Lemon Grove Coconut Cream Pie, p. 56 (Oh, by the way . . . the pie was good. It made more filling than the crust could hold, so I put the leftover in a small container, and had that with my lunch.) Chocolate Orange Mousse, p. 51 (***** We are not really dessert eaters, but we loved this.) (We have made this several times now and we both love it. Today we added 1 tablespoon of frozen raspberry pieces on top; ohhhh, it was sooooo good.) (Heavenly, thick and tastes so rich, that you can't believe it is a healthy dessert.) Italian Fried Potatoes, p. 36 (I have made this quite often, even though I'm not camping . . . . It's a good accompaniment for grilled burgers. I sometimes slice about 1 c. Healthy Request LoFat Smoked Sausage in with them in the last 3-4 min of cooking, and serve with a salad and fruit, for a quick supper on the run.) Layered Broccoli-Chicken Casserole, p. 42 (I added more broccoli than called for, and also used brown rice. This was great. First time I'd made it, but definitely plan on it again.) (wonderful!) Apple Cabin Salad, p. 25 (I've made this and it's very good.) Apple Crumb Pie, p. 55 (We really liked the flavor of this. We both thought we would prefer it with the apples peeled. I was chicken to microwave the foil pie pan, so we tried to flip the crust and put it into a glass pie plate. Boy, did it go to pieces! It gave it another reason to call it "crumb" pie! Since Charlie doesn't like nuts, this was a good crumb pie to do; so many of the HE recipes have nuts in the crumb topping.) I made 2 new (to me) recipes . . . Layered Scalloped Potatoes and Ham, p. 48 (Very very tasty. We had green beans and chopped broccoli with this.) (Good morning! I boiled a ham in the roster-oven night before last and then last night made the leftovers up into this casserole. Everyone loved it! I doubled it for my family of 5, including 2 men. We had some leftovers that I told the guys they can have it for lunch tomorrow while the girls and I are at the track finals. (I warned them ahead of time to keep them from snacking on it!) Thanks again for posting! It will go into our family favorites.) Dessert was . . . Heavenly Lemon Cream, p. 49 (Mine turned out to be lime instead of lemon because that's what kind I had on hand. This was great. Very smooth and creamy. Satisfying.) It was a great dinner. Thanks JoAnna! Thai Tuna Sandwiches, p. 21 (wonderful!) (I enjoy this a lot.) (I had to try [this] that you all had been talking about. [Really enjoyed it!] Thought the Chinese Bean Salad (May '03 HE Newsletter, p. 7) would go good with it, and it did.) (I don't always make this into sandwiches. I will use it as a spread on soy crisps, or RF crackers. Sometimes I just add 1/4 c. of a salad. When I just use the tuna, I count it as 2 meat and 1/2 bread exchange. I also used fresh onion instead of the flakes.) (BTW . . . thanks for [this] recipe.
