      • Seasoned spinach

      Ingredients: for 2 servings

      1/4 pound spinach
      1/4 teaspoon soy sauce
      1/8 teaspoon sugar
      1/2 teaspoon ground sesame seeds

      How to make it...
       

      1. Boil spinach for 1 to 2 minutes.
      2. Soak spinach in cold water and then squeeze off excess water.
      3. Cut spinach into 1 inch lengths.
      4. Put spinach in a bowl and add all seasonings.
      5. Mix well.

      • Tomato salad

      Ingredients: for 2 servings

      2 medium tomatoes
      1/4 medium white or yellow onion
      1 tablespoon olive oil
      1 tablespoon white vinegar
      lemon juice from 1/4 of a lemon
      2 pinches of salt
      a pinch of pepper
      a pinch of sugar
      1/8 teaspoon Italian seasonings (optional)

      How to make it...
       

      1. Mince onion finely.
      2. Mix minced onion with a pinch of salt and let stand for a few minutes.
      3. Rinse minced onion and strain off the water.
      4. Put onion in a bowl and add all remaining ingredients except tomatoes.
      5. Mix well.
      6. Slice tomatoes into 1/4 inch thick slices.
      7. Arrange tomatoes on a plate and pour onion mixture on top.

      Hint--Green beans or asparagus can be used instead of tomato.

      • Marinated green onions

      Ingredients: for 2 servings

      4 green onions
      1/4 teaspoon dried wakame seaweed
      1 tablespoon miso
      4 teaspoons vinegar
      2 teaspoons sugar
      a pinch of salt

      How to make it...
       

      1. Boil green onions for a few minutes then cool them off.
      2. Soak dried seaweed in water for five munites or so.
      3. Mix all seasonings.
      4. Cut green onions in one-inch lengths.
      5. Drain seaweed well.
      6. Mix all ingredients in a bowl.

      • Potato croquette

      Ingredients: for 2 servings

      2 large potatoes
      1 tablespoon green peas
      1 tablespoon corn kernels
      a pinch of salt
      a pinch of pepper
      1 egg
      bread crumbs
      wheat flour

      How to make it...
       

      1. Boil potatoes until tender.
      2. Peel and smash potatoes into small pieces while they are still hot.
      3. Cook green peas and corn kernels until tender and then add them to potatoes.
      4. Add salt and pepper and mix well.
      5. Form 4 to 6 small oval patties from potato mixture.
      6. Dust potato patties with flour.
      7. Dip potato patties into beaten egg and then coat with bread crumbs.
      8. Deep fry potato patties until golden brown.

      Hint--Serve with tonkatsu sauce or chuno sauce.
