Carly Lu's Blueberry Mango Bread

Adapted from "Blueberry Almond Muffins" in The Healthy Bird Cookbook. This is so good I won't even experiment on
it anymore. I have to make 4 times more than usual because I eat 3/4 of every piece I cut for Carly! Great for breakfast.
fruit:
1 cup blueberries
1 med. mango, diced
1 banana, mashed
1/2 cup dried fruits (dates, apricots, peaches, papaya)
nuts:
1/2 cup chopped almonds
1/3 cup chopped walnuts
grains & spices:
1 cup flour (fine multi-grain or regular)
2 cups 8-grain Fid Flour* or other multi-grain flour
2 T flaxseed meal
1/2 cup oats
1 tsp cinnamon
1/2 tsp allspice
1 Tbsp baking powder
1 tsp baking soda
pinch of salt
wet ingredients:
4 eggs
2 T vegetable oil
1 cup peach yogurt
Preheat oven to 375 F. Spray 9x11" pan with cooking oil.
Blend ingredients listed in grains & spices in a large bowl. In another bowl, beat together wet ingredients, then blend
in mashed banana. Mix with dry ingredients until well blended. Stir in nuts. Stir in all fruits except blueberries. Gently
fold in blueberries last.
Cook at 375 for 30-35 minutes (until toothpick or knife comes out clean; will be slightly browned on top).
You can cut into 2" squares, put in individual baggies, then put all into a large ziplock bag for freezing. Heats up well
with a short zap in the microwave. YUMMMM!

Spicy Parrot Pie
Spicy Parrot Pie is a spicy cornbread with lots of Vitamin A from dark orange and green leafy veggies. The diced apples keep
it somewhat moist (omit if your fid prefers drier breads). It also contains cleverly disguised pellets.
* * * No parrots were harmed in the making of this pie * * *

9"x13" baking pan. Preheat oven to 400 F.
Mix well in a large bowl:
2 cups cornmeal or corn flour*
2 cups 8-grain Fid Flour** or other multi-grain flour
2 T baking powder
1/2 tsp Cayenne pepper
2 tsp crushed red pepper
2 cloves garlic
1/4 cup flax seed meal
1/2 package Fid Flour Veggie Extravaganza Add'Em** [optional]
Blend together, then add to dry mixture:
3-4 jars baby food (sweet potatoes, squash) or equiv amount of freshly cooked yams
2 eggs, beaten
2 T red palm oil or other veg oil
[1-2 T soymilk or water if too thick]
Mixture should be a fairly thick batter, still pourable but not runny. Thicker mixture will give drier, coarser style bread.

Add to batter and mix well:
1 cup finely chopped dark leafy greens
1/2 organic bell pepper, diced
2 carrots, grated
1 apple, diced and peeled
1 zucchini, grated
1/3 cup chopped cilantro
Bake in 9 x 13" pan, sprayed with cooking oil, for 30 minutes at 400 F (or until lightly browned on top, and toothpick comes
out clean).

* Corn flour will give a finer texture than cornmeal, or you can use some of each.

Fid Flour Veggie Extravaganza Add'Em is a mixture of minced, dried veggies that can be purchased with the Fid Flour.
Half a package is about 2 tablespoons.
