Recipes for Fish

      • Broiled fish marinated with miso

      Ingredients: for 2 servings
       
      1 steak of butterfish, king mackerel or cod
      2 tablespoons miso
      1 tablespoon sugar
      1/4 teaspoon soy sauce
      1 teaspoon sake
      a pinch of salt
      a few drops of ginger juice

      How to make it...
       

      1. Mix all ingredients except fish in a shallow container.
      2. Cut fish in two. Get rid of bones if there are any.
      3. Marinate fish with the miso mixture.
      4. Leave it in the refrigerator for at least 30 minutes.
      5. Broil fish until done. (I use toaster oven for that. It works well.)

      • Broiled fish marinated with soy sauce and ginger

      Ingredients: for 2 servings

      1 steak of salmon, swordfish or yellowtail
      2 tablespoons soy sauce
      1 tablespoon sake
      1 teaspoon grated fresh ginger
      a pinch of salt

      How to make it...
       

      1. Mix all ingredients except fish.
      2. Cut fish in two.
      3. Marinate fish with the soy sauce mixture.
      4. Leave it in the refrigerator for at least 30 minutes.
      5. Broil fish until done.

      Hint--Eating this dish with grated daikon (Japanese radish) and soy sauce is good, too!

      • Steamed fish with mushrooms

      Ingredients: for 2 servings

      2 thick slices of white fish or salmon
      4 green onions
      1 package enoki mushrooms, or 8 shitake or white mushrooms
      2 teaspoons white wine or sake
      2 teaspoons butter
      a pinch of salt
      2 lemon wedges

      How to make it...
       

      1. Julienne the green onions.
      2. Trim off ends of enoki mushroom stems, or slice shitake or white mushrooms.
      3. Place each piece of fish in the middle of a 15-inch long piece of foil.
      4. Make a foil boat around each piece of fish and put green onions and mushrooms on top of the fish.
      5. Pour white wine or sake over fish and place butter on top.
      6. Sprinkle a pinch of salt then close foil tightly.
      7. Place foil boats in oven or toaster oven at 350°F for 15 minutes or until fish is done.
      8. Serve with lemon wedges.
