I just installed new racing style pedal covers. The installation process is fairly straight forward. All I had to do was clamp them on my existing pedals. For the clutch and brake pedals I removed the existing rubber cover. I then applied some double sided insulation tape to the bare metal pedal (you can get it at your local hardware store). The tape can be squashed down to compensate for the difference between the curve of the pedal and the new pedal covers. To finish just align the covers where you want and tighten down the clamps.
Pros: They look sweet, and they are cheap
Cons: The cover on the clutch slides around. I am working on a way to fix this.
