GRILLED EGGPLANT WITH HERBED GOAT CHEESE1 large eggplant Olive oil Salt and pepper
8 ounces herbed goat cheese at room temperature Cut eggplant lengthwise into ½ inch slices. Brush each slice with olive oil. Lightly salt and pepper each side. Brown both side of the
eggplant slices on a hot grill. Remove from grill and spread sparingly with cheese. Roll up the slices and secure them with toothpicks. Place the rolls on the grill briefly to warm through, taking care
not to burn them. Serve hot. Serves 4. |
