Summary of Acetaldehyde Effects

Acetaldehyde is the first breakdown product of alcohol. Yeast produces alcohol. It is also released when yeast is killed. Your body reacts very strongly to acetaldehyde. It is toxic even at the level of 1 part per million in the blood. It is the main cause of hangover symptoms.

Aldehyde dehydrogenase is the main defense against acetaldehyde, as its function is to break apart acetaldehyde into water and acetone. This enzyme is genetically encoded in a gene found in the mitochondria (energy producing organ of a cell). It exists only in the liver.

30% to 50% of Orientals and about 5% of European Caucasians have faulty genes, and their enzymes don't work. These people cannot handle alcohol - it makes them quite sick from acetaldehyde poisoning. People who do have a correct gene can have this defense overwhelmed by too much acetaldehyde.
