"Putting Up" With Jeanne  

Chelsea Says Bow Wow To You
JEANNE’S GARLIC BREAD SPREAD

6 cups shredded Mozarella Cheese (at room temperature)
1-1/2 cups grated Parmesan Cheese
1-1/2 cups grated Romano Cheese
1 tablespoon coarse ground black pepper
1 cup minced garlic
1 cup Extra Virgin Olive Oil
2 tsps freshly squeezed lemon juice


In a large mixing bowl, add 3 cups Mozarella Cheese and half of the remaining ingredients. Using a large spatula, fold until all is blended. Repeat with remaining ingredients. Put into sterilized pint Mason jars. Put on sterilized lids and bands. Keep refrigerated. Makes about 5-6 pints. Refrigerator life is only about two months….IF it lasts that long….not in my house!

Garlic Bread

Slice French or Italian Bread. Spread lightly with butter or margarine. Spread some of the Garlic Bread Spread on top. Put on foil lined cookie sheet. Place under broiler for about one minute until cheese melts.

Variation: instead of butter or margarine, spread bread with Pizza Sauce.

JEANNE’S THREE OLIVE PATE

2 cups finely chopped Greek Kalmata olives
2 cups finely chopped Spanish olives with pimentos
2 cups finely chopped Black olives
1 tablespoon coarse ground black pepper
1 cup Extra Virgin Olive Oil

In a large mixing bowl fold all ingredients using a large spatula until all is blended. Put into sterilized pint Mason jars. Put on sterilized lids and bands. Keep refrigerated. Makes about 4 – 5 pints. Refrigerator life is only about two months….IF it lasts that long….not in my house!

Serving suggestions:

Spread on crackers.

Mix a few tablespoons with softened Cream Cheese and fill celery stalks.

Add a few tablespoons to tuna or crabmeat salad.

Top your favorite sandwich.

Add several tablespoons to a pot of your favorite Pasta sauce. Add in the last few minutes of cooking.

Top a homemade pizza or add to pizza bread.

and watch the plants grow full and strong and pray that nothing dies.

and when I’m through I know I have one less vegetable to buy.

I love to watch the plants develop from those little seeds.

I love to go a-gardening and fight the bugs and slugs,
converse with bees and watch the trees, the lawn becomes my rug.

I love to go a-gardening and water till I’m blue
and pray for rain upon my plain to come when it is due.

I love to go a-gardening and play in all the soil,
I dig so deep, I hope to find my own supply of oil.

I love to go a-gardening; the flowers smell so sweet,
I take the time to sit and watch the butterflies I meet.

I love to go a-gardening and outfox the squirrels and birds
who dig up my bulbs and eat my plants and travel together in herds.

I love to go a-gardening and sit in the sunshine,
If all I plant grows up and lives, I can say the harvest is mine.

I love to go a-gardening and hoe and hoe and hoe,
Without the toil, without the sweat, no veggies in a row.

I love to go a-gardening and watch the roses grow,
the thorns so sharp, the flowers sweet, that’s the way life goes.

I love to go a-gardening and watch the ladybugs, but
I draw the line on my tomato vines getting eaten by the slugs.

I love to go a-gardening, I like my herbs a lot,
to keep them from taking over my yard, I plant them in a pot.

I love to go a-gardening and eat berries off the vine but
I better eat fast to beat the birds from eating all of mine.

I love to go a-gardening but the bunnies aren’t nice,
they nibble here, they nibble there, eating all my veggies twice.

I love to go a-gardening for God was at His Best when
He created life for us to share by work and play and rest.

I love to go a-gardening and now my rhyme is through,
