What is a Consumer Economy?

A recent re-defintion of "consumer economy" is an economy that only consumes, one that does not produce.

That is not what most economists mean by a "consumer economy." The orginal idea of "consumer economy" was to make a producer economy consume all that can be produced by full employment, by stimulating demand beyond real needs.

A "consumer economy" must avoid satisfing demand, because if people already had what they want they wouldn't keep consuming enough to provide full employment.
