The second coat of epoxy was System Three SB-112, a very viscous and fairly rapidly hardening epoxy that is also less colored than most (and which provides some UV protection).  It can not be applied by roller: it's poured on, squeegeed, and smoothed with a dry foam brush.  One coat was enough to fill the weave.
 
The stems are reinforced with 3 layers of glass cut on the bias to easily conform to the shape.  These are 6", 4", and 2" wide, with the narrower ones on the outside so as to keep the inside ones continuous when the surface is sanded down smooth.  All three layers were wet out with epoxy while off the canoe, and then sequentially put on the canoe wet.  It was hard to get them adjusted just right when I tried to put on the three layers as a unit, so each was installed and adjusted before applying the next.
