Where are the classes held?

The classes are held in my kitchen in northwest Cary. When you have registered and the class is confirmed – meaning that at least two people will attend – you will receive the address by telephone. Security concerns prevent me from posting my address online or in an e-mail.

How do I register?

Call or e-mail to reserve your place in the class(es) you want to attend. Provide name, telephone number, and date and title of class(es). Unless noted, all classes are $30.00 for each person attending. Send check or money order for full payment of class(es), payable to Janice Mancuso, to P.O. Box 3351, Cary, NC, 27519. Payment must be received within three days to confirm registration.

Why do I bring the ingredients?
For several years, I taught cooking classes through the community college. The administrators felt that all participants should supply the ingredients, giving students some choices in brands and costs.

Unfortunately, the kitchens we used were not well stocked and the participants also had to bring most of their prep and cooking utensils. Also, the time spent cleaning the kitchens before and after we cooked was becoming a burden.

Most of the participants liked bringing the ingredients and wanted to continue to do so. It gave them a chance to learn about new foods, giving them a reason to explore ethnic markets, farmer's markets, and even their own supermarket.

When will I receive the ingredient list?

Participants in each class will receive a shopping list, through e-mail, three to five days before the class date. The cost of ingredients is evenly distributed among all participants. Along with the food, those taking the class must bring containers to take any leftovers home, and something to drink with the meal.

How does the class work?
All equipment and utensils will be available for an immediate start. With most of the recipes, I’ll provide some demonstrations along with tips and information about the recipe. Then everyone will assist in preparing or take turns in preparing the recipes. Once the recipes are complete, we will either sit down or have a buffet meal, depending on the size of the class.

How long are the classes?

Most classes are approximately three hours long, although sometimes they run a little longer. We make five recipes, then sit down to eat what has been prepared. The conversation and food are so enjoyable, the time passes rather quickly.

What do we drink?

I do not provide any drinks except tap water, and you will need to bring a drinking utensil. You may bring a drink, whatever you prefer – wine included. However, I reserve the right to make sure that those drinking wine are “responsible drinkers.”

Will we have food to take home?

In most classes, yes. We make at least five recipes, and each usually serves four as a main meal. If you would like to take leftovers home, you must bring containers with you.

What happens if the class is cancelled?

All checks are held until two people have confirmed registrations. If you send a check and the class doesn’t run, you will be notified and your check will be destroyed (shredded).

What if I paid by money order for a cancelled class?

If you will be attending another class, you will receive a cash refund for the cancelled class(es). If all the classes are cancelled your money order will be returned if you provide a self-addressed envelope with a stamp inside. If the classes are held, you will receive the envelope and stamp back.

What happens if I cannot attend class?

Cancellations are accepted up to seven days before the class, with a credit given for another class. For cancellations within seven days, your class fee will be applied toward the recipe ingredients. Emergency cancellations are handled on a case-by-case basis. If I cancel a class, those who registered will have a choice of a refund or class credit.

Why do I have to pay for the ingredients if I can’t make it to class?

When a class has been confirmed, each participant will receive a partial list of ingredients to bring to class. If you cancel within seven days of the class, the class will still run, but you and the ingredients you were to bring will not be there. Although we will miss you, we will miss the ingredients more, as the recipes cannot be completed without them. So, I will have to buy the ingredients to complete the recipe. Your class fee will cover the cost of the ingredients and maybe a portion of my time.

Can I bring my spouse?

Yes, tell everyone you know about the cooking classes. All spouses, partners, friends, and co-workers are welcome. They are required to pay registration and ingredient costs. When two people from the same address attend a class, one ingredient list will be sent, unless separate lists are requested.

Can I bring my teenage child?

Mature teenagers are welcome to participate. Registration and ingredient costs are required as noted above.
