Ok, so I love to travel. Most chefs do. This business that we are in requires that we travel alot. Some of the reasons are simple, some a bit more complex. In my case simplisity was the call to action. I moved from San Diego to San Francisco to attend Culinary school. When I wanted to learn more about Italian food, I moved to Chicago. When I wanted to get back to a creative center where I was inspired (sorry Chicago), I moved back to northern California. Working in Palo Alto, I wanted to be back in San Francisco, the culinary heart of the country so I found a job there. Wanted to learn about Thai food, I went to Thailand and spent 6 weeks in a school for professional chefs. I then wanted to learn more about Asia and the food of the former Indochina, so I moved and took a job in Vietnam.
To some (and some of my friends) it sounds a bit crazy, and that I can see. But if you are looking at getting the most of your education and time here on earth, sometimes you just have to go big or go home.
