Black Forest Cheesecake, p. 260
(This was GOOD. I substituted Lucky Leaf cherry pie filling (sweetened with
Splenda) for the topping which caused it to be a bit messy when cut (before
it was a work of art). I over did a bit and next will use only half the can
versus about two thirds this time (now what to do with those l/o cherries?).
The pie filling is a bit 'looser' than Jo's cooked filling I believe.)

Allie's Kozy Minestrone Soup, p. 68
(Wow!!! This was great, esp. for a soup with no meat in it!!! Usually when
they say 'you'll never notice the meat isn't in this' I still notice, but this
had me fooled!! I made one change, I used a 15 oz can of red beans instead of
an 8 oz can of kidney beans (I HATE kidney beans :-) but it still didn't seem
overloaded with beans.)

Cookbook . . . . This soup was great, we had it for lunch today and found
we did not have to have anything else. I added 2 teaspoons of Parmesan Cheese,
and used thyme & marojam in addition to the spices called for. Thanks JoAnna
for another good recipe.)

Chunky Chocolate Cream Pie, p. 234
(Thanks for reminding me how much my husband and I love this pie. This pie is so
rich and decadent, there is no way anyone who did not know would think it's healthy.
Ten times better than any candy bar I know of.)

([This] is delicious. I've made it a couple of times and my family (all adults)
loves it. I use mixed veggies rather than the beans and carrots in the recipe.
We have a brand of frozen veggie here that is out of this world. River Valley is
the brand and everything they have is better than anything else I have ever tried.
Their Gold Label mixed veggies contains petite peas, super sweet white corn, baby
carrots and whole young green beans. That's what I put in the veggie mac and cheese.

Summer Banana Salad, p. 136
(This one is really delicious with the fresh blueberries in the market right now. I
made this one for the 4th, and added a few fresh raspberries to it also--for the red,
white and blue! I made a pretty garnish with a few of each of the berries, and sliced
bananas--gorgeous. And tasted great! . . . pretty quick and easy.)

Lemon Supreme Cheesecake Pie, p. 252
(Had this for my birthday pie. Very good - a bit tart. I had to use regular cook pudding,
though. Didn't have any & DH even went to the grocery for me & they didn't have the
vanilla sugar-free cook today. It makes a very full pie. Thank You, JoAnna! I'm a lemon
lover & most always have a lemon dessert for my birthday. Now I can even have a low-fat
one!)
(Was catching up on some earlier posts, and saw one asking whether anyone might have a good
lemon pie, or something that would be good for Easter. Oh boy! Do I!! I tried this recipe
tonight, ahead of time, for our Easter dessert. WOW! I really like lemon, and this is REALLY
GOOD STUFF! There's a cheesecake layer on the bottom, with an absolutely yummy lemon glaze
top-layer! I didn't even bother to top it with extra Cool Whip Lt -- it's that good! I put
it into an 8x8 inch square pan, with graham crackers in the bottom for a crust. Sometimes, I
like having them that way -- sometimes a smaller serving just hits the spot for that little
"sweet something" with a cup of coffee or tea! (And lasts a little longer, too.) . . .
One thing: I stirred a little fresh lemon zest into the cream cheese mixture, and squeezed
about 2-3 tsp. fresh lemon juice in, also. I often do that when I make lemon things . . .
nice fresh lemon taste. I think you'll enjoy this one -- it's another winner!! Think I'll
garnish it with fresh strawberries for Easter . . . it's a beautiful yellow, with big plump
strawberries, and a dollop of Cool Whip as Jo has suggested . . . yummy AND gorgeous. Maybe
I'll have dessert first!)
(Thought I'd just add quickly: After sitting overnight in the fridge, this dessert is absolutely
scrumptious -- very creamy and very good lemon flavor. I served it to DH for lunch, with a
little Cool Whip Lt and a fancy strawberry fan on top. . . . He thought it was worthy of having
a second piece! I liked having the flavor of fresh strawberry with it -- it's a very rich
taste and texture. There isn't a doubt that we'll be having it for Easter. And it would be
very nice for feminine gatherings especially -- bridal showers or the like, where you might
want to go a "little fancy". Would look so pretty on any spring table, as well as the great
yummy taste . . . they'll never believe it's good for them! Thank you once again JoAnna . . .
you just keep on making us look great!!)
(You had me convinced -- I had to make this for Easter. As I was checking to see if I had all
the ingredients, I thought it sounded familar. Then I remembered -- this was my birthday pie
this yr! Don't know why I hadn't marked it in the book, as I usually do when we have tried a
recipe. I started writing in a little notebook a list of all our favorites the 1st of the yr
& when I looked in there -- sure enough it is listed. Another senior moment, I guess. Anyway,
we loved it! It is a bit tart, but that's what I like. It sure doesn't taste low fat, low sugar,
but then all JoAnna's pies are excellent!)
(My Easter Menu)
(Just wanted to report in that I made [this] that Pauline had suggested. It was really good and
everyone thay ate it liked it too. But I did have a few pieces left, so I know it isn't snowflaked
to be frozen, but I did any way, and I must say It was good that way too. I just let it thaw,
then ate it while it still had ice crystals in it, and I really liked it better that way than
just being cooled in the refrig. Try it you might like it. LOL Thanks, Pauline, for pointing
the recipe out. I will add it to my favorites.)
(I made [this] for Easter. To my horror, I didn't have two packages of lemon jello in the cupboard
(this was discovered after being well into making the cheesecake). So, for the topping, I used
lime jello. I put strawberries on top. It looked so pretty and tasted wonderful. I added a
little bit of lemon juice and zest to the lemon part and a little bit of lime juice and zest to
the lime part. I also froze what was left over and you're right . . . it freezes well and tastes
good just partially thawed.)
(I made this cheesecake for dessert tonight and it was wonderful. My DH said are you sure this is
sugar free? I said it is, and it is wonderful. I also tried the helpful hints of putting some
zest into the cream cheese mixture and lemon juice into the top for added flavor. Thanks again
for suggesting this wonderful dessert.)
BBQ Beef and Potato Hash, p. 196
(It was the first time we had this, and we loved it. I didn't think we would like it, but we had
some roast beef leftover, and so we decided to try it. Well, next time we have some roast beef
left over from a Sunday dinner, guess what Monday's supper will be.)
Valley State Bank Banana Cream Pie, p. 238
(I made [this] today. Oh my, it was the best banana cream pie I've ever eaten, including full fat,
full sugar ones! Oh it was wonderful! Try it! I have been craving banana cream pie for nearly
2 years; I tried to make one two years ago, making it up on my own, and it was just way too bland.
This has satisfied me beyond belief. Thanks so much Joanna, with your recipes I am sure to win! . . .
Oh, and just to let you know, I did use Vanilla pudding instead of Banana Cream, cause I didn't
have any banana cream.)
White Chocolate Rice Pudding, p. 218
(I followed Anne in CA's recipe, except I used 8 chopped marachino cherries, instead of 4, as she did.
This is my dessert for Easter . . . . For anyone that likes chocolate . . . this one's a keeper.)

(I had an urge for rice pudding yesterday, and made [this]. The ingredients included pecans, which I
didn't have, and anyway I didn't feel like nuts. So I substituted 4 chopped marachino cherries, and
lo and behold, the pudding ended up tasting like chocolate covered cherries. And just in time for
Valentines! Since I LOVE chocolate covered cherries, I was very happy!)
(Do you use real rice or minute rice? I've tried a few of the recipes that call for minute rice, and I
just don't like the texture.)
(For recipes that call for cooked rice, I generally use the regular rice. When I make up rice, I make
a cup or two extra and keep it in the fridge. I just pull it out when I make something that calls for
cold cooked rice. When a recipe specifically calls for minute rice, I go ahead and use it, because
regular rice would change the cooking times.)
Grandpa's Creamy Coleslaw, p. 109
(I'm already thinking about the 4th of July and looking for a good Healthy Exchanges coleslaw
recipe. JoAnna has lots of them and it's difficult to choose. I thought everyone here might tell
their favorite. . . .
This may be what you're looking for. There's a tablespoon of Dijon mustard in this dressing. I
usually buy Dijon with horseradish, so that gives a little extra kick. We both liked this one equally
well. I would highly recommend [this].)
(We really liked this. It seems to be somewhat like KFC coleslaw. We decided that, while not so much
a keeper, if there's ever a time that calls for coleslaw, this is it.)
