easy cranberry nut bars
here's something holidayish and so easy.  everyone who had some of this really really liked it.  it's like cranberry blondies, but not so gooey.  adapted from an ocean spray ad!!

2 eggs
1 cup flour
1 cup sugar
6 T oil (a little over 1/3 cup)
1-1/4 cups cranberries (frozen ok)
3/4 cup broken pecans (or whatever you have)
(a little grated orange peel wouldn't go amiss here)

preheat oven to 350.  grease an 8" square pan.  beat eggs with a fork til smooth, then beat in the sugar til incorporated.  stir in the flour and oil til blended.  batter will be quite gluey.  add the cranberries and nuts and mix well.  scrape into the prepared pan and bake 40-50 minutes or til a toothpick comes out clean.  makes 16 bars - serving size is up to you.
