My grandmother.

Born in 1910 (the same year as Mother Teresa), she is a veritable repository of Belizean history, folklore and of course, Belizean recipes.
This is one of her favorite pictures.

Name: Johnny cakes (Originally journey cakes).

Category: Creole

History: Baked for the logwood cutters of the 1800's. Because of their consistency, the cakes would last days in the jungle. Today it is a favorite item that accompanies tea in the evenings.

Recipe

2 cups flour
4 level teaspoons baking powder
1/4 teaspoon salt
1 1/2 cups coconut milk
(Please note that this is not referring to the water found inside the coconut.)
1/4 cup shortening

Combine all dry ingredients with the shortening and then slowly add the milk and mix until it becomes a ball of doughlike consistency. Knead energetically for at least 8 minutes and then shape dough into balls of about 2 inches in diameter. Let stand for at least 35 minutes to allow the dough to rise and then shape into slightly flattened circles. Prick surface with a fork and arrange on baking sheet. Bake for about 45 minutes in a 350 degree oven.
While still warm, cut into halves and spread with butter or margarine, if desired.
