, pecans, coconut
and whole graham crackers for the crust.)

Irish Cream of Potato Soup, p. 91 Yahoo Access
(Hi!! Wanted to share my latest discovery. It is [this]. It is hearty, filling and very
good. Weight Watcher's - 4pts for one and one fourth cup serving. I did add fresh ground
pepper and small amt of grated carrot for color.)
Heavenly Hash Pie, p. 260
Tuna-Vegetable Fettuccine, p. 174
    (I just received JoAnna book called The Diabetic's HE Cookbook, we tried [this];
it was fabulous, we added our own blend of spices, which included onion powder, garlic
powder, thyme, and marjoram. Dennis and I used 2 portions and froze 2 portions.)
Vegetable-Bean Soup, p. 89
(Tried another recipe from JoAnna's The Diabetic's Healthy Exchanges® Cookbook -- [this one].
Dennis and I both enjoyed this. Another good one, JoAnna. Thank you.)
Chocolate Eclair Dessert, p. 243
(This is the second time we've made that dessert & it is SOOOO good - VERY hard to just
eat one serving, even though the servings are a really nice size!!! It's kinda bad that
it serves 12 because that means so many tempting leftovers!!! :-)
Double Chocolate Cupcakes, p. 240 Yahoo Access
(Serving suggestion: Cut the muffin in half (horizontally) and scoop a small amount out
of the middle. Replace that with FF cool whip. Replace the top and then wrap in saran
and freeze the muffin till you are ready to eat.)
(Both DH and picky teen asked me to make these again - I'm surprised since they are vegan
and low fat and low sugar and low sodium, I really didn't think they'd be very good - glad
     to be wrong sometimes!!! :-)
Irish Spring Pie, p. 256
(I hope everyone made one of JoAnna's green pies for St. Patrick's Day dinner! I made
[this]. I used the fat free Cool Whip instead of lite and it was wonderful. My DH
doesn't like coconut, so I put it on half.)

Tropical Isle Chicken Salad, p. 126
(Does anyone have ideas for cold lunches?? I don't have access to a microwave. . . .
I just tried [this recipe that was] great.)

Bavarian Casserole, p. 207
(I've got a pound of lean ground pork in my freezer I'd like to use soon. Does anyone
have a recipe that uses this that you could recommend? . . . [This] is my favorite
     ground pork casserole.)
Fruit Cocktail Salad, p. 132
(one of our very favorite recipes that we tried in May)
(I had been meaning to try this, and my mom served it when we were over. I loved this!
Charlie thought it was good, too.)
Banana Pudding with Raspberry Sauce, p. 230 Yahoo Access
(The sauce is excellent alone on pancakes or ice cream or whatever.... ;-)
Carrots and More Salad, p. 109
(***** The only words I need for this is "Fabulous". We will have this several times this
summer. This is also a salad that would be good in the winter as well. Thanks, Kim, for
telling me about this recipe in the Diabetic's Cookbook.)
(We had this for the first time last month. We have made it twice this month. I love it!)
(Our oldest daughter came to visit at lunch the day we had this salad. She called back after
she left and requested it as a starter for Christmas dinner. We all loved it.)
(another great salad -- once a week all month. We love it.)
Cinnamon Cream Rolls, p. 286
(I used this for my son's high school graduation brunch. I don't know if it's still available
or not, but I used to use Kaukauna Fat Free Cream Cheese, honey walnut flavor in place of
plain fat free cream cheese. See Menu)
(After seeing the recipe posted, I decided to try these yesterday. WARNING, WARNING!!! Do not
make these unless you are serving to a crowd. They are so good you will want to eat all of
them yourself. Sorry to say I had way more then 1 serving. At 3 points for 2 I was OK, but
later on, I had 2 more and 2 more and so on. I was thinking that if I made them larger it
might seem more satisfying to eat just one. If I make them again I will do this and see if
     it fools my brain.)

(Very, very good! Another good picnic salad.)

     portions for me!)
