Name: Johnny cakes (Originally journey cakes).
Category: Creole
History: Baked for the logwood cutters of the 1800's. Because of their consistency, the cakes would last days in the jungle. Today it is a favorite item that accompanies tea in the evenings.
2 cups flour Combine all dry ingredients with the shortening
and then slowly add the milk and mix until it becomes a ball of doughlike consistency. Knead energetically for at least 8 minutes and then shape dough into balls of about 2 inches in diameter. Let stand for at least 35 minutes to allow the dough to rise and then shape into slightly flattened circles. Prick surface with a fork and arrange on baking sheet. Bake for about 45 minutes in a 350 degree oven. Enjoy! Note: Johnny cakes will last longer if left uncut.
