Let me know if you have any suggestions/additions for this section. But I'm going to try cooking anything that goes here, and have to personally like it. Some of the things here are works-in-progress, and so these recipes might change.
Danger, YOU may be a tester.

Fish Soup: (Cioppino)

1 Tbsp oil
1 cup chopped onion
2 cloves garlic, finely minced (or 1/2 tsp commercial chopped garlic)

1 can (8 oz) tomato sauce
3 cans (16 oz) stewed tomatoes, squished up a bit
1 tsp basil leaves
1 tsp thyme leaves
1 tsp marjoram leaves
1 tsp oregano leaves
1 Tbsp dried parsley flakes
1/4 tsp bay leaf flakes
1/4 tsp black pepper
1/2 cup dry white wine (or water)
1 cup celery
sliced mushrooms, oh, maybe 8oz (= 2 cups)

1/2 lb red snapper
1/2 lb halibut
1/2-3/4 lb smallish prawns

1 cup shrimp meat

Heat oil in large kettle and saute onions and garlic until onions are tender but not brown. Part way thru add celery and mushrooms. Add tomato sauce, tomatoes, liquid and all seasonings. Let simmer 20-30 minutes until as thick as desired (or longer, with the lid on), stirring occasionally. Soup base can be refrigerated at this point to serve at a later time.

Cut fish into 1/2 inch chunks and set aside.

When ready to serve, reheat soup base and add fish chunks. Cook 10-12 minutes. Just before serving, add shrimp meat. Serve warm in large soup bowls.

(OPTIONAL) 1 dozen steamer clams (scrubbed, in shell) - add with the fish chunks. Cook until the clams open (which should take about 10-12 minutes) No clams for me please, but they were in the original recipe, and admittedly they would add something to the presentation...

Additional thoughts:

Maybe use salmon instead of (or plus) the snapper/halibut.
Try 1/2 lb of scallops instead of (or in addition to) the prawns.
