Cretan
cooking is a blend of Greek, Roman and Byzantium traditions interacting
within a relatively isolated region for over 2,000 years. In the
course of these centuries Arabs, Slavs, Anatolian Greeks, Venetians
and Turks have all lived for considerable amounts of time on the
