The Cancer Recovery Healthy Exchanges Cookbook (Best of 1997)

(Last night I made [this]. It was really good . . . and it is 5 ww points.) (very good) (What can I say except comfort food . . . Yum.) (I fix this recipe for my family all the time. It is very good comfort food recipe. Enjoy!) (Last night I made [this]. All I can say is YUMMMMM. The gravy is so good and there is lots of it. The recipe calls for minute or cube steaks. I used pork cube steaks instead of beef. We had mashed potatoes and green beans with it. Comfort food at it's best! It's definitely a keeper, and I will be making it over and over again.) (I make this quite often, but don't use the flour. I just spray my pan with the non-stick spray of choice. Sometimes I use butter or olive oil as well as the regular [spray].) (I make this recipe a LOT! I also make it with chicken, using chicken broth and cream of chicken soup, reduced fat. I pound my chicken breasts out a little flat, and it makes a dish like old time chicken and gravy . . . AWESOME!!!! Try it with the chicken sometime, I bet you will like it.) (a sure man pleaser recipe) (Tonight I fixed [this]. . . . It was very good but the gravy was a little too thick for me. Next time I will use 4 tbs. flour instead of six. DH liked it too so it will be a keeper.) (This is one of my favorite recipes. It's comfort food to me. I serve it with mashed potatoes and green beans. It's also good made with chicken breasts and use chicken broth instead of beef broth. Hmmm . . . I think I know what we'll have for dinner tonight, LOL.) (There is quite a bit of gravy for use on potato or noodles. Also, be sure they are browned good, so meat will hold the flour.) SueNY's chicken variation of Beef Steak in Mushroom Gravy (What is your all-time favorite JoAnna main dish recipe? Oh my goodness, you might as well ask me which of my children is my favorite, LOL. I have more than one favorite, but I'll give you the 3 that I make most often. [This is one.] This "comfort food" recipe isn't my own. It was posted a couple of years ago, and I can't even give the originator credit, as I didn't save her name with the recipe. However, it is a slant on Beef Steak in Mushroom Gravy from the Cancer Recovery HE Cookbook. This is by far our favorite meal, and my husband requests it every week. I serve it with mashed potatoes and a vegetable. The gravy is wonderful. As a bonus, it takes no time at all to prepare. I can have the meal on the table in 1/2 hour. I'm drooling, just thinking about how good this is!!) Dixie Chocolate Mayonnaise Cake, p. 257 (It's excellent. The only thing I would recommend is to use a good grade of cocoa powder, and make sure and use Kraft brand fat free mayonaise.) Not quite a keeper, but we will use it whenever we are given zucchini.) (great success -- I have to say [this] was just fantastic. Whoever thought zuchinni on a pizza would be so good? And the feta cheese. ...I've just discovered feta, and I am loving it.) (Try [this]. It's topped with zucchini, and it is incredible.) Black Tie Chocolate Cheesecake, p. 250 (great success -- VERY good) (I thought this was yummy. My 10 year-old-son and teenaged nephews agreed. They "fought" over the last piece.) (I wonder if anyone has made a variation of our favorite dessert, [this]. I was thinking that you could omit the cocoa powder and add almond extract for the crust layer as well as use vanilla pudding in second cream cheese layer instead of chocolate fudge pudding mix. You could sprinkle almonds on top instead of chocolate chips. I also wonder if adding drained mandarin oranges to the topping layer would be good.) I made mine with fresh lean ground turkey and it was easy.) (I made this last night for supper and it was a great hit with the whole family.) (one of my favorites) (That soup is so good, JoAnna should be given an extra prize just for it!) (Daughter said best onion soup I've made.) Hawaiian Meatloaf, p. 191 ([This] was very good. My 17 yr old son loved it, and had 2 servings. We had boiled potatoes, green beans, and beets with it.) Chicken Pot Pie Lasagna, p. 176 (Where's the chicken? . . . Sorry about that!!!! There should be 1 cup (5 ounces) diced cooked chicken breast.) (Another good one!!) Turkey-Rice Soup, p. 88 (I just made [this] and it was delicious.) Donut Balls, p. 282 Yahoo Access (Just made a batch of these and I'm sure they aren't going to last the day. They are really easy to whip up and taste wonderful . . . and at one point each, what more do you want??? . . . Betcha can't eat just one of em! LOL) (I have made these and they were delicious. Better warmed a little (say 10-15 seconds in the microwave) but they disappeared faster than lightening around here (and the dog didn't get any!) (I loved [these]! I rolled mine in Splenda and cinnamon. And ate them warm.) Chimichangas, p. 186 (have made these numerous times, so good) (These were great. Normally when I make something like this I smother it in cheese, but I didn't with these, and they were delicious. I did add cheese to Barry's; he thought they were great, too!) (If you like Mexican food, you'll love [this]. They are so good . . . I could have eaten them all, but stayed with the required portion. Actually, I made them a bit different, so I had less carbs than the original recipe. I made them using twice as much meat and onions . . . leaving everything else the same. I also added 2 Tbsp. chopped green chilies to the meat mixture. I had 8 1/2 inch flour tortillas, so I put 1/2 cup meat mixture in each tortilla and ate only one instead of the 2 suggested. It was plenty with the salad and applesauce we had with it.) (Would you believe we had the leftovers for lunch today and made the decision to make them again for supper :-) Oh my goodness . . . they are so good. What a hidden gem I uncovered. Thanks JoAnna . . . now we're going to OD on Chimichangas!) (You are certainly right about this recipe. I made almost a double recipe, and my husband ate 5 of them. How someone can eat so much, I'll never know, and I served them with shredded lettuce. This is definitely a keeper.) (Charlie loves chimis in restaurants. I've been wanting to make this for awhile and did it for Valentine's day. We liked it. I loved that they got so crispy and crunchy, not just a soft tortilla.) [this soup from] The Cancer Recovery HE Cookbook -- the only change -- we added 1 teaspoon of Mrs. Dash, Tomato, Garlic & Oregano Salt-free Seasoning and 1/2 teaspoon Old Bay seasoning. Dennis and I both loved this soup and is going to be one of our favorites.) (***** We make this once a month.) ([This] comes to mind for that leftover steak. . . . It calls for roast beef but the steak would be great. I've used steak before. It's a delicious soup and DH can eat the whole darned pot at one sitting. VERY easy to make as well.) (We have tried and liked.) (I make this soup with a piece of steak as well. It's so gooooooooooood, so if you have some beef around, don't wait. Delicious!) I got MAJOR rave reviews for dinner tonight. Here's what we had: Calico Potato and Ham Bake, p. 206 (very filling, creamy and oh so easy to make. I added a can of green beans to it and 6 oz. of kidney beans instead of the broccoli and spread it in a 13 x 9 pan for even baking) Strawberry-Lemon Gelatin Salad, p. 129 (I had made this before using different fruit and different gelatins. I like the original version best. I should know better than to mess with JoAnna's already tried and true! LOL) [Also had the] Mediterranean Carrot Salad [from the] Heart Smart Book, p. 80. Not only did it all look great on the plate, it had a wonderful array of different taste sensations too. Both my husband and son loved it and my son said he was mad cause he was too full for seconds. [Will have] the Bahama Banana Cream Pie [from] June 2000 newsletter, p. 7 [for dessert]. Green Bean Bake, p. 140 Country Vegetable Soup, p. 91 (I made this soup today! YUMMY! Very satisfying and very filling! My parents are coming up this weekend. And this soup will make a tasty lunch!) (I just love this soup, but unfortunately, my family didn't. Then, I substituted 16 oz. of 90% lean Italian turkey sausage for the gr. beef, added a little minced garlic & a few crumbled bay leaves. . . . Now it is a family favorite!) (We had this soup for dinner tonight. I had a can of a tomato sauce that was stew- soup flavor that I used. I only used 1/2# of gr. beef - so cut back somewhat on the ingredients. Anyway we give it a 10. Was very good. For the veggies I used the onion and then a bag of mixed veggies and of course the fresh potatoes. I added a little salt and pepper. Give it a try. I figured it to be 4 WW points per serving.) (We have tried and liked.) Lone Star Corn Chili, p. 92 (This is an easy and delicious chili recipe!) (Yes, this one's a keeper -- very good cold weather meal.) (***** Dennis and I both felt this warmed us up on the chilliest day of this year so far. We really loved it. This is the first time we have had chili with corn, and we will serve this again.) (I agree with Helen, [this] is delicious and almost as good as my favorite Blazing Glory Chili from Man In Mind, p. 84.) (We have tried and liked.) End-of-Summer Chili, p. 93 Yahoo Access (My family loved this recipe!) Diane's Angel Hair Pasta and Chicken, p. 173 (One of my favorite HE recipes is [this] . . . it is very good!) Magic Minestrone, p. 100 (make this all the time) (uses pastrami and zucchini) Don's Cauliflower Salad, p. 109 Tuna-Stuffed Baked Tomatoes, p. 167 Quick Chicken Fajitas, p. 175 Italian Pork Pot, p. 201 Corned Beef Skillet Sandwiches, p. 211 (good, but not as good as Corned Beef Toasties from Joyful Table, p. 227) Fruit Cocktail Crumble, p. 226 (my son loves this one) Here are the recipes we have tried and liked: Corn-Celery Chowder, p. 85 Fireside Corn Chowder, p 86 Easy Clam Chowder, p. 87 Broccoli Harvest Salad, p. 107 (one of my Thanksgiving favorites -- I make it the same day, as it doesn't keep really well.) (another great broccoli salad -- We loved this one as well as all of the other broccoli recipes of JoAnna's that we have had.) Chicken-Broccoli-Pasta Skillet, p. 174 Skillet Cabbage, p. 138 (Good morning! Just had to tell you, JoAnna's recipes are getting more raves at my house! . . . Night before last we had [this] and Georgia Peach Cobbler from Cooking Healthy With A Man In Mind, p. 248. I added cooked sausage to the Cabbage for our meat, which changed the nutritional content, I know, but made it a balanced meal. Next time I think I'll get a low fat turkey kielbasa to put in it. Served it with homemade Italian Herb bread, made from a mix by Krusteaz.) Caribbean Tapioca Fruit Pudding, p. 218 (I made [this]. It was yummy and so pretty, too! It's made with pineapple and orange to go with my ham. . . . My family didn't care for it as well, because you use sugar free orange jello, and they think it has too much artificial taste. It also has yogurt, which they are not fond of. (Must be a "guy thing".) My Mom, sister, daughter-in-law and I loved it, though. I wonder if next time I use unsweetened orange juice and unflavored Knox gelatin. Just a thought.) Mexican Cabbage and Rice Casserole, p. 184 (Just wanted to share a few new things I've tried. Last night for dinner, the whole family was actually home for a sit down dinner! It was wonderful having both kids home for the evening. We tried a new recipe from Cancer Recovery and another one for dessert. . . . [This] was the main course. . . . Would you believe my 18 y/o son actually ate something with CABBAGE in it?! He asked me what is was called -- I told him "JoAnna is a genius casserole" lol I added a little tabasco to mine, kids put some sour cream on theirs. It was very good; it gets a star put on the page!) Easy Bruschetta, p. 278 (What an awesome dinner we had tonight! Tried a new recipe from Cancer Recovery. [this] Wow . . . DH gave a high compliment when he said during dinner, "I can't wait to have this again!" I made a few additions, however, because I love cilantro, so I added 2 t. of it to the tomato/cheese mix. I also added 1/2 of a diced onion, and instead of dried garlic I used a big spoonful of the kind you buy in the big jar in the produce section. It's just more fresh, and we LOVE garlic around here. To go with it, we had Waldorf Coleslaw, p. 82 from Healthy Exchanges Cookbook, another oldie but goodie. Wonderful stuff. I've saved the last serving for my lunch tomorrow.) (Hope you enjoy this as much as we did. . . . My additions: instead of dried minched garlic, I used fresh. I also added chopped onion, and 1 T. dried cilantro. I'd have put in chopped green pepper if I would have had any! Like DH, I can hardly wait to make it again.) Steve's Coconut-Banana Cream Pie, p. 237 (I only had half of a banana, so that's all I used, and it still turned out to be an excellent pie. Will definitely be making this again.)
