Phospholipids in Water
Phospholipids in aqueous solutions can form several types of
associations.
- Membranes can form where the polar head pieces make contact
with the water and the tails extend into the air. (Remember,
O2 and N2 are not polar.)
- or they can form lipid bilayers between two aqueous layers.
- Finally, phospholipids can form spherical single or
multiple-layer vesicles in aqueous solutions.
