This is one of our favorites! It is extremely easy to make.
1 package penne pasta
3 medium tomatoes
1 package fresh mozzerella (small balls are best, but the bigger ball works too)
1/4 cup coarsely chopped fresh basil
balsamic vinegar
olive oil
salt and pepper
Cook pasta. Drain and set aside. Cut tomatoes and mozzarella into bite-size pieces. Put in medium bowl and add basil. Add vinegar, olive oil, salt and pepper to taste. Toss with pasta and enjoy!
Serves 2-4 (depending on hunger!)
