Recipes for Soup

      • Miso soup
      It's tofu not marshmallows, Allyn!

      Ingredients: for 2 servings

      1/4 package tofu
      1/4 teaspoon dried wakame seaweed
      1 tablespoon miso

      How to make it...
       

      1. Bring 1 cup water to boil.
      2. Dice tofu into bite-sized cubes.
      3. Put tofu and dried seaweed in boiling water.
      4. Dissolve miso in the soup.

      Hint--Unique soup stock instead of water is used for miso soup to make it taste better. Soup stock can be made with dried bonito, seaweed (kobu) or dried sardines. For more convenience, you can buy dried, concentrated fish stock at the market.

      • Tofu and egg soup
      Tasty...yum!

      Ingredients: for 2 servings

      1/4 package tofu
      1 egg
      1 can chicken stock
      a pinch of salt
      a pinch of pepper
      cornstarch

      How to make it...
       

      1. Dice tofu into bite-sized cubes.
      2. Boil chicken stock and add tofu.
      3. Beat egg in a small bowl then pour it into soup a little at a time, stirring continuously.
      4. Add salt and pepper to taste.
      5. Add cornstarch to thicken.
